  2. Cut the onion into half rings and the carrots into thin strips.
  3. Cut tomatoes and eggplant into small cubes.

  3. Cut the potatoes into cubes (you can use a special grater), and cut the garlic into plates.
  4. Next, you need to put the frying pan on medium heat and grease it with oil. If the fillet has enough fat, then no oil is used.
  5. After the pan has warmed up, add the pork and fry over high heat until a crust forms.

  6. Then you need to sprinkle the meat with salt (1-2 g) and thyme, add peppercorns and fry for another 1-2 minutes until the smell of the spices is released. Next, place the meat with spices in a deep frying pan with a thick bottom, leaving the oil in the frying pan.
  7. In a frying pan with oil from frying meat, add vegetable oil (20 ml), onions and carrots. Fry vegetables over medium heat until softened. After this, you need to pour in the broth, add tomato paste, laurel leaves and sugar. Simmer the ingredients for about 15 minutes.
  8. Pour the remaining oil into the frying pan with the meat, heat the contents over medium heat and add the potatoes. Fry until the ingredients are ready.

When choosing beef for frying, you must follow two selection criteria:

  • freshness (the younger the meat, the less time it will take to prepare and cook it);
  • juiciness (the fact is that when frying, the fibers of the meat lose moisture, so pieces of tenderloin - seemingly the best part of the carcass - are completely unsuitable).

It is best to buy a spatula or a thin edge for cooking in a frying pan - then the dish will turn out very juicy and tender.

But even if it was not possible to purchase young beef, this can be easily corrected with the help of preliminary preparation. And here you can go two ways:

  • soak the meat in milk (2 liters per 1 kg of beef);
  • marinate.

Regarding the latter, there are several best ways to marinate beef.

Method 1

Ingredients:

  • 1 tbsp. l. salt;
  • 1 tbsp. l. white sugar;
  • ground black pepper (to taste).

Preparation:

  1. Mix dry ingredients in a bowl.
  2. We wash the meat and cut it along the grain into large pieces (small pieces will turn out a little dry).
  3. Sprinkle the beef with the dry mixture and leave to soak for 20-25 minutes. The meat is ready for frying.

Method 2

For this marinating option, simply coat the pieces of meat with mustard and let stand for 15 minutes.

Method 3

This is the so-called Chinese beef marinade.

Ingredients:

  • 2 tbsp. l. rice vinegar;
  • 4 tbsp. l. soy sauce;
  • 1.5 tbsp. l. grated fresh ginger;
  • 1 tbsp. l. liquid honey;
  • 1 tsp each turmeric and dry chili.

Preparation:

  1. Mix vinegar, honey, ginger, sauce and seasonings.
  2. Rub the marinade into the pieces of meat, place them in a bowl and let stand for 30 minutes.

Recipe in French

Fried potatoes with meat prepared in French are not only juicy, but also aromatic.

  5. Grind the cheese using a grater.
  6. Place a frying pan over high heat, heat the vegetable oil in it, then add the meat and fry until a crust forms. The crust will retain the juices inside the meat pieces.
  7. After this, you need to put the potatoes in the frying pan, without reducing the heat and without covering with a lid, fry the ingredients for another 15 minutes. It is necessary to stir the contents periodically for uniform frying.

  1. Carrots and onions are cut into small cubes.
  2. The meat is cut into medium-sized pieces.
  3. The meat is fried first in a thick-bottomed pan, and then vegetables are added to it.
  4. Add water so that the meat is half submerged, salt and spices. Simmer for 20 minutes.
  5. Potatoes are cut into large pieces.
  6. Bell peppers are cut into half rings. Place everything in a pan with the meat and add a bay leaf. Salt to taste.
  7. Add more water to the pan and simmer until the potatoes are done. You can simmer either on the stove or in the oven.
