The smell of fresh baked goods creates a feeling of peace, love and comfort in the house. When the pies are baked, the whole family, relatives and friends gather. It’s easy to make a pie with cabbage from yeast dough; it turns out delicious, especially if other products are added to the cabbage: fish, meat, mushrooms, eggs, canned food. And your favorite spices and seasonings make the filling original and unique. What products to put in the cabbage filling depends on the imagination of the housewife and her desires.
Pie with cabbage and mushrooms made from yeast dough
Mushrooms make the product aromatic. The recipe uses champignons or any wild mushrooms; frozen ones will do. You can prepare the pie on a weekend, invite guests, or simply bake it for a family lunch on weekdays.
Compound:
- fresh yeast – 40-50 g;
- milk – 300 ml;
- 0.6 kg flour;
- 2 spoons of sugar;
- oil drain – 90 gr.
Products for filling:
- mushrooms – 250 gr.;
- cabbage – 350 gr.;
- yolk;
- 1 onion;
- parsley;
- 3 tablespoons of oil.
How to cook
Heat the milk to 30*C, sugar, salt, add yeast, mix, add flour. Knead the mass, cover, and leave it to rise for a couple of hours.
Cook the mushrooms for 20-30 minutes, drain all the liquid and chop finely. Chop the cabbage, salt it, and squeeze it out after 10 minutes. Fry chopped onions in oil, add cabbage, simmer for 10 minutes, add mushrooms. The entire mixture is salted, peppered, chopped herbs are added, and fried for another 5-7 minutes.
The dough is divided into 2 parts, one is laid out in a mold, the mushroom mass is distributed on it, the filling is covered with the second part, pinched on the sides, and brushed with yolk. Place the pie in the oven for 45 minutes.
Important!
The flour must be sifted, the product will be airy.
Recipe for covered pie with cabbage in the oven using yeast dough
In order not to mislead those who are ready to start baking, we lay out the products separately. Today, instead of milk we have kefir:
- 1.5 cups low-fat kefir;
- 0.5 kg flour;
- 2 tbsp. l granulated sugar;
- 1 egg;
- 1 tbsp. l. instant yeast (I used dry yeast);
- a pinch of salt;
- 2-3 tbsp. l. vegetable oil;
Now let’s prepare what the filling will be made from:
- 1 kg. cabbage;
- 2-3 heads of onion;
- vegetable oil (by eye);
- 1/2 tsp. marjoram;
- a pinch of turmeric;
- 2-3 pinches of black pepper;
- salt (to taste);
The filling will be tasty if you add ground bay leaf, but I don’t like it here, so I didn’t use it.
Lovers of the aroma of laurel, do not forget about this spice, which must be ground in a coffee grinder to small particles.
How to make yeast dough?
Step 1. First, pour the kefir into a small container and heat it up. It should become slightly warm for the yeast to start working in it.
Step 2. In a bowl, combine three ingredients: dry yeast, sugar, salt. Pour warm kefir into the dry mixture and stir. Let it sit for a few minutes. Small bubbles will begin to appear on the surface.
Step 3. Separately, beat the egg with a fork.
To prevent the egg from spoiling the dough, it should always be broken into a separate cup. Moreover, each separately, then it will be possible to detect in time a product that is not fresh and throw it away.
Step 4. Pour about half of the beaten egg into kefir, and leave the rest to grease the top of the pie.
Step 5. Now through a sieve we begin to add wheat flour in parts. Mix carefully, add 2-3 tbsp. spoons of vegetable oil.
Yeast dough does not like any contact with metal. It is best to knead it with your hands, so you can feel the texture perfectly. You can always add more flour if necessary.
Step 6. Leave the finished dough in a bowl, cover with a napkin and leave for 40-60 minutes to proof. It will grow approximately 2-2.5 times.
Preparing the filling
1. The filling consists of cabbage and onions. First, cut the head of cabbage into thin, short strips.
They need to be immersed in boiling water for a couple of minutes to blanch. The strips will become soft - it’s time to put them in a colander. If you don’t have time to wait for the water to drain completely, just squeeze it out with your hands.
If you are using young early cabbage, you can skip this step. Its leaves are quite soft.
2. Meanwhile, fry the onions in a frying pan. It can be cut into half rings or quarters. Let it sit for 2-3 minutes until the onion becomes transparent.
3. Send scalded cabbage to it. Continue frying for 5-7 minutes. Don't worry, if it's not fully cooked, it will finish cooking in the oven.
