Compound:

  • 200 g low-fat cottage cheese;
  • 2 medium eggs;

Soak a pinch of gelatin in water and heat until it dissolves well. Next, grind the washed strawberries, adding sweetener and gelatin mixture. Pour the strawberry mixture into the yoghurt mold and place back in the refrigerator. After 2-3 hours, the cake according to the recipe will be completely ready to eat. This no-bake dietary dessert is approved for children's menus and proper nutrition.

Curd without baking

Dietary no-bake curd cake contains only 74 kcal per 100 g. Necessary products:

  • cottage cheese 0% – 200 g;
  • yogurt – 150 g;
  • kiwi – 2 pcs.;
  • gelatin – 15 g;
  • water – 1 glass;
  • sweetener - to taste.

The classic recipe for the cake involves a fairly heavy custard. Napoleon's dietary recipe allows you to get a similar dessert with a minimum calorie content (200 kcal/100 g). For preparation you will need:

  • thin lavash – 700 g;
  • egg – 1 pc.;
  • milk – 250 ml;
  • honey - 2 tbsp. l.;
  • starch - 1 tbsp. l.

Carefully cut the pita bread into even squares, and chop the excess parts. Pour milk, honey into a container with thick walls, break the egg, and then beat the whole mass with a whisk. Add starch as you stir.

Then put the saucepan on the fire and cook for 5 minutes, without stopping stirring. The cream should thicken, then remove the container from the heat and cool. Coat each piece of lavash with cream and place it in the same way as cakes. Sprinkle the last cake with small pieces of lavash. Before serving, dietary pita bread napoleon should sit for about 30-60 minutes.

  • cottage cheese – 2 tbsp. l.;
  • sweetener - to taste.

Biscuit:

  • eggs – 6 pcs.;
  • baking powder – 4 tsp;
  • sugar substitute - equivalent to 4 tbsp. l. granulated sugar;
  • salt - a pinch;
  • pudding – 4 tbsp. l.

Separate the yolks from the whites. Grind the yolks with sweetener, pudding, baking powder and a pinch of salt.

Beat the whites thoroughly with a mixer, and then slowly add them to the yolk mixture. Pour the biscuit into a small pan and bake in a preheated oven. After this, cool the base on a wire rack and cut into 2 equal layers.

Whisk the listed ingredients for the cream, and then coat the cakes with it. To prepare the glaze, mix cocoa, milk, cottage cheese and a little sweetener and stir the mixture over heat. Once the mixture has a uniform texture, you can pour the cakes. Next, place the cake in the refrigerator for 30 minutes before serving.

With fruits

Diet cake with fruit has a pleasant taste and low calorie content (80 kcal per 100 g). Products for the dish:

  • apples – 3 pcs.;
  • peaches – 2 pcs.;
  • egg – 1 pc.;
  • low-fat kefir – 500 ml;
  • oatmeal – 4 tbsp. l.;
  • semolina – 4 tbsp. l.;
  • soda – 0.5 tsp;
  • honey – 1 tsp;
  • vanillin - a pinch;
  • cinnamon - a pinch.

Pour kefir into a bowl, adding soda to it. Then add the beaten egg, oatmeal, honey and semolina. Mix thoroughly and add a pinch of vanilla and cinnamon to the dough. Mix thoroughly and leave for 15 minutes for the semolina to swell. Rinse the apples and peaches, peel and cut them into small pieces.

Place the fruit in the bottom of non-stick pans and pour the batter on top. Bake this pie for about 35-40 minutes until fully cooked.

Note! To make the cake sweeter without adding sugar, the recipe can be supplemented with dried fruits (raisins, dried apricots, prunes).

Low carb raspberry cheesecake

To prepare this delicacy, you will need a minimum of ingredients.

For decoration, you can take not only raspberries, but also other berries and fruits, for example, lime - you get a very fresh solution.

Cheesecake ingredients:

For the soufflé:

  • 4 egg whites;
  • 2 tsp. gelatin;
  • 300 ml low-fat milk;
  • sugar substitute to taste;
  • 10 drops of lemon juice.

For the glaze:

  • 20 g dark chocolate (85% cocoa);
  • 100 ml yogurt;
  • 150 ml low-fat milk;
  • 1 yolk;
  • 2 tsp. cocoa;
  • vanilla to taste.

