- Mix 2-3 types of chopped meat.
- The taste of minced meat varies depending on the bouquet of spices and aromatic herbs.
- Finely chopped onions are often fried before being added to meat.
- To add viscosity to the texture, add eggs, starchy foods, and bread soaked in milk.
- The minced meat is kneaded for about 30 seconds, avoiding stickiness.
- Balls are molded with a diameter of no more than 3.5 cm.
- To prevent the products from crumbling during heat treatment, they are cooled before frying for about 1-2 hours.
- To obtain an appetizing crust, the meatballs are breaded, fried in oil, then simmered under a lid in sauce or gravy.
Small meat balls are versatile - they are added to soups, stews, pizza toppings, and warm salads.
Delicious minced meat is obtained from the following combinations:
- pork, beef;
- pork, shrimp meat;
- chicken, lamb;
- turkey, veal;
- salmon, cod;
- pangasius, navaga.
How to cook meatballs with gravy
Few people consider meatballs to be a treat in their own right; they are mostly added to soup. But don’t underestimate them; it’s better to cook and treat them to the whole family.
- Unlike meatballs, meatballs are made from pure meat, without rice or any other grains. This makes them lower in calories, which allows you to include meatballs in the diet section. Cook them with herbs and your favorite sauce, thereby giving yourself a delicious fasting day.
- When the meat mixture for the meatballs is ready, you need to immediately start forming the balls.
If you put the minced meat aside, then after a while liquid will appear in it, in which case you will not be able to make perfect meatballs.
- To make the meat juicy and flavorful, you must add vegetables to the recipe. Onions, tomatoes, peppers and all kinds of greens can form the basis of a gravy that will perfectly complement the meatballs.
- It is best to steam the meatballs and then combine them with the sauce. For baby food, this dish option is indispensable.

Fried meatballs without gravy in a frying pan
Fried meatballs in a frying pan, the classic recipe of which is based on pork and beef meat, is prepared with chopped garlic and onion.

Raw minced meat is supplemented with finely chopped dill and spices. Fried products are served with a side dish and used in canapés.
Ingredients
Fresh herbs can be replaced with 2-3 tsp. dried. Delicious minced meat is also obtained from equal parts of pork and chicken. To increase juiciness, place a cube (0.5 cm) of butter in the middle of each meatball. Products with butter filling must be breaded for the first 5 minutes. fry over high heat, then simmer until done under the lid.

Step-by-step cooking process
Meat cuts are cleaned of veins and bone fragments. The fat layers are left for the juiciness of the minced meat. Dill is poured with cold water twice.
Further:
- Fry chopped onion and garlic in a small saucepan for 4 minutes.
- Pork and beef are passed through a meat grinder.
- In a deep container, combine meat, sautéed vegetables, and raw eggs.
- Add chopped dill, spices, and salt. The minced meat is mixed for 15-20 s.
- Make meatballs with a diameter of 3-3.5 cm, place on a wide board, and place for 80 minutes. in the refrigerator.
- Place a frying pan with a thick bottom over medium heat and add oil. The molded semi-finished products are placed in a frying pan at a distance of 1 cm from each other.
- Fry for 8 minutes, turning from one side to the other.
Then cover the dish with a lid and reduce the heat. The dish is cooked for another 7 minutes, then divided into portions and served with a side dish.
Fried meatballs with gravy in a frying pan
Fried hot meatballs are combined with almond-bean sauce, seasoned with onions and garlic.
Ingredients
For minced meat, choose veal and turkey fillet. To prevent the products from falling apart, add white bread crumbs soaked in cream. The gravy can be made from regular white or red canned beans without tomatoes. In this case, garlic and onions are stewed with finely grated carrots, poured with hot broth. Almonds add a mild hint of flavor.