4. At the end, don’t forget to salt the filling and add seasonings.
Delicious pie with cabbage and egg made from yeast dough
Eggs with cabbage are a classic filling. It is prepared simply, from available products. Dry yeast is used, but you can replace it with fresh one. Shred the cabbage finely.
Ingredients for the test:
- a glass of milk;
- yeast – 1 tsp;
- butter or margarine – 140 gr.;
- flour – up to 1 kg;
Filling:
- 1 onion;
- 4 eggs;
- vegetable oil;
- 700 gr. cabbage
How to cook
Yeast is diluted in milk and preheated. Melt margarine, combine with 600 g flour and salt, stir. Milk is mixed with flour, kneaded to form a dense mass. Leave it to rise for 1 hour.
Chop the onion and cabbage, fry in a frying pan for about 20 minutes. Boil the eggs, peel, chop finely, and mix with the cabbage mixture. Divide the dough into 2 pieces, roll out both layers. The first one is placed on a baking sheet, the filling is applied to it, the second piece is placed on top, the edges are pinched, and the surface is brushed with egg. The baking sheet is placed in the oven for 45 minutes.
Simple cabbage and minced meat pie - recipe with photo
Minced meat is made at home or purchased ready-made in the store. You can use pork, beef, chicken. With pork, the filling turns out to be fatty; if you need a dietary dish, it is better to buy chicken fillet.
Compound:
- flour - 4 cups;
- 450 ml milk;
- 1 tsp. dry yeast;
- 1 egg;
- minced meat – 600 gr.;
- 20 gr. Sahara;
- 140 gr. margarine;
- 900 g cabbage;
- 1 onion;
- vegetable oil
How to cook
Stir yeast in heated milk, add salt, sugar, a glass of flour, a spoonful of vegetable oil, beat, and leave in a warm place for 50 minutes. Then add the rest of the flour, stir again, and leave to rise for another 40 minutes.
Minced meat with salt and pepper is fried in a frying pan with the addition of oil. You can add a little water and leave to simmer covered for 10 minutes. Separately, fry the chopped cabbage and onion until tender, add salt and pepper. Combine meat and cabbage and mix.
The dough is cut in half. The first part is rolled out, sprinkled with grated margarine, assembled into a roll, and put in the refrigerator for half an hour. Do the same with the second part, take it out of the cold and roll it out. The first part of the yeast dough is placed on a baking sheet, covered with filling, the second piece is placed on top, and the edges are pinched. Make a hole in the middle, brush with egg and leave for half an hour. Place in the oven for 50 minutes at 190*C.
Advice!
You need to knead the dough at least 3 times while it rises in a warm place.
A recipe for jellied cabbage pie that you definitely haven't tried yet
It will appeal to everyone who doesn’t like to “hang out” in the kitchen for a long time. The main feature is mixing the filling with the dough. It turns out something like charlotte, but not sweet, and without apples. A delicious hearty dish is prepared in the oven or slow cooker.
Pie ingredients:
- 3 eggs,
- a full glass or half a pack of sour cream – 220 ml,
- 150 grams of margarine,
- sesame seeds – 1 tbsp. l.,
- a pinch of salt,
- flour - one and a half cups,
- deep plate of finely chopped white cabbage,
- a packet of baking powder or 1 tsp. soda with a tablespoon of vinegar.
Some authors suggest not extinguishing the soda, but waiting for it to react with the milk drink. This option is possible. But then the pie will lose its pleasant sourness, which harmonizes so well with the vegetable mix.
White cabbage can be replaced with Chinese cabbage. In this case, one medium fork will be enough.
Cooking method
I really like the large amount of vegetable component. For this reason, the pie can well be called dietary. Some people lose weight on it. It has a relatively low calorie content.
It also contains a lot of silicon, necessary for beautiful skin, ascorbic acid and vitamin K. But most importantly, it holds its volume perfectly and is tasty both hot and cold.
The procedure is as follows:
- Peel the cabbage forks from the outer leaves, cut off 0.5 kg, finely chop with a knife. You should end up with a full plate or small bowl. This is the main component of the pie, which takes up most of the volume. Rely on your mold. Mine has a diameter of 26 cm.
- Pepper it. If desired, toss in chopped herbs (dill, parsley, green onions). I did without them.
- In a deep enamel bowl over low heat, melt the margarine, add sour cream, beaten yolks, salt, baking powder, and flour. You should have a pancake-like consistency or a little thinner.
- Combine both parts and mix.
- Grease baking dishes with vegetable oil.
- Transfer the dough into it.
- Sprinkle the top with sesame seeds.
- Place in a well-heated oven and bake at 220 degrees for 50 minutes.
