What are pancakes with seasoning:

To put it very simply, this is a filling for pancakes, but not wrapped in a pancake, but baked with it. You can make any dough for pancakes according to your favorite proven recipe. They are usually baked with milk, kefir and whey.

The secret is simple: put the intended baking mixture on the frying pan and pour the dough on top.

It is important to take into account a small but very important nuance: the baking ingredients must be cut thinly and finely, since the pancakes are baked quickly - the filling must have time to prepare.

Everything in the refrigerator will be used for baking. Below I will give several options for the most common fillings.

How to bake proper pancakes with minced meat

Pancakes with baked goods consist of two parts: the dough itself and the filling (bake). In this recipe we will prepare the dough with milk. We will have minced meat as a topping.

Ingredients:

  • Milk – 1 l.
  • Egg – 4 pcs.
  • Flour – 3 cups
  • Soda – 1 tsp.
  • Salt – 1 tsp.
  • Sugar – 2 tbsp. l.
  • Table vinegar 9% – 1 tbsp. l.
  • Refined vegetable oil – 2 tbsp. l.

  • Minced meat - 300 g.
  • Onion - 1 pc.
  • Salt, spices
  • Vegetable oil for baking

Beat the eggs well with salt and sugar, add half the milk and, continuing to stir, gradually add flour. The dough should turn out like very thick sour cream. Next, we extinguish the soda, for which we pour a teaspoon of soda into a glass and add table vinegar, and add the resulting mixture to the dough.

After the dough has settled a little and all the lumps have dispersed, we gradually pour in the remaining milk until it reaches the desired consistency. Then pour 2 tbsp into it. vegetable oil and let stand for a while.

While the dough is resting, we will make the minced meat. Heat vegetable oil in a frying pan and fry the finely chopped onion.

Then add the minced meat and continue frying until done. As soon as it is ready, let's start baking the delicacy itself.

I’ll say right away that pancakes are baked in three ways:
The first is when the dough is poured into a frying pan heated and greased with vegetable oil and the filling is laid on top.
You can add a little dough on top, but it's not necessary. When the pancake is slightly browned on the bottom, turn it over and continue frying until golden brown.



The second is to place the roast directly onto a heated frying pan, lightly fry it and then pour the dough on top. After a couple of minutes, turn over and continue baking until done.

This is what the finished treat looks like.



The third method is to use baked dough as a dough filler. The crushed products are added directly to the dough. Mix well and bake pancakes from the resulting mixture.

When using the third method, the pancakes turn out thick, just like pancakes.

Important! In order for the dough with the filling to bake, it must be sufficiently porous. Therefore, with the latter baking method, it is better to use yeast or kefir dough.

With any baking method, our dish turns out very tender and tasty.

Recipe for pancakes with apple sauce

Kitchen utensils and appliances: 2 bowls, kitchen scales, mixer, pastry brush, sieve, frying pan, ladle, spatula.

Recommendations for choosing ingredients

For baking, choose large, firm apples of sweet and sour varieties. They should be juicy and dense enough so that they do not turn into “porridge” when fried. If you are not sure that the apples have not been treated with chemicals, in this case it is better to peel them.

To prepare pancakes with seasoning, you can use not only wheat flour, but also other types - oatmeal, buckwheat, rye, rice, corn. Sometimes mixed dough is prepared from several types of flour.

The baking can be either simple, from one type of product, or complex, from several.

Step-by-step preparation

  1. Divide half a liter of milk into two parts. Add 3 eggs, a pinch of salt and 3 tablespoons of sugar to one part. Mix with a mixer.

  2. Pour 250 grams of sifted flour into a bowl.

  3. Add 7 grams of dry yeast and mix.

  4. Pour in the egg-milk mixture and mix everything again. You should get a homogeneous mass.

  5. Cover the dough and leave it for 45-60 minutes to ferment in a warm place.

  6. Wash two large apples and cut into small thin strips.

  7. Fry them in butter (30 grams) for about 5-10 minutes, stirring constantly. They should become translucent.

  8. Add 50 grams of melted butter to the dough.

  9. Pour in the remaining milk (250 ml), stir.

  10. Leave the dough for 15 minutes in a warm place to ferment.

  11. Grease a hot frying pan with vegetable oil using a brush.

  12. Add a tablespoon of apples, distributing them throughout the pan.

  13. Pour the dough over the apples (in a fairly thin layer).

  14. After the pancake is browned on one side, immediately turn it over to the other using a spatula. We fry all the pancakes this way.

  15. Before serving, pour honey, jam, jam or melted chocolate over the pancakes. You can serve yogurt or sour cream separately in a sauce boat.

Pancakes with sausage, cheese and herbs on kefir

The simplest recipe for such a delicacy is kefir pancakes topped with sausage and cheese. For this recipe, you can take any sausage (raw, boiled, smoked) or sausage products (sausages, sausages, ham). It is better to take hard varieties of cheese.

Ingredients:

Since cheese melts when heated, it is better to mix the filling with the dough. Then heat the frying pan, pour in the dough with the filling and bake on both sides.

