Crazy Cake - a newfangled chocolate pie: so soft that it seems there is no dough at all

This cake is really amazing, it is so chocolatey that you eat every bite of it like a chocolate bar. Which is surprising, because there is very little chocolate in the dough, and there is none in the cream at all. And only the glaze reveals the essence of this crazy chocolate dessert.

I made Crazy Cake using a completely different recipe. Each stage was prepared very thoroughly. But just recently I tried a new version of the recipe, and I was amazed: the taste is the same, and the cake is so easy to make.

A few words about this cake. The dough should be slightly damp after baking. This will give the dessert a special tenderness. Of all the creams, I like custard the most. Together with the melt-in-your-mouth base, the custard makes the entire dessert as soft as a cloud. Hence the feeling that there is no dough at all, there is only “chocolate”. And that’s exactly why I love the Crazy Cake recipe.

Classic American Crazy cake

Let's start with the classic economical recipe that housewives use in their kitchen. More often it is used when there is no time to run to the store, but the table needs to be set for guests. Or the housewife simply knows that even without eggs a delicious cake is made.

Ingredients:

  • water – 400 ml;
  • soda – 2 tsp;
  • vegetable oil - ¾ cup;
  • vanillin – 2 sachets;
  • flour – 0.4 kg;
  • granulated sugar – 2 cups;
  • cocoa powder – ½ cup;
  • vinegar – 20 ml.

Prepare the cake step by step:

At home, this cake is mixed immediately in the mold. Let's try.

  1. Using a sieve, sift the flour and soda. Add sugar and cocoa and combine.
  2. Pour boiled, cooled water, vinegar and oil into a separate cup. Mix.
  3. Add to dry ingredients and stir with a fork until smooth.
  4. Place in an oven preheated to 180˚.
  5. After about half an hour, check with a toothpick, which should remain dry.
  6. Otherwise, lower the temperature and bake until fully cooked.

For decoration, ordinary fondant is quite suitable, which any novice housewife can make. Just add water to 100 g of powdered sugar, bringing it to the consistency of sour cream, add lemon juice and apply the composition to the surface of the cooled cake.

Crazy milk pie

This American pie can be turned into a delicious homemade cake. To do this, the composition of the ingredients will need to be slightly changed - add milk and one egg. This will be enough to make sponge cake and cream.

For kneading you will need:

  • 400 ml. milk
  • 250 gr. Sahara
  • 120 gr. cocoa powder
  • 260 gr. flour
  • 20 gr. baking powder

To make a simple custard, you need to take:

  • 400 ml. milk
  • 190 gr. sugar
  • 1 egg
  • 70 gr. flour

Sequence of actions:

  1. Immediately you need to put the milk for the biscuit on the fire so that it warms up a little. Meanwhile, whisk all other ingredients together until the baking powder and cocoa are evenly dispersed into the mixture.
  2. Pour warm milk into the dry mixture and stir until a homogeneous bulk dough is obtained. Pour it into a mold and bake at 180 degrees in a preheated oven. This will take 30 to 45 minutes.
  3. The process of making cream is similar to kneading dough. First you need to put the milk on the fire. Grind sugar, flour and egg together until smooth.
  4. Pour the sweet egg-flour mixture into boiling milk and brew until the consistency when the spoon mark stops disappearing. Allow the cream to cool to room temperature.
  5. Dissolve the finished cooled sponge cake into three layers, which should be coated with cream and assembled into a cake. On top of the dessert you can grease with the remaining cream or pour chocolate glaze over it.

The simple custard used for this version of the pie can be made tastier and more interesting. To do this, to the hot brewed mixture, which has just been removed from the stove, you need to add white or dark chocolate, broken into small pieces, to taste.

Crazy cake without cocoa

Some vegetarians have refused to consume cocoa, as it is believed that particles of tropical insects may get into the powder. Therefore, you should explore this baking option.

Compound:

  • lemon;
  • soda – 10 g;
  • refined oil – 150 ml;
  • sugar – 400 g;
  • flour - how much dough will take (usually 2 cups is enough).

