Greetings to all culinary art lovers! Each of us has situations when we want to cook something sweet, but we don’t have enough time for it. Taratushki on kefir are very good at such moments. Today I will tell you step by step how to surprise your family with an airy treat, spending a minimum of products and only 45 minutes of your time.

Recipe 1: taratushki (step-by-step photos)

Sweet bread and bakery products will always be appropriate both on a holiday and on an ordinary day. Interesting kefir tartlets will not only be a bright decoration for the dinner table, but also a delicious delicacy. It will be enough to knead a quick and light dough. It doesn't take long to fry them, like brushwood, so you'll quickly set the table.

  • kefir - 300 ml;
  • chicken egg – 1 pc.;
  • sugar - 5 tbsp. l.;
  • vegetable oil - 3 tbsp. l.;
  • wheat flour - 450 g;
  • baking soda - 2/3 tsp;
  • salt - a pinch;
  • vegetable oil for frying tamarinds;
  • vanilla sugar as desired.

For soda to start working, it must be combined with an acidic environment. That is why we pour soda into kefir.

The soda will begin to release carbon dioxide and the kefir will foam. Add half the sugar and a pinch of salt.

Grind the remaining sugar through a coffee grinder into powder. Beat in the chicken egg and stir the kefir base.

Pour in vegetable oil.

Thanks to the oil, the dough will become elastic and manageable. Add sifted flour one spoon at a time and stir immediately until the dough comes out lump-free.

The dough for taratushki is ready, all you have to do is let it rest so that all the components get to know each other and combine well.

Any dough should rest before you work with it. Then divide the dough into three equal parts and roll each into a circle 0.5-0.7 cm thick. Next, use a curly knife to cut rectangular strips. And make a cut in each of them with a knife.

Fold one edge inside the cut and turn the product inside out, so you get the taratushki.

Heat a frying pan with vegetable oil over low heat and fry the tatatushki in kefir on both sides until golden brown.

Taratushki should be fried with the lid closed, then they will be very fluffy.

Sprinkle the slightly cooled taratushki with powdered sugar.

Step-by-step preparation

Place the egg with vanilla and granulated sugar into a blender and blend until thick. Add sour cream, softened butter, soda, kefir, stir thoroughly and add salt as desired. The main thing is that the soda is completely dissolved; you can quench it with vinegar, otherwise it will taste bitter. Pour flour into the resulting base in parts (it is advisable to sift it for airiness).

Place the dough in a cold place for about 20-30 minutes. Roll out a thin cake, cut into squares and roll into a cheesecake shape. Place in boiling oil, don’t forget to turn over so that the kefir-based containers are evenly fried. In general, everything is ready - serve with powdered sugar.

Just remember that fried foods are high in calories and are not recommended for daily consumption. To reduce the fat content, we suggest baking them; they make excellent buns. You can cook tararushki on kefir with fillings, for example, cheese, vegetable, fruit, mushroom - whatever your heart desires. Recipe 2: taratushki on kefir (with photo)

Taratushki are a simple, easy-to-prepare, quick pastry for tea.

  • Kefir - 300 ml;
  • Wheat flour - 600-650 g;
  • Chicken egg - 1 piece;
  • Sugar - 4 tbsp;
  • Salt - a pinch;
  • Baking soda - 0.75 tsp;
  • Vegetable oil (2 tbsp for dough; 1 cup for frying);
  • Powdered sugar.

Mix the egg with sugar and salt.

Add kefir, soda (do not extinguish), 2 tbsp. vegetable oil.

Mix.

Add flour in three additions.

Mix first with a whisk.

Then with your hands. The dough turns out soft, slightly sticking to your hands.

Leave the dough for 10 minutes, covered with film.

Then divide into three parts, from each part, with floured hands, form layers 1-1.5 cm thick.

Cut each layer into 5-6 parts. Make a cut in the middle. Form taratushki, like brushwood, turning the dough on one side through the cut.

Heat the oil in a frying pan, reduce the heat to medium, place the taratushki, not too far apart from each other, fry on both sides until golden brown.

Place on a paper towel to absorb excess oil.

