Delicious meatless salads with cheese

The lack of meat in the salad is completely compensated by the cheese. It is advisable to choose spicy varieties, which will make the taste of the dish more piquant. We offer two salad recipes with different types of cheese: Dutch and mozzarella.

  1. With tomatoes, cheese and garlic. This delicate salad can be prepared simply for dinner or when guests arrive. It is prepared very simply: cheese (100 g) is grated on a coarse grater, a tomato (2 pcs.) and 1 boiled egg are cut into cubes, 2 cloves of garlic and fresh dill are chopped with a knife. All ingredients are mixed in a bowl and seasoned with mayonnaise (3 tablespoons). The salad is served immediately after preparation.
  2. With mozzarella, tomatoes and avocado. In the original recipe, in addition to vegetables, shrimp are added to the salad, but even without this ingredient the dish is no less tasty and healthy. To prepare mozzarella salad, tomatoes (200 g each) and 2 avocados are cut into large pieces. Next, the salad is mixed with a dressing based on olive oil (5 tablespoons), the juice of half a lemon, salt and pepper, and laid out on lettuce leaves. Fresh basil leaves are used for decoration.

Inexpensive and tasty appetizer with ham and honey mushrooms

This dish is really not expensive. Plus, it's very easy to prepare. I hope you know how to cook Olivier? So it’s the same here! Finely chop all the ingredients, mix them and season with mayonnaise. It's simple! But how decorated the dish is! And all the honey mushrooms that you probably stocked up on in the fall! You’ve marinated them, and now you carefully decorate your excellent salad with them. Well, enough words, let's go! I really want to eat!

Let's take for the recipe:

  • Ham – 200 g
  • Processed cheese – 1 pack
  • Boiled potatoes – 2 pcs.
  • Boiled carrots – 1 pc.
  • Hard-boiled egg – 2 pcs.
  • Red onion – 0.5 pcs.
  • Pickled cucumbers – 5-6 pcs.
  • Marinated honey mushrooms – 200 g
  • Mayonnaise – 100 g
  • Dill – 1 bunch 30 g

We collect all the ingredients on the table and start cooking!

Preparation:

1. Finely chop the onion, place it in a bowl and pour boiling water over it for 5-7 minutes.

2. Cut ham, potatoes, carrots and cucumbers into small cubes.

3. Carefully cut the processed cheese first into long cubes and then into small cubes. It should be refrigerated before cooking to make it easier to cut. Chop the boiled eggs into small pieces.

4. Now is a very enjoyable part because cutting the ingredients is a tedious task. But now we put everything in one bowl. Let's not forget about the onion, which is in boiling water. Drain the water and dry it on a paper towel. After being in boiling water, it became soft and not bitter at all. Add mayonnaise to the mixture of ingredients and mix everything well. Our salad is ready. Yes, don't forget to salt it and taste if there is enough salt.

The main thing for us now is how to festively serve our appetizer! I suggest giving it a barrel shape. A cake pan would be useful for this. But what if it’s not there? No problem. Let's make it ourselves. We give thick and flexible cardboard the shape of a ring and secure it with brackets. Place on a plate and fill the form with salad. We crush from above. Then carefully remove the mold.

5. All that remains is to decorate the top of the salad! We lay out finely chopped dill in a circle, and in the middle there will be pickled honey mushrooms.

Appetizing bean salad

One serving of this salad (¾ cup) contains only 168 kcal. This is a meatless salad, but it still contains 9 g of protein, as well as 3.5 g of fat and 8 g of carbohydrates. It will be useful for both those who want to build muscle mass and those who are trying to get rid of excess weight.

Prepare bean salad without meat as follows:

  1. Pour canned beans without liquid (2 cans) into a deep bowl. Add diced onions, red and yellow bell peppers, and a bunch of chopped parsley.
  2. Prepare a salad dressing from olive oil (1 tablespoon), chopped garlic, juice of two lemons, salt and pepper.
  3. The salad is dressed with sauce and mixed thoroughly.