Step-by-step cooking process
The crumb is soaked in cream in advance. The nuts are doused with boiling water, ground in a blender to coarse crumbs or cut into petals.
Further:
- The meat pulp is passed through a meat grinder along with bread and a quarter of a raw onion.
- The minced meat is combined with the egg, seasoned with pepper and salt.
- Make meatballs, cool for 60 minutes.
- Next, the balls are placed in a frying pan heated with oil.
- Fry on all sides for 9 minutes, then place the products on a separate plate.
- Finely chop the remaining onion and garlic.
- Put the oil back into the pan, add the onion, after 4 minutes. - slices of garlic.
- Add beans and tomatoes to the vegetables and simmer for 5 minutes.
- The mixture is sprinkled with ginger and almonds. Reduce the fire.
- After 5 min. Fried meatballs are carefully placed in a frying pan with the gravy being prepared. Cook for another 8 minutes, covering with a lid. The dish is served hot, garnishing each serving with young arugula and a slice of pickled cucumber.
Chicken meatballs with champignons in the oven
There is no way to cook aromatic and juicy meat products with champignons better than in the oven. And meatballs are no exception; baked chicken balls will decorate any feast. A quiet family dinner in the company of this dish will become even warmer and more soulful.
Ingredients
For the meatballs
- Minced chicken - 800 g;
- Champignons - 200 g;

- Tomato juice - 100 ml;

How to cook meatballs with champignons in the oven
- Take fresh minced chicken and season it with salt and a mixture of peppers.
- Wash the champignons well and grind in a blender. Wash the basil and chop finely. Add the chopped ingredients to the meat and stir.
- Now add starch and protein to the mixture and mix well again. Form the minced meat into small balls.
- Take a deep baking dish and grease it with vegetable oil. Place the meatballs at a short distance from each other. Place the pan in the preheated oven and cook the meatballs for 10 minutes at 180°C.
- At this time, prepare the gravy: wash and chop the onions and herbs. Wash the mushrooms and cut into slices.
- Combine all ingredients in one bowl, add salt, pepper and season with mayonnaise diluted with water. After this, pour in the tomato juice and mix the aromatic gravy thoroughly again.

In creamy sauce
Pan-fried meatballs with cream sauce is a popular Swedish recipe. Prepare the sauce separately in a saucepan, then pour it over the finished hot dish when serving.
Ingredients
The minced meat consists of 2 parts beef and 1 part pork. The juiciness of the products can be increased by adding 1 tbsp when kneading. l. softened butter. To add a spicy lemon flavor, add 1 tbsp at the end of cooking the sauce. l. capers with wine vinegar and a pinch of lemon zest. The vinegar in the recipe can be replaced with soy sauce or olive marinade, mixing the latter with lemon juice to taste.

Vegetable and meat broths are cooked in advance, chopped onions are sautéed in a frying pan. The cream should not be cold.
Further:
- Pour cream over crackers and mix.
- After passing through a meat grinder, the meat is combined with an egg, breadcrumbs, and fried onions. Season and salt.
- Form the minced meat into round meatballs and place in the refrigerator for 80 minutes.
- Next, the products are fried on all sides over moderate heat. While the sauce is being prepared, place the meatballs on a baking sheet in the oven at 160°.
- Turn on low heat on the stove. Mix olive oil and melted butter in a saucepan, add flour, stirring continuously for 2 minutes so that no lumps remain.
- Pour in 2 types of broth. Next, constantly stirring the mass, add cream.
- Add vinegar and mustard and bring to a boil. Stir again for 1 minute until the sauce thickens. The saucepan is removed from the heat.
- The dish is served immediately, pouring hot sauce over the meatballs removed from the baking sheet. Supplement with boiled new potatoes and garlic salad.
In tomato sauce in a frying pan
The cooking technology is similar to the recipe for meatballs with gravy: the sauce is combined in a frying pan with fried products. The dish is brought to a boil and served hot.
Ingredients
Aromatic tomato sauce is made from fresh tomatoes, aromatic herbs, and garlic. The ingredients are mixed with a blender. The taste of the sauce is well complemented by grilled bell peppers and a quarter of eggplant - skinless vegetables are combined with tomatoes before chopping. The recipe can be greatly simplified by using only ready-made tomato paste, sour cream, and seasonings. The products are mixed and poured over the fried meatballs, bring the dish to readiness for 3-5 minutes, covering with a lid.