Recipe for crazy cake:

  1. Wash the lemon thoroughly with a brush and wipe with paper napkins.
  2. Remove the zest using a coarse grater and squeeze the juice from half the fruit.
  3. Mix all this in a cup into which we pour baking soda. Bubbles on the surface will indicate that the powder has been extinguished.
  4. Pour in sunflower oil, which must be purchased refined without adding flavorings.
  5. Add granulated sugar.
  6. All that remains is to add in small portions the flour, which has previously been sifted to get rid of the crumbs and saturate the composition with oxygen. That’s when you’ll get a lush bake.
  7. Transfer the resulting mass into the prepared pan.
  8. Place in a hot oven (180˚) for 35 minutes.

After checking for readiness, take out the pie and cool.

Pumpkin Crazy Pie

This dessert is a favorite of Lenten baking due to its composition, which includes a vegetable such as pumpkin. Its beneficial properties are known to everyone.

Cake ingredients:

  • vegetable oil – 120 ml;
  • rye flour – 3 cups;
  • pumpkin – 300 g;
  • sugar – 1 glass;
  • eggs (only whites are needed) – 3 pcs.;
  • salt – 1 tsp;
  • cold water – 2 glasses;
  • cinnamon (ground) – 1 tsp;
  • cocoa – 12 cups;
  • baking powder – 2 tsp;
  • vinegar (9%) – 2 tbsp. l.;
  • vanillin.

Algorithm of actions:

  1. We clean the vegetable from peel, pulp and seeds. Cut into small cubes and bake in the oven or slow cooker for a quarter of an hour. Let cool.
  2. In a large container, mix all the dry ingredients: sugar, baking powder, vanillin, salt, flour and cocoa. We definitely sift through the latter.
  3. We dilute the oil and vinegar in water and pour it into a common plate.
  4. After mixing the mixture until smooth, transfer it to a frying pan or a special form.
  5. Bake at 180˚ for approximately 40 minutes.
  6. Grind the pumpkin with a blender and mix with the whites whipped to peaks.
  7. Grease the cake, not forgetting the layer.

Let set in the refrigerator for a couple of hours before serving. If the cakes turn out to be quite dry, you can soak them in sweet syrup.

Simple baking with kefir

Housewives also prepared a simple chocolate pie with kefir on the other side of the world from America - in the USSR. In many culinary notebooks of that time, this recipe is written under the name “Negro in foam.” Biscuit products use the same simple and affordable:

  • 400 ml. kefir
  • 3 eggs
  • 250 gr. Sahara
  • 10 gr. soda
  • 130 gr. cocoa
  • 250 gr. flour

For the “foam” (cream) you will need:

  • 400 ml. sour cream
  • 200 gr. Sahara

Progress:

  1. Pour soda into kefir, stir and set aside for a while. Meanwhile, beat the eggs and sugar with a mixer until the ingredients combine.
  2. Mix kefir and beaten eggs, add flour and cocoa to this mixture. Pour the resulting dough into a firm and bake at 180-200 degrees until the toothpick is dry.
  3. After baking, cool the biscuit on a wire rack, cut into two layers, which are coated with sour cream whipped with sugar. The top of the baked goods can be decorated with nuts or fresh berries and fruits.

There is no need to prepare cream for the pie; you can simply pour chocolate glaze or fudge on top of the baked goods, which can be made from water or fruit juice and powdered sugar.

With milk and custard

The ease of preparation attracts people to cook this pastry often. In this case, we will decorate the sponge cake with delicious cream.

Product set:

  • milk – 800 ml;
  • sugar – 2.5 cups;
  • flour – 450 g;
  • cocoa – 80 g;
  • baking powder – 4 tsp;
  • egg – 1 pc.;

Detailed recipe:

  1. First, mix granulated sugar (1.5 cups) and cocoa.
  2. Dilute the mixture with warm milk (2 cups).
  3. Combine flour with baking powder and sift through a sieve.
  4. Pour into a common cup and knead the dough, which will resemble thick sour cream.
  5. Pour into a non-stick pan and bake for 40 minutes at 180˚ in a preheated oven.
  6. There is time to prepare the custard. Place the dairy product (1 cup) in an enamel bowl to warm up.
  7. Separately, whisk the egg with sugar (1 cup) and flour.
  8. Pour 1/3 of the warm milk into this mass, dilute everything and pour it back into the saucepan with the remaining liquid.
  9. Bring to a boil over low heat and, reducing the flame to low and stirring constantly, cook until thick.
  10. The biscuit should already be baked by this time. We take it out and wait until it cools down with the cream.

