Ingredients:

  • herring fillet (340 g),
  • three carrots,
  • mayonnaise,
  • large beets,
  • four eggs,
  • the same number of small potatoes.

Boil potatoes, beets and carrots in their jackets. Then cool in cold water, peel and grate. Boil the eggs hard, cool and cut into cubes.

Take a deep container and place finely chopped onion on its bottom. Place a layer of herring fillet on top. Next comes a layer of grated potatoes, smeared with mayonnaise, carrots and eggs. We certainly coat all tiers with mayonnaise. The topmost layer is grated beets. This is how easy it is to prepare your favorite “shuba” salad.

Inexpensive New Year's salad with liver

Salads with liver do not appear on our tables very often. However, isn't the start of a new year the time when it makes sense to try something new? In addition, such salads can also be called quite budget-friendly. For example, for this liver salad you will only need to purchase:

  • 250 g of liver (usually pork, but you can use beef or even chicken)
  • fresh cucumber
  • green apple
  • two eggs
  • mayonnaise
  • salt (to taste).

Clean the liver from films, cut into small pieces and fry in vegetable oil, adding a little salt and pepper. The finished product must be allowed to cool. Grate the apple and cucumber on a shredder. Cut the boiled eggs. Mix all ingredients, add salt (if necessary) and season with mayonnaise.

Caesar salad"

The regular Caesar salad is loved by many. The name of the dish has nothing to do with the name of the famous Roman emperor. The salad was named after the man who invented it - Caesar Cardini, an American chef from Italy. It was he who accidentally came up with this amazingly tasty dish in 1924. They say that the owner of the restaurant did not know what to treat his visitors, since he had a lot of alcohol in stock and not a lot of snacks. So he decided to make a salad from what he had. Thus a new dish was born. The visitors liked it. Since then, the salad has become incredibly popular, its recipe quickly spread around the world. Of course, recently many new options for its preparation have appeared. They began to put many new components into the salad that were not present in the original version. We offer a classic recipe for a regular Caesar salad.

Ingredients:

  • a head of iceberg lettuce,
  • chicken fillet (470 g),
  • parmesan (120 g),
  • cherry tomatoes (210 g),
  • half white bread
  • olive oil,
  • garlic,
  • black pepper,
  • salt.

For the Caesar dressing:

  • olive oil (50 ml),
  • two eggs,
  • three tbsp. l. lemon juice,
  • parmesan (55 g),
  • salt,
  • mustard (two tablespoons).

When preparing a dish, you should start with the sauce. To do this, you need to remove the eggs from the refrigerator in advance so that they are not cold. Or immerse them in warm water for fifteen minutes. Pour the eggs into a blender bowl, add garlic and lemon juice. Grind the cheese and add to the rest of the ingredients. Using a blender, beat the mixture until smooth. Caesar sauce is ready.

For the salad we need delicious croutons. You can prepare them yourself. To do this, cut the bread into cubes, removing the crust.

Pour some olive oil into a container and add the crushed garlic with a knife. After that, we put it in the microwave for literally 30 seconds. During this time, the oil will have time to absorb the garlic aroma.

Place the sliced ​​bread on a baking sheet and pour the prepared sauce on top, then put it in the oven for fifteen minutes. The crackers should fry until golden brown.

Cut the chicken fillet into long pieces, wash it well, season with salt and pepper and fry in olive oil on all sides. The meat should have a light golden hue. After cooling, cut each piece into thin slices.

Iceberg lettuce is used to prepare the dish. Outwardly, it resembles cabbage. Its advantage is that it does not lose its properties after adding sauce. Lettuce leaves remain just as crispy. It is believed that the leaves should not be cut - they can be bitter and must be torn by hand. We wash the cherry tomatoes and cut them into quarters, and the Parmesan into slices.

The salad must be assembled before serving. Place lettuce leaves on a plate, put meat and Parmesan cheese on them. Next, lay out the tomatoes and croutons, and pour the sauce on top of the dish.

