Making pumpkin pancakes

They are easy to prepare, but enjoyable to eat! We will prepare potato pancakes for 4 persons.


For this we need:

  • 400 g pumpkin;
  • 0.5 cups flour;
  • 2 pcs chicken eggs;
  • 10-15 g dill;
  • 50-100 g celery;
  • 2 tbsp. spoons of sunflower oil;
  • 2 cloves of garlic;
  • salt, ground black pepper - to taste.

We clean the pumpkin, the soft part of the “dream” on a grater, where there are small teeth. Add salt and set aside this mixture for about 5 minutes. Squeeze out the juice.

We just chop the celery, you shouldn’t squeeze it out - it usually doesn’t exude a lot of liquid. Add greens and onions, which are chopped quite finely.

Chop the garlic with a knife, on a grater, or put it through a garlic press.

Add the egg to the prepared vegetables. Mix thoroughly, add salt and pepper.

Add flour and knead again.

Divide this mass into portions with a wet spoon so you can quickly put it in the frying pan.

Heat the vegetable oil.

We arrange our pumpkin pancakes.

We immediately reduce the heat to low. Fry on each side for about 2-3 minutes.

Next, cover the pan with a lid for 1-2 minutes.

Place the prepared dish on a napkin to get rid of excess fat. Our healthy and delicious breakfast is ready!

Preparation

  • 1 We put on the table the products that we will need.

  • 2Wash the pumpkin and dry it with a paper towel. After cutting the fruit in half, cut off a piece from it. We cut off the peel from the cut slice with a knife, remove the seeds and the fibrous structure of the pulp around the seeds, and carefully rub the peeled piece of pumpkin on a grater (with large cells).

  • 3Wash the potatoes, peel them and rinse again with water.

  • 4Then quickly grate the potatoes into thin chips on a grater with medium mesh.

  • 5Add the grated potatoes to the chopped pumpkin.

  • 6Having washed the greens, chop them with a knife.

  • 7Add herbs to the grated vegetables.

  • 8 From the spices, add ground black pepper and a pinch of salt.

  • 9Now add flour. You don't need to take a lot of flour. It is only needed to hold the grated vegetables together. Be guided by approximately the weight of flour given in the recipe, but you may have a different amount of flour.

  • 10This is the mass you should get.

  • 11Divide all the dough into portions so that it is convenient to prepare potato pancakes (pancakes). The dough is easily rolled into balls by hand. The weight of one ball is approximately 54 g.

  • 12Flatten the balls and form round fluffy cakes.

  • 13Heat a frying pan with vegetable oil. If you have a frying pan with a non-stick coating, then do not pour a lot of oil into it, but only grease the frying pan with a thin layer so that the potato pancakes do not turn out too greasy. The pumpkin mixture with potatoes is juicy and does not require the addition of any fat during preparation. Fry the bottom side until golden for a few minutes. The time depends on the thickness of the cakes. To ensure that the thick flatbreads are better fried, cover the frying pan with a lid.

  • 14We also fry the other side of the potato pancakes under the lid.

  • 15If the potato pancakes were fried in a large amount of oil, then remove excess fat by placing the finished pancakes in a plate with paper napkins.

  • 16You can serve pancakes with pumpkin seeds and fresh herbs. On ordinary (non-Lenten) days we serve sour cream with potato pancakes with pumpkin.

  • 17Draniki turn out juicy, fluffy and very tasty.

Winter is the perfect time for pumpkin dishes .
Firstly, this is one of the few vegetables available in the off-season. Secondly, it is useful - protein, amino acids, antioxidants, acceleration of metabolism, etc. Thirdly, the price, even in a hungry year, is one and a half kopecks, ten kilos. Another question is that, apart from porridge or traditional baking, we don’t know where to put the miracle vegetable: moving it from shelf to shelf in the refrigerator, as a rule, we throw it in the trash because it has spoiled. Pumpkin pancakes - ingredients for 2-3 servings:

  1. 400 g pumpkin
  2. 1 small onion
  3. 2-3 large cloves of garlic
  4. 1 egg
  5. 2 tbsp. l. flour (you can use semolina)
  6. Chopped greens (cilantro, parsley, dill together or any kind separately)
  7. Salt, ground black pepper to taste
  8. Vegetable oil for frying

Step-by-step preparation - recipe with photos

Step 1: grate the pumpkin on a coarse grater, lightly squeeze out the excess liquid. Add finely chopped onion, garlic, and herbs. Salt and pepper to taste.

Add the raw egg, mix, add flour. Pepeshniks can replace it with semolina. Stir the mixture until smooth.

Step 2: this is the beautiful orange dough we get at the end.

Step 3: prepare potato pancakes on a high speed basis. Place small portions on a hot surface with a sufficient amount of vegetable oil.

Fry until golden brown, 3-4 minutes on each side. For thin small cutlets this time is quite enough.