Recipe 3, step by step: vanilla taratushki

And today we have a simple recipe for very tasty kefir tartlets that will not leave anyone indifferent. Children especially like them! The taratushka dough turns out airy. This dough can be used to fry pies with any filling.

  • Kefir - 1.5 cups
  • Chicken egg - 1 pc.
  • Vegetable oil - 2 tbsp. spoons
  • Sugar - 3 tbsp. spoons
  • Flour - 2-3 cups
  • Salt and soda - 0.5 teaspoon each
  • Vanilla sugar - 1 sachet

Mix all the ingredients into a dough. It is necessary that the dough does not stick to your hands, so if you do not have enough flour, you can add more. Cover the finished dough and leave to “rest” for 20 minutes.

After this time, divide the dough into 2 equal parts and roll out the first layer first. First sprinkle the table with flour. The rolled out layer should be approximately 0.8 - 1 cm thick. Then we cut it into small rectangles, in the middle of which we cut a small hole with a knife and turn the taratushki inside out like brushwood. We do the same with the second half of the dough.

Pour vegetable oil into a frying pan and fry the taratushki on both sides until cooked. There should be enough oil. During the frying process, if necessary, you can add it a little.

Baking taratushki

You need to bake taratushki according to the principle of pies, heat the vegetable oil well in a frying pan and send out the first portion.

You don’t need to lay out a lot of pieces, as they will expand somewhat in the frying pan. Fry on both sides until a beautiful golden brown color is formed.

Place the finished portion on a paper napkin, thus getting rid of excess oil.

After all the dough has been processed, we come to the main step. We take powdered sugar and generously sprinkle the taratushki; for a richer aroma and taste, you can use topping, in my case strawberry.

Recipe 4: small twigs (step by step)

Do not forget about some mandatory rules that are simply necessary in the process of preparing the test. It turns out very tasty with kefir. You can add milk or sour cream to the dough, but you need to forget about water. Otherwise, you won’t get tender and fluffy tartarushki. The second no less important manufacturing rule is the mandatory addition of strong alcohol to the dough. Vodka is best. This will give you a melt-in-your-mouth treat. When preparing dough for taratushki with kefir, you need to add a little sugar to it. This will give the finished product a golden color. The oil in which you plan to fry the taratushki must be of good quality. For ease of use, you need to have a slotted spoon on hand. Now you can proceed directly to preparing the dough for baking tartushki with kefir.

  • 1 glass of kefir
  • 2 chicken eggs
  • 2 tbsp. l. vegetable oil
  • 1 tbsp. Sahara
  • 1 tsp salt
  • ½ tsp. soda
  • 2-3 cups flour
  • 1 tbsp. strong alcohol

Add two chicken eggs to one glass of kefir,

one tablespoon of granulated sugar,

salt - one teaspoon and half a teaspoon of soda.

Don't forget to add a tablespoon of strong alcohol. Now add enough flour to make a thick dough.

Let the dough rest for twenty minutes, and then begin making the twigs. Roll out the dough on a floured table (at least 1 cm thick).

We cut out small neat figures in the form of rhombuses from it. Then we make a longitudinal cut in the center of each diamond and push one edge through it, you get figures with funny ears.

Heat a sufficient amount of vegetable oil in a small saucepan or deep frying pan so that the brushwood is covered on all sides and fries evenly.

If the oil is boiling too hot, you need to turn the heat down. Place a few twigs at a time in the boiling oil and turn until a uniform golden color is obtained. We remove the finished products with a slotted spoon and place them on a dish lined with clean white paper to remove excess oil. Sprinkle the still warm brushwood with powdered sugar and treat it to your family.

Have you ever tried tararushki? Although the name of the baked goods is funny, the recipe is reminiscent of the well-known brushwood. The taste is a little different. These are airy buns or donuts, you can call them whatever you like, which kids really like. The dish came to us from ancient Rus', where it was baked in traditional ovens and produced delicious pretzels.

Over time, children's toys that were made from clay and wood also began to be called “crackers”. However, tararushki are also baked with kefir in 21st century cooking. Some housewives make yeast dough, then make various figures or flat cakes from it and fry it. You can bake it, and if you don’t add granulated sugar, you’ll get excellent donuts for the first course.