100 g of crackers are soaked in milk. The meat pulp is passed through a meat grinder.
Further:
- In a bowl combine crackers, chopped meat, egg, fried onion.
- The minced meat is salted, seasoned with spices, and mixed.
- Make meatballs, bread them in the remaining breadcrumbs, and cool for 80 minutes.
- Start mixing ingredients for the sauce. Tomatoes are peeled, cut into slices, and placed together with herbs, salt and garlic slices in a blender bowl. Beat the mass for 20-30 seconds.
- Then add two-thirds of the broth and flour to the resulting mass and beat again.
- If the sauce turns out too thick, add more broth and whisk to get a “sour cream” consistency.
- Remove the meatballs from the refrigerator and fry in a frying pan on all sides for 8-9 minutes.
- Next, pour in the resulting sauce and reduce the heat. Keep until boiling, simmer for another 6 minutes. under the lid.
- The finished hot dish is placed into portioned plates and decorated with baked vegetables and cheese slices.
In tomato-garlic sauce
Meatballs are cooked in a spicy sauce made from tomatoes, garlic, carrots, and aromatic herbs. Products fried in a frying pan are placed in a sauce, stewed separately in a deep saucepan, then simmered over low heat until cooked.
Ingredients
Minced meat with a spicy taste is made from pork with the addition of a ground mixture of laurel, coriander, and dill seeds. Also add chopped basil, cilantro, parsley, and dill to the meat mixture for meatballs.

Crackers are poured with milk. Parsley and dill are washed twice with water, then finely chopped. Vegetables are peeled and washed. Remove the stem and skin from the tomatoes.
Further:
- Combine minced meat, eggs, fried onions, crackers, chopped herbs. The mass is mixed, salt and spices are added.
- Place the formed meatballs on a board and place in the refrigerator for 50 minutes.
- The cooled products are fried in a frying pan in melted butter until evenly golden brown, 8 minutes.
- The carrots are grated on a fine grater, the celery stalks and roots are cut thinly across, the garlic is chopped with a wide knife.
- To prepare the sauce, pour olive oil into a deep saucepan and place over medium heat.
- Add carrots, parsley root, and garlic. Simmer for 10 minutes.
- Tomatoes are cut into thin slices and placed in a saucepan. The mass is mixed, salted, and covered with a lid.
- After 8 min. Reduce the heat, add celery, spices, and basil.
- Cook for 15-20 minutes. to a thick consistency. Then the mass can be further punched with an immersion blender until smooth.
- Place meatballs into the hot sauce and simmer over low heat for 10 minutes. under the lid. The finished dish is divided into portions and decorated before serving.

How to cook chicken meatballs with gravy
- Wash the chicken fillet, dry it and cut it into cubes. Pass the cubes through a meat grinder, then place the resulting minced meat in a deep bowl.
- Wash the green onions, dry and finely chop. Add the onion to the bowl with the minced meat and stir. Pour in olive oil, add spices, vodka and egg whites. Mix the meat mixture with quick movements.
- Form into small balls (about the size of a nut). If desired, boil them in salted water. The best option is to steam the products for 20-25 minutes.
- While the meatballs are cooking, make the gravy for them. Peel onions and carrots and wash thoroughly. Cut the onion into half rings and the carrots into long thin strips.
- Pour oil into a frying pan and add onions and carrots. Season everything with salt and pepper, and then simmer the vegetables until they are soft.
- Dilute the sour cream with water and pour into the frying pan with the vegetables. Sprinkle with spices, stir and cook the gravy for another 5 minutes. Afterwards, cover with a lid and set aside.
- Place the finished meat balls into portioned plates and pour the gravy on top. Garnish the dish with fresh herbs.
As a complement to this meat treat, offer fresh vegetables and dark bread croutons. Without a doubt, your kids will really like chicken meatballs even without gravy.
With onion
Fried meatballs in a frying pan are well complemented by a thick onion sauce with tomatoes. At the end, combine the fried products and the sauce, crushed in a blender, and simmer the dish over low heat until cooked.
Ingredients
Instead of fresh tomatoes, you can use canned vegetables in their own juice, tomato paste or homemade preparations (lecho, salads with tomatoes). The main ingredient of the sauce is onion, so adding other vegetables and aromatic seasonings will only diversify the taste of the dish.