Salad "Chess"

Beautiful presentation is what makes any dish more appetizing. Chicken-free salads made from simple and popular ingredients can look very impressive on the table. For example, a snack designed in the form of a chessboard, as in the photo, is the best confirmation of this.

Ingredients

  • sprats – 200 grams;
  • mayonnaise - one small package;
  • green peas - one package;
  • processed cheese - two pieces;
  • carrots - two pieces;
  • potatoes - four tubers;
  • chicken eggs - three pieces;
  • black olives or mixed seafood - packaging.

Cooking process

  1. We wash the carrots and potatoes, put them in a cooking container, and you can lay eggs on top. Fill with water and put on fire, cook until tender (ten minutes for eggs, about half an hour for vegetables).
  2. At the same time, prepare the first layer of appetizer. Open the sprats, mash them with a fork and shape the layer into the shape of the future salad.
  3. Peel the boiled eggs, separate the whites and yolks, three separately on a fine grater. Peel the cooled vegetables, chop the carrots into small ones, and the potatoes into large ones. After that, put some processed cheese on it.
  4. Place melted cheese on the sprats, first spreading mayonnaise between the layers.
  5. Again coat the layers with dressing between each other, lay out the carrots.
  6. The next layer is green peas. Don't forget to grease the salad layers.
  7. After the peas, add the potatoes.
  8. To prevent the potatoes from being tasteless in the salad, you can carefully pour the oil left over from the fish over them.
  9. The last tier is whites and yolks. It would be better to lay them out one by one - in the form of a chessboard. One chess square is a teaspoon of chopped yolk or white.
  10. To decorate the “checkerboard salad board” we use halves of olives or a mixture of seafood.

Salad "Spring"

This salad is usually prepared in early spring from young and juicy white cabbage. If you are going to cut it in winter or autumn, give preference to Chinese cabbage.

“Spring” salad is prepared in the following sequence:

  1. The head of cabbage is washed under running water and cleared of limp and spoiled upper leaves.
  2. The chopped cabbage is transferred from the cutting board to a deep bowl and crushed with your hands along with salt. This makes it more juicy and soft.
  3. The cucumber is cut into thin slices. Green onions and dill are also chopped.
  4. The finished salad is seasoned with olive oil and balsamic vinegar, after which it is immediately served.

Light vitamin salad

The composition of this salad can be changed to suit your taste. The main thing is that the vegetables combine well with each other. To prepare it, red cabbage, green onions and parsley are finely chopped. Tomatoes, cucumbers and sweet peppers are cut into cubes. Additionally, you can add radishes to the salad. Vegetables are seasoned with vegetable oil, salt and pepper.

A light and healthy vegetable salad (without meat) can be prepared in just 10 minutes. This simple dish makes a great side dish for a main dish or a lunchtime snack.

Warm German Potato Salad

This salad can be called an independent dish, it turns out to be so satisfying. Even though it is prepared without adding meat or sausage.

Step-by-step preparation of warm potato salad:

  1. Cut peeled potatoes (1 kg) into slices (7 mm each) and boil in salted water for 10 minutes. Remove the finished potatoes from the water and place in a deep bowl.
  2. Onions are sautéed in olive oil until tender. At the end of cooking, white wine vinegar (3 tablespoons) is poured into the frying pan, a tablespoon of grainy mustard and a teaspoon of sugar are added. The contents of the pan are brought to a boil and poured over the potatoes in a bowl.
  3. A little fresh dill, salt to taste and finely chopped sun-dried tomatoes are added to the meatless salad. Serve the dish immediately, before the potatoes have cooled.

Mushroom salad

This salad will be appreciated by vegetarians and all mushroom lovers. For its preparation, fresh or frozen honey mushrooms, porcini mushrooms, chanterelles or more affordable champignons are used.