The best part is that you don’t need to spend a lot of time or financial investment to create confectionery pretzels. Everything is as simple as possible, fast and incredibly tasty. Step-by-step technology

The fermented milk drink should be at room temperature (remove from the refrigerator half an hour before cooking).

You will need the simplest components that can always be found in every home. We offer a recipe for taratushki made with kefir, although you can use any fermented milk product. It can be yogurt, fermented baked milk, or whey left over from making cottage cheese.

  • chicken eggs – 1 pc.;
  • wheat flour – 3 cups;
  • melted butter – 2 tbsp;
  • kefir 2.5% - 375 ml;
  • vanilla sugar or vanillin;
  • sugar – 4 tbsp;
  • salt;
  • baking soda – ½ tsp;
  • vegetable oil – 150 ml;
  • powdered sugar.

If your kefir is chilled, leave it on the counter to bring it to room temperature.

To prepare, take a deep bowl or any other container and pour kefir into it.

Then beat in the egg, add salt, sugar, vanilla sugar, melted butter and soda. Mix all ingredients thoroughly until salt and sugar dissolve. There is no need to quench soda with vinegar.

The whole family eats with pleasure, especially the kids. Cooking taratushki with kefir is a real pleasure. It's interesting to watch how curls of dough rise and grow in hot fat. To prepare taratushki with kefir you will need:

  • kefir 2.5% – 250 ml
  • flour – 2.5-3 cups
  • sugar – 0.5 cups
  • soda – ½ tsp.
  • salt
  • egg – 1 pc.
  • refined oil – 1.5-2 cups

Break a raw chicken egg into a container suitable for kneading dough. Add salt and sugar and beat the egg with them. It is not necessary to use a mixer for this purpose. It is enough to beat with a whisk.

Pour kefir warmed to room temperature into the egg mass. Don't stir yet. According to the recipe, taratushki are prepared with kefir, but instead of kefir you can also use yogurt.

Add soda to kefir and mix. It is very good if kefir is sour. In an acidic environment, soda is instantly extinguished; it will not be felt in the finished baked goods. If kefir is not sour enough, then it is better to quench the soda with a drop of vinegar before adding it.

It's time for flour. We take premium quality wheat flour. To make the taratushki fluffy, sift the flour intended for the dough. Introducing flour into the dough in parts, first mix the mass with a spoon. When the spoon begins to turn the dough with difficulty, we begin kneading by hand. It is convenient to knead the dough on a table dusted with flour.

Knead the dough, which is not too dense. Since the dough contains a large amount of sugar, it sticks to your hands. To make it easier to handle the sticky dough, grease your hands with sunflower oil (unscented).

The dough is soft, but the rolled ball does not hold together and spreads slightly. Covering the container with the dough with a towel, leave it to “rest” for 1 hour.

Having dusted the surface of the kitchen table with flour, roll out the “rested” dough on it. We stretch the dough on the table surface with our hands, and then roll it out lightly with a rolling pin into a layer 1 cm thick. Cut the layer into strips approximately 2.5 cm wide. Then we cut the strips diagonally into pieces (10 cm) to make elongated diamonds.

In the resulting diamonds we make cuts in the middle, as shown in the photo. Having threaded one of the long ends of the diamond into the cut, we return it back.

As a result, we get a curl, which we send into heated refined oil. When transferring the taratushka preparation to the frying pan with fat, we hold it with both hands so that it does not stretch, but remains fluffy and beautiful. Carefully lower into the boiling oil so as not to burn yourself. In the same way, carefully lay out the following blanks. When frying, there should be a lot of oil so that it reaches the middle of the height of the donuts.

After frying on both sides, transfer the tamarind from the fat to paper towels.

Having rid the baked goods of the oil absorbed during frying, place them in a beautiful dish, decorate with powdered sugar, and serve with tea.

Ruddy taratushki are prepared quickly enough and do not require the use of expensive products.

  • Kefir – 300 ml
  • Egg - 1 pc.
  • Sugar - 3 tbsp.