How to cook pancakes with chicken, bell pepper and herbs

Diversify your usual recipe by adding delicious toppings. For example, chicken, bell pepper and herbs. Very tasty, you'll lick your fingers!

Ingredients:

  • 2 raw eggs
  • Half a bell pepper
  • A glass of flour
  • 4 full tablespoons sour cream
  • 300 ml milk
  • Half a teaspoon of soda
  • Tablespoon sugar
  • Half a teaspoon of salt
  • One boiled chicken leg
  • 4 tablespoons vegetable oil
  • A bunch of green onions with dill

Preparation:

Break the eggs into a bowl. Add sugar and salt here. Using a mixer, whisk or just a fork, bring everything until smooth. Add sour cream, vegetable oil, soda, milk and mix again. The liquid part of the dough is ready.

Now add flour through a sieve. Don't add it all at once. It is better to do this gradually, stirring constantly. Cover with a napkin or film. Set aside for 10-15 minutes while the filling is prepared. Don’t be afraid to rest the dough, the longer it rests, the better.

Pre-boil the chicken in salted broth. Cool, remove from the bone, remove the skin and all excess. Chop the meat finely. It will cut better if you refrigerate it after it has cooled.

Transfer the meat to a bowl. Finely chop the sweet pepper. We also chop finely washed greens. We send all this to the chicken and stir

Now mix this mass with the previously prepared dough.

Coat the frying pan with oil. If you don't want to fry in oil, use a quality non-stick frying pan. When it gets as hot as possible, add the first portion of dough here, turning the handle to form a thin pancake

When it turns brown on the bottom, turn it over. Let's brown on the second side. Fry over medium heat without covering with a lid.

These pancakes cook quickly; you don’t need to wait for the dough to rise. It is enough for him to rest for 15 minutes while you cut the ingredients into the filling. Instead of the leg, you can take another part of the chicken or even use other boiled or smoked meat.

How to make pancake topping from cottage cheese

The next recipe that I want to share with you is made with cottage cheese.

Ingredients:

  • Pancake dough – 1 l.
  • Cottage cheese – 200 gr.
  • Refined vegetable oil – 1 tbsp. l.
  • sugar, salt

Place the cottage cheese on a plate and mash thoroughly with a fork. Then add sugar, salt and mix. Next, put the cottage cheese into the dough and mix. Heat a frying pan, grease with vegetable oil, pour in the dough with filling and bake on both sides.

Recipe for pancakes with banana topping

I use this recipe to make pancakes when I want something unusual for tea. For this recipe we will use bananas and pancake yeast dough with milk.

Ingredients:

  • Pancake dough – 0.5 l.
  • Banana – 4 pcs.
  • Butter – 50 g.
  • Refined vegetable oil – 1 tbsp. l.
  • sugar, salt

Wash the ripe bananas, peel them and cut into small rings.

Heat a frying pan, melt the butter, add banana slices and fry until golden brown on both sides.

  • Pancake dough – 1 l.
  • cabbage - 400 g.
  • Refined vegetable oil - 3 tbsp. l.
  • Salt, spices

Let's prepare the dough with kefir and while it is resting, simmer the cabbage. We peel it from the top leaves, wash it, and then finely chop it.

Next, put it in a frying pan greased with vegetable oil (2 tbsp), add salt, spices and simmer until done. You can add fried onions to it.

Place the finished cabbage into the dough and stir well. Lightly grease the frying pan with vegetable oil (1 tbsp) and heat it well. Pour a small amount of dough with cabbage into the frying pan to make a thin pancake and fry on both sides until cooked.

That's all. Pancakes with cabbage sauce are ready. They turned out very fragrant and tasty.

Dietary pancakes with vegetable topping

To prepare dietary pancakes with vegetable topping, you can take zucchini, pumpkin, carrots, beets, celery root and others. Most often, vegetable roasting is added directly to the dough. These pancakes can be either an independent dish or the basis for a snack cake.

Ingredients for cooking:

  • 900 g kefir;
  • 2 chicken eggs;
  • 20 g pressed yeast;
  • 60 g granulated sugar;
  • 5 g salt;
  • 600 g wheat flour;
  • 100 ml odorless sunflower oil;
  • 400 g zucchini;
  • 400 g pumpkin.

The time for kneading the dough and baking pancakes is 2.5-3 hours.

The calorie content of pancakes with vegetable topping is 157.2 kcal/100 g.

Step-by-step instruction:

  1. Wash the zucchini and pumpkin, peel the skin (if it is hard) and grate it on a medium grater;
  2. Place vegetables in a deep bowl, add the amount of salt and sugar indicated in the recipe, crumble the yeast, beat in the eggs and stir everything well;
  3. Heat the kefir a little (slightly warmer than room temperature) and pour it into the rest of the products, stir;
  4. Add small portions of flour little by little to the resulting liquid mixture until you obtain a fairly thick dough, which must be left warm for 1.5-2 hours to ripen;
  5. Mix the risen dough, slightly covered with air bubbles on top and, distributing 3-4 tablespoons on the surface of a hot non-stick frying pan, form and fry a pancake on both sides.