Crab salad

A simple recipe for regular crab salad will be useful to every housewife. The dish is prepared from simple ingredients and is therefore suitable for daily use. Even those who are skeptical about crab sticks will like the salad.

Ingredients:

  • five eggs,
  • crab sticks (380 g),
  • green onion feather,
  • dill,
  • canned corn,
  • parsley,
  • mayonnaise, rice (190 g).

For the salad you will need boiled rice, so when purchasing it, you should choose a variety that will preserve the integrity of the grains after cooking. Hard boil the eggs and chop them. Chop the crab sticks. Mix all ingredients in a salad bowl, add corn and chopped onions and herbs. Season a regular salad with crab sticks with mayonnaise.

Salad with crab sticks and processed cheese

A treat based on crab sticks has firmly established itself on the New Year's table, as well as the traditional Olivier. The canned corn and fresh cucumber included in its classic recipe increase its cost, but there is a more affordable version of this snack that will simply enchant you with its tenderness and taste.

Ingredient proportions:

  • 150 g crab sticks;
  • 100 g processed cheese;
  • 2 eggs;
  • 140 g sweet and sour apple;
  • 100 g mayonnaise.

Progress:

  1. Place the processed cheese in the freezer for a quarter of an hour to make it easier to chop later. Hard boil the eggs and cool in cold water.
  2. Place a cooking ring on a serving dish and grate the processed cheese directly into it on a coarse grater, distribute them evenly and coat with a mayonnaise mesh, which should also be between the other layers. Next, do the same with crab sticks.
  3. Peel and seed the apple and grate over the crab sticks. Do this immediately at the time of assembling the salad so that the fruit does not darken.

Ingredients:

  • boiled beef (260 g),
  • onion,
  • hard cheese (160 g),
  • mayonnaise,
  • eggs (four pcs.),
  • pickled cucumbers (5 pcs.).

To prepare the salad, onions are used, which must be pickled. For this you will need:

  • apple cider vinegar (tbsp.),
  • salt, sugar,
  • vegetable oil (tbsp.).

Beef must be cooked in advance. Cooled meat can be cut or disassembled into fibers. Cut the onion into half rings and place it in a deep plate, pour the marinade on top. It is advisable to marinate the onions longer. Cut the pickled cucumbers into strips. Now you can start assembling the salad. We will need a large dish or a deep salad bowl. Place beef on its bottom and grease it with mayonnaise. Culinary experts recommend making a mesh. Pickled onions serve as the second layer of salad. Place cucumbers on it and apply mayonnaise. The next layer is grated eggs. We also grease them with mayonnaise. The top layer of the salad is grated cheese. Delicious beef salad is ready. We send it to steep in the refrigerator for a couple of hours, after which it can be eaten.

Inexpensive New Year's salads with fish

The most popular New Year's fish salad is, of course, Herring under a fur coat. Numerous varieties of Mimosa, a salad with canned fish, are no less loved by the population. In fact, no less fish salads have been invented than meat or chicken salads. Here are just a couple of examples.

New Year's, with sprats

If herring, saury, tuna or pink salmon are often added to various salads, then sprats are usually put on the table, according to the old Soviet tradition, right in a jar. In the best case, these fish are laid out on toasted pieces of black bread. But who forbids preparing a delicious New Year’s salad from sprat? Moreover, you won’t have to buy anything special for it:

  • sprats (100-150 g)
  • the same amount of green peas
  • a pair of eggs,
  • 150 g cheese
  • half a head of onion
  • mayonnaise.

Boil the eggs, peel, separate the whites from the yolks and rub separately into different bowls. Grate the cheese finely and mix with the grated yolks. Finely chop the onion. Drain the liquid from the jars of peas and sprats. Once ready, you can start assembling the salad. To do this, place onions on the bottom of the salad bowl and grease with mayonnaise. Then the fish are placed, with green peas and mayonnaise spread on top. The next layer is egg whites and mayonnaise, and the very top is filled with a mixture of cheese and yolks. The salad should soak for about an hour in a cool place, and only then go to the table.