  • Soda - 0.5 tsp.
  • Salt - 0.5 tsp.
  • Flour - 550 gr
  • Cognac - 1 tbsp.

Combine kefir with egg, salt, sugar and vegetable oil. Add soda; if the kefir is not sour enough, you can first quench the soda with a small amount of vinegar. Knead the dough, gradually adding flour to the liquid.

To prepare the dough, you can use a bread machine; to do this, load all the ingredients in accordance with the instructions of the device and use the “Dumplings” or similar program for kneading.

Leave the finished dough to rest for 30 minutes. Then roll out the dough on a floured surface to a thickness of 5-6 millimeters, cut the resulting layer into rectangles measuring approximately 5 by 10 centimeters.

Make a cut in the middle of each rectangle. Thread one edge of the dough through the slit to create a twist.

Pour a little vegetable oil into a heated frying pan and place pieces of dough into the hot oil. Sufficient distance should be left between them; the taratushki significantly increase in size when fried.

Fry the taratushki over high heat for 1-2 minutes on each side until golden brown.

Ready-made taratushki can be decorated by lightly sprinkling them with powdered sugar. Taratushki on kefir should be consumed within the next 24 hours, after which they begin to stale and become less tasty.

Recipe 7, simple: tartarushki in a frying pan

Tararushki's appearance can confuse someone who is meeting them for the first time - they are very similar to brushwood, but a little more magnificent. According to their recipe, these are donuts, but they are mixed not with yeast, but with kefir. However, the cooking and frying algorithm itself is approximately the same. Initially, tararushki were cooked in a Russian oven, and therefore were clearly healthier than those cooked on the stove, and they had a different taste. If you wish, you can try baking them in the oven, but it will take more time.

  • Kefir – 220 ml
  • Wheat flour - 470 g
  • Eggs - 2 pcs.
  • Vegetable oil - 2 tbsp.
  • Sugar - 2 tbsp.
  • Vanillin - a pinch
  • Salt - a pinch
  • Baking soda - 1/2 tsp.
  • Powdered sugar - 1 tbsp.

Break the eggs into a bowl, add a pinch of salt and sugar, and beat thoroughly. Add kefir and vanilla, beat again using a whisk (do not use a mixer!)

Gradually add sifted flour into the dough, stirring it with a spatula or spoon so that no lumps form. With the last portion of flour, add baking soda and vegetable oil. If you use butter or margarine, melt it first. If the dough turns out to be too liquid, add more flour: it should be soft, pliable, breathable, but not stick to your hands or spread out. Cover the container with a towel and leave for 30 minutes, but not in a draft: the dough should rest in a warm place.

After the specified time, punch down the dough (do not over-mix!), transfer to a floured board, roll out into a flat cake 1-1.5 cm thick. If necessary, add flour to reduce the stickiness of the dough. The resulting flatbread must be cut into strips at least 5 cm wide and 12-15 cm long. In the middle with a knife you need to make a longitudinal cut 4-5 cm long, turn either end of the tararushka through it 1-2 times.

Fill a cast-iron frying pan with high sides 1/3 full with vegetable oil, heat it up and start putting the shells in it. Fry on each side until the surface turns golden-red. The tararushki caught from the frying pan should be transferred to a deep bowl and sprinkled with powdered sugar while they are still hot. Serve chilled.

How to make diet tararushki?

The dough itself of these donuts is not so heavy - it is not yeast, which pleases adherents of a healthy diet, and the greatest harm comes not from its components, but from the method of preparation. If you are concerned about the shape and condition of the pancreas, you can use the same recipe for tararushki, but bake them in the oven. Or further modify the ingredients.

  • Replace wheat flour with whole grain flour or take a mixture of wheat, oatmeal and rye in a ratio of 3:2:1 - this will make the dough more beneficial for the intestines, although it will not affect the calorie content.
  • Take only egg whites, without using yolks - the dough will become lighter and airier: both in energy value and in consistency. Before putting the tararushki in the oven, you can sprinkle them with ground nuts or sesame seeds.
  • Bake the tararushki in an oven preheated to 200 degrees, spreading them on a parchment sheet or silicone mat for 20-25 minutes.
