How to deliciously cook a whole duck in the oven

For the festive table, the bird is usually baked whole. But the meat must first be marinated for several hours, and it is better to leave the carcass for two days.

To bake a tender bird whole in the oven, you need to prepare the following ingredients for the marinade:

  • Liter of water;
  • Garlic (5 cloves is enough);
  • 2 large bay leaves;
  • Several peas of allspice and black pepper;
  • Apple or wine vinegar – 150 ml.

After the duck has been gutted and washed, it should be dried with a towel. First, the marinade is prepared: all the specified ingredients (except garlic and vinegar) are added to the water and brought to a boil.

Next, you need to cool the marinade and add garlic and vinegar, chopped into medium pieces, and stir the mixture well. Now the bird must be placed in a pan or other suitable container and filled with marinade.

Place in the refrigerator to marinate for at least a day. The bird needs to be turned over every few hours.

After two days, the duck is removed from the container with the marinade and dried. Now it is rubbed with spices and left for another couple of hours.

To rub the carcass you need to prepare:

  • A couple of tablespoons of sour cream of any fat content;
  • A teaspoon of mustard;
  • A mixture of ground peppers and salt to taste;
  • A couple of chopped garlic cloves;
  • Half a teaspoon of turmeric and the same amount of paprika.

These ingredients are mixed. The carcass is placed in a deep container and rubbed with the resulting mixture. In this form, the bird is left for a couple of hours to soak.

Now you need to take a couple of medium-sized apples, cut them into 5-6 slices and stuff the duck’s belly with them.

Next, the bird is placed in a sleeve, tied or clamped and one puncture is made.

The oven is turned on at 190 degrees in advance and the bird is sent there for an hour and a half. After the specified time, remove the carcass and pierce the meat to check for doneness.

When ready, remove from the bag and place back in the oven to brown to the desired degree.

What to soak a duck in before baking to make it soft

Before baking, the meat must be marinated for at least 24 hours. For soaking, you can use a marinade according to the previous recipe, based on soy sauce, wine marinade, universal marinade with lemon, etc.

It is very easy to make a marinade based on soy sauce - meat can be kept in it for 7 to 18 hours. Pour a third of a glass of soy sauce, add two tablespoons of olive or sesame oil, and a tablespoon of liquid honey.

Also, chop a couple of cloves of garlic. Mix the resulting mixture well. You can add turmeric and ground pepper.

If desired, you can also add a little rosemary or oregano. It’s also delicious if you grate the zest of an orange or lemon into the marinade.

Very tasty duck meat is obtained with a wine marinade. It can be made according to the following recipe. Take an incomplete glass of red wine (preferably dry), add a couple of tablespoons of liquid honey, any spices and herbs to taste.

Allspice and cumin are usually added. Add salt to taste and add half a glass of boiled water at room temperature to the marinade. The components are mixed. It is recommended to keep the duck in this marinade for 8-12 hours in a cold place.

You can prepare a universal marinade with lemon for cooking duck. It is very simple and suitable when there are no other ingredients.

To prepare it, you need to squeeze the juice from a whole lemon, add a teaspoon of salt, half a teaspoon of allspice and other spices to taste. Rub the poultry with the prepared mixture and leave to marinate for several hours.

Ingredients needed to prepare the dish:

  • duck fillet – 400 g;
  • rice – 200 g;
  • one head of onion;
  • four tablespoons of vegetable oil;
  • black pepper and salt to taste;
  • 8 large apples. It is best to choose firm green varieties with a sour taste.

Cooking steps:

  1. Pour vegetable oil into a deep frying pan, heat it up and fry finely chopped onions in the oil. As soon as the onion begins to acquire a golden color, add finely diced duck to it.
  2. It is best to take breast fillet - this meat is more tender and cooks faster. Render the fat from the duck, if any, and fry the meat until it is golden brown.

This method of baking is not much different from the usual one, only the marinating process takes less time, and the cooking time is also reduced.

First, the bird is washed, dried and cut into the required pieces. It is better not to cook the tail part, as it can spoil the dish with a not particularly pleasant smell.

Now prepare the marinade: take a couple of tablespoons of soy sauce, a tablespoon of liquid, non-candied honey, a teaspoon of lemon juice, half a teaspoon each of turmeric and paprika, add allspice and other spices to taste.

How to quickly bake a duck stuffed with apples and rice in a sleeve

If you're tired of the usual recipes, then why not try cooking duck with rice and apples in the oven with a golden brown crust?

Meat goes well with rice, and an apple and orange (not necessary, but it is advisable to add) make the bird more tasty.

And, what is very important, the dish will not take much time, since the bird in this recipe is marinated for only about two hours.

What ingredients do you need to prepare:

  • The duck itself weighs up to 2.5 kg (thawed and gutted);
  • A glass of rice;
  • Three medium apples;
  • One orange;
  • A tablespoon of olive oil;
  • A tablespoon of mayonnaise;
  • One teaspoon each of salt, paprika, curry;
  • Any spices and herbs as desired.

When the duck is prepared, it should be coated with herbs and spices and left for half an hour. Boil the fluffy rice (do not bring it to full readiness); after cooking, keep it under cold tap water for a few seconds.

Place the rice in a container (deep enough), add fruit cut into small pieces. You can add raisins and prunes.

It is recommended to leave a few pieces of apples and oranges so that you can place the duck on them later. You can add a little oil, but only butter. Add salt and any other spices if desired.

  • apples – half a kilogram;
  • garlic - half a head;
  • two tablespoons of honey;
  • soy sauce - three tablespoons;
  • one teaspoon of cinnamon;
  • one teaspoon of cumin seeds;
  • half a tablespoon of coarse salt.

We prepare a delicious marinade for duck by mixing honey with cinnamon, caraway seeds and coarse salt. Add three tablespoons of soy sauce and stir until the honey is completely dissolved.

To make the duck baked in pieces with apples even more flavorful, add finely chopped garlic to our marinade. After this, we grease each of the duck pieces and leave the poultry meat in the refrigerator for four to five hours. During this time, the poultry meat will become tender, soft and baked with a golden brown crust in the oven.

After the meat has marinated, remove it from the refrigerator. Cut large apples into four parts. Place the duck on a baking sheet and bake in the oven for 40 minutes. Preheat the oven to 180°. You can put parchment on the bottom of the baking sheet.

Then add the apples, cut into large slices, and bake for another ten minutes until the apples are soft. The dish is very tasty, both cold and hot.
