Salad with prunes and mushrooms: from tender to tart

Prunes and mushrooms form a bizarre flavor ensemble, but, of course, you can’t make a salad just from two products—you at least need to add a connecting link, mayonnaise. Although in fact, this salad only “dances” around prunes with mushrooms, and there are more products in it.

There are no restrictions on taste and color

No matter how much culinary experts vary the composition of this salad, only prunes will remain unchanged. And that’s relative, because depending on how soaked the prunes are, the taste of the salad will be more or less bright . Dry prunes give the salad a tart sourness, while well-soaked, soft ones give a delicate taste.

It's not so simple with mushrooms either. Take champignons or oyster mushrooms, again, the taste is tenderness itself. And if you take home-picked or marinated mushrooms, the taste is already sharper.

In addition to mushrooms and prunes, the salad also includes other products. To prepare a salad with mushrooms and prunes, we will need the following ingredients:

  • a glass of dried prunes;
  • large chicken breast;
  • 300 g mushrooms;
  • medium sized onion;
  • 5 eggs;
  • medium cucumber;
  • mayonnaise.

The spiciness of the salad will also depend on what kind of cucumbers you have and what kind of chicken. You can take a fresh cucumber, or you can take a salted or pickled one. The chicken breast can be boiled, or you can take it smoked. If you take smoked meat with pickled mushrooms and cucumbers, the salad will turn out very spicy. Well, you definitely won’t need to add salt to it. And boiled meat with fresh cucumber and champignons will give a very soft, delicate taste.

We will choose a compromise option: mushrooms and fresh cucumber - and smoked breast. Soak the prunes for 3 hours.

Layer by layer

Boil the eggs hard and cool in cold water. Peel the onion and cut into cubes. We clean the champignons, cut them into slices and lightly fry them with onions (you can use butter). Leave the mushrooms to cool.

Smoked chicken meat makes up the first layer; for this, the chicken needs to be cut into strips. A little mayonnaise. Next are the yolks. We take them out of boiled eggs cut in half and rub them over the first layer. We don’t put mayonnaise on the yolks, it’s such a delicate texture that you can’t spread it , but we place prune straws on top of the yolks. Coat with mayonnaise.

The fourth and fifth layers are fried mushrooms and fresh cucumber strips. Since the mushrooms will contain a certain amount of oil (no matter how you strain it, it will still remain), and fresh cucumbers have plenty of moisture, we will not coat each layer separately, but first lay out the mushrooms, and sliced cucumbers on them, and then Let's grease these two layers with mayonnaise.

Our salad with prunes and mushrooms is completed with a small layer of the rest of the smoked meat cut into strips, smeared with mayonnaise, on top of which we grate the empty halves of the egg white on a fine grater. It will turn out nice and fluffy.