Mushroom salad without meat is prepared in the following sequence:

  1. Thinly sliced ​​mushrooms (450 g) are fried until tender. As soon as all the liquid has evaporated, the mushrooms are moved to the edge of the pan, and a piece of butter (15 g) and finely chopped shallots are placed in the center. When the onion becomes transparent, mix it with mushrooms, add salt, pepper and 60 ml of dry white wine. Fry the mushrooms and onions until the liquid has completely evaporated.
  2. Beat 100 ml of olive oil with a mixer with balsamic vinegar (3 tablespoons), Dijon mustard and honey (2 teaspoons each). The sauce should be thick and smooth.
  3. Place clean lettuce leaves in a deep bowl, add warm mushrooms and dressing on top. The salad is mixed and sprinkled with chopped goat cheese.

Sardinian flounder

  • 1 flounder (about 400 g)
  • 15 g Taggis olives
  • 1 g thyme
  • salt
  • 20 ml evaporated wine
  • 20 g lemon
  • 15 g cherry tomatoes
  • 160 g potatoes
  • black pepper
  • 15 ml olive oil
  • 3 g basil

Step 1. Rinse the fish thoroughly and let the water drain.

Step 2. Place on parchment paper on a baking sheet. Salt, pepper, sprinkle with lemon juice.

Step 3. Place olives, cherry tomatoes, sliced ​​potatoes on the fish, pour evaporated wine over it and garnish with a sprig of thyme and basil. Drizzle with olive oil.

Step 4. Bake with vegetables in the oven for 20 minutes at 180 degrees.

Holiday salads without meat

For special occasions, hearty salads with meat and mayonnaise are most often prepared. It is believed that high-calorie dishes will definitely not leave guests hungry. If you want to feed your friends and relatives something healthy and very tasty, prepare meat-free salads for the holiday table. Your efforts will definitely be appreciated.

We suggest preparing the following holiday salads:

  1. Greek classic. Traditionally, coarsely chopped tomatoes (0.5 kg), thin slices of cucumber (0.4 kg), large bell pepper strips and onion half rings are added to this salad. All ingredients are thoroughly mixed and combined with a dressing of olive oil (5 tablespoons), juice of ½ lemon, salt and pepper. On top of the salad are diced cheese (200 g) and large pitted olives.
  2. French salad with mayonnaise. Vegetarians will definitely appreciate this salad. It is prepared similarly to the famous New Year's salad, but without adding meat. Potatoes (5-6 pcs.), carrots (3 pcs.) and peas (1 cup) are boiled in salted water until tender. Cooled vegetables are cut into cubes (except peas), 3-4 pickled cucumbers are added to them, after which the salad is dressed with vegan mayonnaise, lemon juice and mustard (1 tablespoon each). Add salt and pepper to taste.
  3. A layered salad with fried mushrooms is not only tender and tasty, but also, thanks to its original presentation, looks beautiful on the holiday table. To decorate the dish, use a culinary ring or springform pan. All ingredients are laid out inside the ring in layers in a certain sequence. The bottom layer is boiled potatoes (7 pcs.), grated on a coarse grater. The top is compacted with a spoon and greased with mayonnaise. The next layer is finely chopped champignons (200 g), fried in vegetable oil with onions. Coarsely grated eggs (3 pieces) are placed on top of the mushrooms, which are also greased with mayonnaise. Finally, the salad is sprinkled with cheese (100 g) and smeared with mayonnaise. You can decorate the salad with grated yolk or herbs.

Fruit salad for the holiday table

You can replace baked goods with sweet salads. And if snacks are prepared without mayonnaise , then neither cream, nor ice cream, nor fatty creams are added to these desserts. But this does not make the taste of the dish worse. On the contrary, these are healthy and amazingly tasty salads.

Ryzhik

A very bright dessert. And very useful.