Step-by-step cooking process
Vegetables are peeled and washed. Remove the skin from the tomatoes. Onions and potatoes for minced meat are grated on a fine grater.
Further:
- Combine minced meat, egg, grated onion and potatoes.
- The mass is mixed, salted and seasoned with pepper.
- Make meatballs and place in the refrigerator for 50 minutes.
- While the meat balls are cooling, make the sauce. Finely chop the onions and chop the garlic.
- Place a frying pan with a thick bottom over medium heat, add 2 types of oil, and heat it up.
- Add onion and fry for 15-17 minutes. until light golden brown.
- Next, put the onion mass out of the frying pan into a separate deep container, add chopped tomatoes, garlic, herbs, and broth. Season and salt.
- Beat everything with a blender for 10-12 seconds, but not until homogeneous, otherwise the sauce will burn.
- The resulting mass is again placed in the frying pan and brought to a boil over low heat.
Immediately place chilled meatballs into the boiling sauce and simmer for 17-20 minutes. over low heat, cover with a lid. Serve with a side dish, sprinkled with fresh herbs.
Minced meatballs
PREPARATION:
If we prepare the minced meat ourselves, we grind the meat through a meat grinder.
Peel the onion and garlic, wash it, finely chop the onion, pass the garlic through a garlic press or finely chop it.
Wash the greens and finely chop.
If we use tomatoes, wash them, remove the skin, after cutting them on top with a cross on the cress and pouring boiling water over them. We cut the tomatoes into cubes.
Carrots, peel, rinse and grate on a coarse grater.
Prepare the minced meat:
Add 2 chopped onions, 2 cloves of garlic to the twisted meat, beat in the eggs, salt and pepper to taste. Mix everything well and form medium-sized meatballs. I missed something today and made them a little more than usual.
Roll the formed meatballs in flour and fry in vegetable oil.
Preparing the gravy:
Fry half of the remaining onion in vegetable oil until golden brown. Add carrots to it, fry for about 5 minutes. If you like the gravy to be thick, you can add a small spoonful of flour and fry it along with the vegetables.
Then add the tomatoes, salt, you can add sugar if the tomatoes are very sour and simmer for another 2 minutes.
Add 1 cup of boiled water to the overcooked vegetables and bring to a boil.
Meatballs in the oven
- These are round balls of minced meat with rice, baked in tomato sauce.
Delicious and tender meatballs in a sour sauce will not leave anyone indifferent!
In addition, cooking meatballs has a number of advantages - cooking them is a pleasure, the cooking process does not take much time, and meatballs go well with any side dish you like - pasta, porridge, potatoes. And thanks to the oven cooking method, the meatballs remain nutritious and full of nutrients!
Useful tips and tricks
To prepare delicious meatballs, all additional ingredients (bread crumb with cream, chopped herbs, eggs) are first mixed in a separate bowl, then combined with chopped meat. This method reduces the time of kneading the minced meat, the products are soft and juicy. When forming balls, use disposable gloves and wet your palms with cold water. This will create the necessary conditions for clean cooking.
When the products are sculpted, the minced meat is not compressed too much - the semi-finished product should be light and “airy”. Cool the meatballs on a board or wide flat plate, covered with cling film. It is convenient to freeze part of the prepared product to use in various recipes for first and second courses. Serve hot fried meatballs on heated plates. Garnish with fresh chopped herbs and a mix of baby lettuce leaves.
The taste of the dish is complemented by gravies or sauces:
- bechamel;
- lingonberry;
- spicy tomato;
- creamy cheese;
- mustard;
- mushroom;
- onion and sour cream.
Vegetable puree, any cereal side dish, and sautéed Brussels sprouts are placed on a plate with hot products. Fried meatballs can be served on a large platter - they are strung hot on thin wooden sticks, alternating with cherry tomatoes, baked slices of eggplant and red onion.
For an Italian-style dish, 3-4 items are placed on top of cooked pasta and topped with a sauce appropriate to the recipe. Also, canapés are made from meat balls cooked in a frying pan on small skewers, garnished with sesame seeds, slices of cheese, and cucumber.
Description of preparation:
You will laugh, but I first tried fried meatballs prepared in this way... in Tirana, the capital of Albania. They also contain mint and feta cheese, but for our brother this taste is too exotic, so I did not include anything extra in the recipe for fried meatballs.
You don’t have to add cheese either, but with cheese, in my opinion, it’s tastier and juicier. And so, in general, the meatballs turn out wonderful - they are covered with a crispy crust on the outside, and remain tender and juicy on the inside.