Step 4: Place on a plate lined with paper towels to remove excess fat and unnecessary calories. A classic of the genre is to serve the dish with sour cream or a sauce based on it.

Potato pancakes with pumpkin and cheese

Required Products:

  • three medium potatoes;
  • 300 g pumpkin;
  • pepper and salt to taste;
  • two tablespoons of sour cream or kefir;
  • 100 g hard cheese;
  • two medium onions;
  • two eggs;
  • three tbsp. flour.

Kitchen utensils: grater, bowl, frying pan. Quantity: for 6 servings. Cooking time: about 45 minutes.

  1. Grind the potatoes, pumpkin and cheese with a coarse grater.
  2. Finely chop or also grate it.
  3. Mix everything. Add sour cream or kefir and eggs. Salt and pepper. Add flour and mix thoroughly.
  4. Fry for 5 minutes on both sides.
  5. Sprinkle with finely chopped herbs, add sour cream and serve.

Recipe for pancakes from pumpkin and zucchini

A tasty and easy to prepare dish. Zucchini is a low-calorie, healthy and juicy vegetable. It contains many vitamins, macroelements, and fiber.

Ingredients:

  • a couple of small zucchini;
  • 600 g pumpkin;
  • 1 onion;
  • 2 eggs;
  • 100 g flour;
  • garlic;
  • salt and spices;
  • 60 ml vegetable oil for frying.

You can fry potato pancakes in any vegetable oil: both sunflower and olive oil will do. Garlic gives potato pancakes a spicy and appetizing aroma

Cooking method:

  1. Peel the zucchini, pumpkin and onion. Grate everything on a coarse grater and squeeze out the juice. Stir and add salt.
  2. Pass the garlic through a press.
  3. Add eggs and flour to the vegetable mixture and mix everything. Taste for salt and add spices.
  4. Fry potato pancakes in a frying pan in oil on both sides.
  5. Place the finished pancakes on napkins or towels to remove excess oil.

Zucchini and pumpkin pancakes are served immediately after cooking, hot, with sour cream or mayonnaise.

Sweet pumpkin pancakes

Pumpkin has a sweet taste, so potato pancakes can be made from it.

Ingredients:

  • 400 g pumpkin pulp;
  • 1 egg;
  • 30 g semolina;
  • 50 g sugar;
  • 60 ml vegetable oil;
  • salt to taste;
  • baking soda.

Thanks to the content of semolina and soda, such pancakes turn out thick and fluffy

Cooking method:

  1. Beat the egg and sugar until foamy. Add semolina and a couple of pinches of soda, mix everything well. Leave for 20-30 minutes for the cereal to swell.
  2. Grate the pumpkin and add a little salt. Combine with the egg mixture and mix everything well.
  3. Heat oil in a frying pan, add pancakes with a spoon and fry until golden brown on each side. From the specified amount of ingredients you will get 2-3 servings of pancakes.

Draniki or pancakes?

The Belarusian word “draniky” essentially means something that has been grated – in our understanding – grated. In the old days, when the graters we are used to did not yet exist, vegetables were chopped on a wooden board with a sharp wide edge, grating them into small flakes. Over time, civilization invented a more convenient item for this, but the word remained, as did the way to prepare quick and tasty pumpkin pancakes according to grandmothers’ recipe.

Considering that draniki (deruny in Ukrainian) are vegetable pancakes, some people are confused about what to actually call them. It is worth clarifying that the dough for pancakes has a homogeneous structure (that is, the vegetables must be pureed), and the mass for potato pancakes consists of small pieces.

Lenten

For anyone who controls calorie intake, fasts or follows a vegetarian diet, the queen of autumn can be served according to a special recipe. If you don’t know how to cook a tasty vegetable without meat, eggs and extra calories, then lean pumpkin pancakes are the ideal solution at home! A tasty, healthy and quick product will bring a lot of pleasure, and also a complex of vitamins and minerals that you and your family need.

Ingredients:

  • peeled pumpkin pulp – 500 g;
  • potatoes – 300 g;
  • wheat flour – 8 tbsp. spoon;
  • salt – 1 teaspoon;
  • ground black pepper - a pinch;
  • parsley - a small bunch.

Cooking method:

  1. Wash and peel all vegetables and herbs.
  2. Grate the vegetable part of the ingredients on a medium or fine grater, drain off the excess liquid.
  3. Mix all ingredients in a bowl, adding flour last.
  4. To preserve maximum benefits from the dish, it is better to choose the steaming method. To do this, place pancakes formed from dough on the steamer rack and cook them for 40 minutes. If a crispy crust is your priority, then you should resort to the classic recipe and fry the sunny pancakes in a frying pan.

What to serve with pumpkin pancakes

  • In our family, we most like to eat these pancakes with sour cream. You can chop parsley or dill into it, add salt and add a little garlic if you don’t mind it spicy.
  • Potato pancakes taste best when they are still warm. But I’ll be honest: I don’t know how cold they taste, since they never stay. This dish is a great snack or addition to lunch.
