Brown pancakes are a great way to repurpose yesterday's uneaten side dish of mashed potatoes. This treat is delicious to try with a variety of meat sauces and goulash.

Simple mashed potato pancakes

This recipe is for making simple mashed potato pancakes. They turn out soft and very fluffy.

  • 1 kg of boiled mashed potatoes;
  • 500 ml milk;
  • 500 gr. flour (it may take a little more);
  • 2 eggs;
  • 2 teaspoons baking powder;
  • salt and black pepper to taste;
  • vegetable oil.

Mash the boiled potatoes, making sure that not a single lump remains. Pour in warm milk and beat in two eggs. Mix well, preferably using a mixer. Now gradually add flour mixed with baking powder. The flour must be sifted first.

Add flour a little at a time, mixing well each time. The dough should be thick, similar in consistency to mayonnaise.