Now cut the cake into pieces and coat with cream. Decorate on top.

Ingredients:

  • Sugar – 1 tbsp. (for dough – 0.5 tbsp.; for cream – 0.5 tbsp.);
  • Flour – 1 tbsp.;
  • Milk – 2 tbsp. (in the dough - 1 tbsp. and 1 tbsp. - in the cream);
  • Cocoa – 3 tbsp;
  • Baking powder – 2 tsp;
  • Egg – 1 pc.;
  • Starch – 1 tbsp;
  • Chocolate – 100g (for glaze).

On kefir with nuts

The composition of this wonderful butter-free pie is complicated by nuts. Those with a sweet tooth should love it.

Ingredients for chocolate cake:

  • sugar – 300 g;
  • eggs – 3 pcs.;
  • flour – 2 cups;
  • kefir – 400 ml;
  • nuts – 100 g;
  • cocoa – 7 tbsp. l.;
  • soda – 2 tsp.

For cream (butter):

  • sour cream – ½ cup;
  • sugar – 200 g.

How to bake:

  1. Add soda to warm kefir and wait until it goes out.
  2. In a separate cup, thoroughly beat the eggs with sugar.
  3. Mix with fermented milk mass.
  4. Combine flour with chocolate powder and sift.
  5. Add in parts and knead into a thick dough.
  6. All that remains is to add ground nuts.
  7. Pour the mixture into a frying pan or mold, which must be sprinkled with flour.
  8. Bake in an oven preheated to 180˚.
  9. For the cream, just beat the sugar with sour cream. Grease the cooled and divided biscuit into 2 parts.

You can decorate the top by sprinkling cocoa powder through a strainer. Reviews of this crazy cake indicate the enormous popularity of the juicy dessert.

Baking in a slow cooker

If you are frugal, then here is an amazing recipe where you can save money only on the basis. But there will be something to surprise guests at the festive table. This is a fairly high-calorie dessert, containing 264 kcal per 100 g.

Prepare the following products for the biscuit:

  • flour – 400 g;
  • vinegar - 1 tbsp. l.;
  • sugar – 350 g;
  • cold water – 450 ml;
  • cocoa – 45 g;
  • salt – 1/8 tsp;
  • flour – 400 g;
  • soda – 2 tsp;
  • vegetable oil – 50 ml.

For the cream you will need:

  • cream – 20 ml;
  • soft cottage cheese – 350 g;
  • powdered sugar – 70 g.

For the ganache:

  • cream – ½ cup;
  • dark chocolate bar – 120 g.

Step by step recipe:

  1. Pour cocoa and flour into a large cup through a sieve, add sugar, soda and salt. Let's connect.
  2. Separately mix ice water with oil and vinegar.
  3. We make a hole in the dry products, into which we pour the liquid ingredients.
  4. Using a spoon, mix into a thick dough.
  5. Grease the multicooker bowl with a small amount of oil and transfer our chocolate dough there.
  6. Set the mode to “Baking” for 1 hour and 10 minutes.
  7. After checking for readiness with a match or a toothpick, take it out using a stand for steaming dishes.
  8. After the base has cooled, cut the cake into equal parts using thread or a very sharp knife.
  9. For the cream, just beat the chilled cream with powdered sugar and add the cottage cheese mashed in a blender. Apply to the bottom cake and glue it to the second one.
  10. To make the glaze, heat the dairy product (do not boil), add chocolate pieces and combine everything thoroughly.
  11. After cooling slightly, spread on the surface of the pie, helping with a silicone spatula.

It is better to let the dessert brew in a cool place for a couple of hours before cutting into portions. We hope the recipe with the photo in the slow cooker will help decorate the holiday table.
