Catfish is also sold fresh, but more often frozen. Before baking, transfer the pieces of meat from the freezer to the bottom shelf of the refrigerator; the fish will retain its taste and properties if thawing is gradual. At room temperature, fish will defrost quickly and lose a number of qualities.
After the fish has completely thawed, rinse it well with running water and remove excess moisture with a paper towel. Salt and pepper to taste, place the steaks in a frying pan or small baking sheet with high sides.
So that the fish does not fall apart, does not lose its shape, and the structure of the meat is preserved, you need to pour the juice of half a lemon on top of the catfish. Citric acid, in turn, will give the dish a certain piquant taste.
Now cover the steaks with foil and place in an oven preheated to 180 degrees for 35 - 40 minutes (baking time depends on the weight of the piece; the larger the steaks, the longer it will take to cook).
Catfish with vegetables in the oven
Fish with vegetables and cheese is incredibly tasty. For this you will need:
- catfish steak weighing approximately 300 g;
- 1 carrot;
- one head of onion;
- mayonnaise - 2 tablespoons;
- salt, pepper to taste;
- hard cheese - 50 gr.;
- vegetable oil.
All ingredients are ready, let's start cooking. Mode: dice the onion into small cubes, grate the carrots, lightly fry in vegetable oil in a frying pan. Mix mayonnaise with ground black pepper, add a little salt and coat a piece of fish with it.
Lightly grease a heat-resistant form with oil, lay out foil, place the prepared catfish steak on it, cover it with a “blanket” of vegetables, and sprinkle with finely grated cheese, cover the form tightly with foil and place in an oven preheated to 180 degrees.
After 30 minutes the fish is ready. If you want to get a crispier crust, then 5 - 7 minutes before cooking you need to open the foil. Before serving, decorate the plate with green salad leaves and enjoy, bon appetit.
Fish casserole
If you are lucky enough to buy a catfish fillet, then you can quickly and tasty make a casserole, for this we cut the fillet into pieces, peel the potatoes and onions, salt everything, pepper to taste and lay it out in layers in a mold, the bottom layer is potatoes, then onion rings, fish, sprinkle with grated cheese, you can make several layers.
Be sure to place the potatoes in the first layer on the bottom of the pan; the fish is oily and during the cooking process the fish oil saturates the potatoes. Place in the oven (preheated) and bake for 35 minutes. The resulting dish is finger-licking good!
Catfish steak with tomatoes and onions

Fish soup made from catfish is incredibly tasty. Some people call soup fish soup, but in my opinion, fish soup is done in nature, on a fire in a pot of fresh, just-caught fish. First boil the small fish, then take it out, then put in the larger fish, add salt, onions, potatoes and cereal (optional) and a glass of vodka.
At home, you can only cook fish soup on a household stove; for it you will need:
- catfish fish - 2-3 steaks;
- carrots - 1 piece;
- onion one head;
- medium size potatoes - 4 pcs;
- millet - 2 tablespoons.
- Spices, salt, bay leaf, herbs to taste.
The most commonly used spices for fish soup are allspice, cloves, tarragon, rosemary, sage, marjoram, cumin and nutmeg. You need to be careful with spices, otherwise their excess will clog the taste of the fish.