Ingredients:

  • Carrots (if you choose a sweet and juicy variety, you won’t have to add a sweetener) – 2 pcs.;
  • Oranges – 2 pcs.;
  • Cashews – 2 tbsp;
  • Lemon juice – 2 tbsp;
  • Oil (olive, flaxseed, sesame or peanut – 1 tbsp;
  • Ground black pepper - a pinch;
  • Sugar – a pinch.

Preparation:

  • Grate the carrots on a coarse grater.
  • Peel the oranges. Cut into pieces and remove membranes.
  • Crush the nuts.
  • Mix all products. Drizzle with oil and juice. Spice up. If necessary, add malt.

Contains pepper. This ingredient makes the taste of the dish very bright and unusual. You can replace it with a pinch of ground coffee.

Fruity explosion

There are a lot of fruits here, which make the dish taste unusual. This mix will definitely be useful and interesting for kids.

Ingredients:

  • Peach (nectarine) – 1 pc.;
  • Plums – 2-3 tbsp;
  • Apples – 1 pc.;
  • Figs – 2 pcs.;
  • Kiwi – 2 pcs.;
  • Tangerines – 2 pcs.;
  • Orange juice;
  • Blueberry jam – berries with syrup;
  • Mint.

Preparation:

  • Cut the peach, plum, apple and pear into cubes.
  • Kiwi - in circles.
  • Figs - in slices.
  • Divide the tangerine into slices.
  • Combine all ingredients.
  • Pour over orange juice.
  • Divide into portions.
  • Add rowan to each serving. Drizzle with syrup.
  • Decorate.

Of course, here any fruits and berries are easily replaceable. And the jam can be replaced with berries from which the juice has been squeezed. It will turn out juicy and tasty!

Summer salad with Greek yogurt

If you're tired of traditional salad dressings based on mayonnaise and vegetable oil, try making a smooth and tasty sauce using yogurt. A few fresh vegetables and an original dressing are what you need to make a light meat-free salad.

The recipe for the dish is as follows:

  1. Add lettuce leaves, diced tomatoes, cucumber and red onion to a deep bowl.
  2. Separately prepare a dressing from natural yogurt (¾ cup), milk (¼ tbsp.), ketchup (¼ cup), white vinegar (2 tbsp. spoons), sugar (1 tbsp. spoon), Worcestershire sauce (1 tsp.), chopped garlic, salt and paprika. All ingredients are whisked until smooth.
  3. The salad is dressed with sauce and decorated with halves of boiled eggs.

Healthy salad with green beans and cherry tomatoes

One serving of this salad contains only 77 kcal, 3 g of protein, 5 g of fat and 7 g of carbohydrates. Despite the fact that only vegetables are used in its preparation, the dish turns out very tasty.

Meatless salad with green beans is prepared as follows:

  1. Fresh green beans are cut into 2.5-3 cm lengths and boiled for 3 minutes. Then it is immersed in ice water for a couple of minutes, after which it is dried on a paper towel.
  2. Prepare a salad dressing from olive oil (50 ml), lemon juice and balsamic vinegar (3 tablespoons each), salt, garlic powder and ground mustard (¼ teaspoon). The finished dressing is cooled in the refrigerator for an hour.
  3. In a deep bowl, mix green beans, cherry tomatoes cut in half (450 g), red onion and feta cheese (100 g). Top the salad with chilled dressing and serve.

Tuna and Avocado Salad

A hearty and healthy salad without poultry will come in handy both on holidays and on our everyday table.

Ingredients

  • canned tuna - 250 grams;
  • avocado - 300 grams;
  • tomatoes - 250 grams;
  • bell pepper - 150 grams;
  • cucumber - 200 grams;
  • onion - 150 grams;
  • lettuce leaves - 150 grams;
  • dill to taste.

For refueling:

  • grain mustard - 2 tbsp. l.
  • lemon juice - 3 tbsp. l.
  • vegetable oil - 6 tbsp. l.

  5. Chop the onion into thin half rings.