With lightly salted herring

It is also not necessary to cook Shuba with herring. A salad with the following products is quite inexpensive and very tasty:

  • herring (100 g)
  • three or four potatoes
  • one fresh cucumber
  • small green apple
  • one bell pepper
  • one egg,
  • vegetable oil
  • salt and pepper to taste.

Wash the potatoes and bake in their skins in the oven at 180°C for 40 minutes. Allow the root vegetables to cool, peel and cut into cubes. Cut the onion into thin half rings, and the herring fillet into small pieces. Finely chop the eggs. Peppers can be cut into cubes or thin strips. Cut the cucumber and apple into thin strips or grate on a coarse grater. Combine all products and season with vegetable oil.

If you have time and desire, then this salad can be served in original potato baskets. The filling for such a snack is made in the same way as described above, only without potatoes. Peel and grate raw potatoes, add salt, a couple of tablespoons of flour and a raw egg. Mix the dough thoroughly, then fold it into cheesecloth and squeeze out excess liquid.

Place the finished dough into muffin tins, leveling them along the sides to form a basket, and place in the oven for about half an hour. Cool the finished baskets, remove from the molds and fill with filling. The original appetizer is ready.

Beef salad

The most common beef salad is prepared from seemingly incompatible ingredients, but the result is a very tasty dish.

Ingredients:

  • beef (380 g),
  • can of pineapples,
  • salt,
  • mayonnaise,
  • pepper,
  • two cucumbers.

Boil the beef in advance and leave it to cool directly in the broth to make it juicier. Cut it into cubes. We also chop pineapples and pickled cucumbers. We dress the delicious salad with regular mayonnaise. It can be served immediately. A simple combination of ingredients gives an amazing taste to the dish.

Quick vinaigrette

A quick vinaigrette is a dish that can be prepared fairly quickly.

Ingredients:

  • apple,
  • sauerkraut (170 g),
  • sunflower oil,
  • salt,
  • carrot,
  • two beets,
  • three potatoes,
  • canned beans (240 g).

Boil carrots and potatoes in their skins. Cook the beets in a separate pan. Vegetables must cool. Afterwards we peel them. Chop the carrots into cubes, potatoes and beets too.

Wash and peel the apple, remove the seeds and cut into squares. Preference should be given to fruit with denser pulp. In a large salad bowl, combine all the vegetables and apple, add cabbage and beans. Mix everything and season with vegetable oil. If necessary, you can add a little salt. Next, the vinaigrette is infused in the refrigerator. It can be consumed immediately after preparation. But if it sits for a while, the food will be soaked, making it much tastier.

Nordic salad with herring and beets

Inexpensive ingredients that are usually used for vinaigrette can be combined with affordable lightly salted herring and aromatic vegetable oil-based dressing. The result will be an inexpensive New Year's salad, the proportions of ingredients for which will be as follows:

  • 350 g boiled potatoes in their jackets;
  • 300 g boiled beets;
  • 300 g salted fish fillet;
  • 2 sweet and sour apples;
  • 100 g pickled cucumbers;
  • 80 g onions;
  • 15-20 g dill;
  • 100 ml cucumber marinade;
  • 80 ml vegetable oil;
  • 10 g mustard;
  • sugar, salt and pepper - to taste.

Recipe step by step:

  1. Cut the peeled vegetables into small cubes. Also chop the apple, after cutting out the seeds. Cut the herring fillet into large oblong pieces. Finely chop the greens.
  2. For the dressing, mix together cucumber marinade, vegetable oil and mustard. This sauce can be seasoned with salt, sugar and spices to taste.
  3. Mix all the ingredients of the snack together and pour over the dressing. Before serving, let the salad sit in the refrigerator for 2 hours to overnight.

Pickled cabbage

Cabbage is one of the main vegetables in winter. It is rich in vitamins, and therefore desirable on our table. This recipe allows you to prepare pickled cabbage, which can be served in just five hours.