Remove and cool. I serve it in the same form, mine is porcelain. If you bake in a slow cooker, follow the instructions for your model.
Delicious pie with cabbage and ham made from yeast dough
Instead of ham, you can use smoked or boiled sausage. If you like, then mix 2-3 types of sausages. According to the recipe, the pie turns out to be closed, but you can make open baking with this filling, sprinkling the cabbage mixture on top with cheese.
Components:
- ham – 300 gr.;
- milk – 0.5 l;
- a pack of dry yeast;
- 2 spoons of sugar;
- 2 eggs;
- 400 gr. cabbage;
- 2 onion heads;
- 1/3 cup oil.
How to cook
Mix salt, sugar, yeast, egg in milk, beat all ingredients until smooth. Pour out half the flour, a liquid mixture is obtained, and sunflower oil is poured into it. When the dough rises, add the rest of the flour, knead, and leave in a warm place. Then the mass is divided into large and small parts.
Cabbage and onions are cut, fried in oil, and salted. The second onion is chopped and fried together with the ham in oil. Mix the fried cabbage and ham and leave to cool.
A large piece of flour mass is laid out in a mold, the filling is applied, and distributed throughout the entire layer. Cover with a smaller piece and join the edges. Brush the surface of the pie with egg and place in the oven for 40 minutes.
How to make a pie with cabbage and salmon
The aroma of fish will remain in the apartment for a long time. Salmon is a noble salmon, the filling is very tasty. You won’t be satisfied with just one piece; once you try the pie, you’ll want more.
Components:
- flour – 750 gr.;
- dry yeast 7 gr.;
- milk – 350 ml;
- drain oil – 50-70 gr.;
- sugar – 60 gr.;
- 3 eggs;
- salt;
- oil;
- cabbage – 0.5 kg;
- 1 onion;
- 300-400 gr. salmon;
- ground pepper;
- greenery.
How to cook
Mix yeast, sugar, 170 g flour, and a glass of milk in a bowl. Cover the dough with film and place it in a warm place. After 1 hour, add eggs, flour, the rest of the milk, melted butter and a spoonful of sunflower oil. Knead the mixture and leave it for half an hour.
They cut onions and cabbage, wash the fish, remove all the bones, and cut into cubes. Stew vegetables in oil for 15 minutes, add salmon, stir, fry for another 6-8 minutes. Add chopped herbs, salt and pepper.
The flour mass is cut into two halves. Place the first layer of dough on an oiled baking sheet, then transfer the filling onto it, cover it all with a second piece, and secure the edges. In order for the cake to be golden brown, it must be greased with yolk. Bake at 190*C for 40 minutes.
Advice!
Only warm milk is used in the recipe.
How to make rich yeast dough for pies
Heat the milk a little and dissolve the yeast in it. In a large bowl in which you will knead the dough, sift the flour, but not all at once, 300-350 grams. You will add the rest as you knead the dough.
To the flour add soft butter and vegetable oil, sour cream, salt, sugar, yeast diluted in milk and knead the dough.
As you knead, you need to constantly add flour until the dough stops sticking to your hands. But don't overdo it, the dough should be soft enough.
Sprinkle the bun with flour, cover with cling film, and let stand for about twenty minutes. The dough according to this recipe will not rise much, I think because of the amount of oil, so it does not need to stand for a long time.
The rich yeast dough for pies is prepared quite quickly, so you can prepare the filling first; it will take longer than the dough, unless, of course, you decide to try this delicious cabbage filling.
Recipe for making pie with cabbage and canned food
If you don’t have fresh fish in the freezer, you can make a pie with canned fish. Choose any canned fish in its own juice: sardine, pink salmon, saury, mackerel. To make it tastier and the filling takes up most of the pie, buy 2 cans of canned food. You can add tomato paste to fish.
Components:
- a glass of milk;
- 1 egg;
- 3 cups flour;
- 1 small spoon of sugar;
- 1 onion;
- 2 cans of canned food;
- 1 carrot;
- 600 gr. cabbage;
- yeast – 5 gr.
How to cook
Salt, sugar, milk, egg, yeast are combined. After 5 minutes, add flour and vegetable oil, knead the dough, and send to a warm place. Chop the onion and place it in a frying pan to fry.
Add grated carrots, put chopped cabbage there, simmer until tender, pour in a little water. The canned food must be crushed, peppered and mixed with cooled cabbage.
One part of the dough is rolled out and laid out on a baking sheet, the filling is placed, the second layer is placed on top, and the ends are fixed. You can sprinkle the cake with sesame seeds. The baked goods will be ready in 40 minutes.
