Whole salmon baked in the oven

Baking a whole fish in the oven using foil has a few tricks. It is important not only to bake the salmon, but also to preserve its juiciness. Try to purchase a fish that is not too large, weighing no more than 2.5-3 kg.

You will need:

  • Salmon carcass with head.
  • Bulb.
  • Tomato.
  • Carrot.
  • Bell pepper.
  • Cheese – 100 gr.
  • Mayonnaise sauce.
  • Garlic cloves – 2 pcs.
  • Olive oil.
  • Pitted olives – 5 pcs.
  • Seasonings for fish.
  • Rosemary, dill, a pinch of salt.

How to bake whole:

  1. If you purchased uncleaned salmon, wash the carcass, cut off the fins, and gut the fish. Make neat cuts along the entire length at a distance of 2 cm. Cut to the bone, parallel to the rib bones. Then the fish meat will be well saturated with the marinade and will cook faster.
  2. Make a marinade by adding chopped dill with rosemary and crushed garlic cloves to the mayonnaise. Throw in a pinch of salt, stir the mixture, and leave to steep for half an hour.
  3. Vegetables - carrots, peppers, onions, tomatoes, cut into strips or cubes. Fry in oil in a frying pan. Make the heat high so that the juice evaporates quickly.
  4. Add a large spoonful of mayonnaise marinade to the finished frying.
  5. Place foil on a baking sheet and coat with oil. You can make it from two overlapping sheets, the main thing is that the foil can be lifted from the sides, hiding the whole fish with the filling.
  6. Place the salmon. Insert the olives cut into rings into the slits.
  7. Stuff the belly with vegetable filling and secure with toothpicks so that the vegetables do not fall out during baking.
  8. Apply the marinade to the carcass, try to pour more into the cuts of the fish.
  9. Bring the edges of the foil up and secure by pinching the edges. Check the packaging for leaks. Leave the workpiece on the table for about an hour to marinate.
  10. Place the baking sheet in the oven, heated to 200 o C. At the first stage, heat treatment lasts 35 minutes. After the expiration date, remove the fish and bend the edge of the foil. Sprinkle the carcass with cheese. Without securing the edges, return the dish to the oven.
  11. Cook for the last 5 minutes. The signal for readiness is melted cheese.