Ingredients:

  • cabbage (two kg),
  • carrot,
  • fleshy sweet pepper,
  • sugar (two tbsp.),
  • garlic,
  • water (1/2 cup),
  • salt,
  • half a glass of vinegar,
  • peppercorns,
  • Bay leaf.

Shred the cabbage as for a salad. Wash the carrots thoroughly, peel and grate. Sweet peppers must be cut into strips. You can also add fresh herbs if you like them. Don't forget to add garlic. Place all prepared ingredients in a wide, deep bowl and mix well with your hands so that the spices and herbs are distributed evenly.

Now we need brine. Mix water with vegetable oil. Add sugar and salt. Place the pan with the liquid on the stove and bring to a boil. After boiling, you can add vinegar and add chopped garlic. Mix the solution and pour it into the vegetables. Mix the products thoroughly and transfer them to a saucepan or glass container, adding bay leaves and peppercorns. We put the appetizer in a cold place, after five scratches it can be served.

Beet salad

Beetroot salad with prunes is a great option for every day.

Ingredients:

  • two beets,
  • mayonnaise, prunes (70 g).

The salad is prepared from boiled beets. To do this, boil the vegetables until tender. Before turning off, check the degree of softness of the vegetable with a fork.

Next, finely chop or grate the beets. We wash the prunes in running water, and then pour hot water over them for fifteen minutes to steam the plums. Next, cut the prunes into slices and add them to the beets. We dress the salad with mayonnaise, it is better if it is homemade mayonnaise.

Chicken salad

A salad with chicken, herbs and carrots can be a good addition to dinner.

Ingredient:

  • potato,
  • green onion,
  • parsley,
  • carrot,
  • chicken fillet (210 g),
  • mayonnaise,
  • four eggs, cucumber.

Before starting cooking, boil the chicken fillet until cooked. Boil the eggs hard, then cool them in cold water. Boil and peel the carrots, cut into cubes. After cooling completely, cut the fillet into small pieces. Chop the cucumber and eggs into cubes. We put all the products in a salad bowl and mix. We thoroughly wash the greens, dry and chop them, then add them to the salad. You also need to add pepper and salt. Season the dish with mayonnaise.

Salad with omelette and chicken

This dish has only two main ingredients - chicken fillet and eggs. If you boil them, then even with the original dressing the snack will be bland, but if you fry the meat and make an omelet from the eggs, you will get an inexpensive but also very appetizing treat.

  • 2 eggs;
  • 20 ml milk;
  • 20 g butter;
  • 80 g onions;
  • 400 g chicken fillet;
  • 40 ml vinegar;
  • 50 g mayonnaise;

How to cook:

  1. Chop the onion into thin half rings and marinate in a solution of vinegar and water, taken in equal proportions.
  2. Beat the eggs with milk until smooth, then fry a thin pancake from the egg-milk mixture in a hot and oiled frying pan.

  • you can take cherry tomatoes (380 g),
  • Adyghe cheese (380 g),
  • capers (two tbsp.),
  • mint,
  • basil,
  • ground pepper,
  • olive oil.

Wash the tomatoes and cut them into slices. If you want the salad to be bright, you can buy tomatoes of different colors. Cut the cheese into slices. Add capers to the salad. If you don't have capers, you can use pitted olives. Mix the ingredients and season the salad with olive oil. You should add basil and mint to the dish.

Greek salad

Greek salad is a versatile dish that can be used not only for holidays, but also for every day.

Ingredients:

  • two cucumbers,
  • feta (160 g),
  • onion greens,
  • ground pepper,
  • jar of olives,
  • lettuce leaves,
  • olive oil.

Wash the cucumbers well and cut into cubes. If necessary, you can even remove the skin. Open the jar of olives and drain the liquid from them. Cut the cheese into large pieces. Chop the onions, wash the lettuce leaves, dry them and tear them into large pieces. Place all ingredients in a deep dish and season with olive oil. You can add ground pepper.