Let's prepare it like this:

  1. Separate the whites and yolks. Beat the whites until foamy and combine with the beaten yolks.
  2. Add starch, milk, baking powder and sugar substitute. Mix.
  3. Bake the biscuit in an oven preheated to 190 degrees for about 10 minutes.
  4. Mix the products for the glaze: melt the chocolate in a water bath, add the remaining ingredients. Bring to a boil and cool.
  5. Beat the whites for the soufflé.
  6. Prepare gelatin by dissolving and heating it.
  7. Add gelatin, lemon juice, milk and sugar substitute to the whites.
  8. Pour the resulting mixture over the biscuit. It should lie in a deep form.
  9. Cover the cake with frosting and refrigerate for 2 to 4 hours until completely hardened.

A basic recipe for PP sponge cake, with which we will begin our training. Carefully read all the nuances of preparing dough and baking to get an airy and tasty PP sponge cake.

This is a recipe-constructor in which you can change almost everything. It can be made with rice or spelled flour, with milk or fruit puree, with any sugar or sweetener (including syrups).

Recipe:

  • Egg – 2 pcs C0 (130 – 150 g)
  • Liquid or puree – 40 g (kefir, yogurt, fruits, berries, milk)
  • Flour – 50 g
  • Baking powder – 1 tsp without a slide (2-3 g)
  • Sweetener – 5 g intensive (or 50 g Erythritol)

Is it possible to take not C0, but C2? What if the egg is in a bottle?

Is it important to separate the proteins?

This recipe is for 2 C0 eggs. The weight of one such egg in a shell is from 65 g to 75 g, without a shell from 59 to 68 g. If you take other eggs, you need to count the liquid and flour. If you bought smaller eggs, add 5 g less liquid and flour.

Egg melange in bottles will not work here, because... You need separate whites, separate yolks. And this is very important in PP sponge cake - beat the whites separately.

Liquid or puree

What liquid can be used for sponge cake? Which is better – milk or kefir?

What if lactose is not allowed?

Liquid is milk, vegetable milk, yogurt, kefir, sour cream, fermented baked milk, berry puree, fruit puree or juice.

The biscuits will be slightly different. On fruit puree they will be denser and fluffier, on juice – less fluffy, on kefir – less dense. What to choose - look at what taste and color you want to get.

If lactose is not allowed, then you can use plant-based milk, plant-based yogurt, berry or fruit puree. Making a biscuit without lactose is not a problem; making a biscuit with cream is much more difficult.

If you use berry puree, take the time to rub it through a sieve and remove the seeds.

Flour

White rice flour or regular wheat flour is best for this recipe. Only because it does not change color and has no taste. With different flour the color of the biscuit will change. It’s not scary, and sometimes it’s even necessary to make the cut of the cake bright and appetizing.

I usually use rice or whole wheat flour.

If you want to add other flour, do it like this:

  • 2 parts rice or wheat flour + 1 part other flour
  • 2 parts rice or wheat flour + 0.5 part other flour + 0.5 part cornstarch

You can use corn or tapioca starch in baking. In creams - only corn.

Baking powder

Use ready-made confectionery mixtures or soda as a baking powder.

Soda can only be used if the liquid is sour (kefir, yogurt, lemon, orange puree, etc.). If the liquid is neutral, then the soda will have to be quenched additionally (add a tablespoon of lemon juice, apple cider vinegar or a pinch of lemon peel to the biscuit).

There is only one requirement for baking powder - it must be of good quality. It is best to buy it at a confectionery store, or pay attention to the reviews and stars in the online store. Buy the one with a good rating.

Sweetener

You can use sucralose-based intense sweetener or erythritol as a sweetener in this recipe. All other sweeteners contain calories, change when heated, or have an unpleasant aftertaste.

On erythritol PP the sponge cake will be more fluffier - see photo. The lower cakes are Prebiosvit fitness, the upper cakes are Erythritol.

Baking dish

It is best to use a silicone mold for baking PP sponge cake. My recipe is designed for a small 16 cm mold. There is almost no fat in the recipe, so even a silicone mold needs to be greased with vegetable or butter before baking. Literally lightly the bottom and edges, otherwise it may stick.

If you are new to PP baking, I highly recommend using a silicone mold.

You can also use any other baking dish, but they will need to be properly floured.

Preparation

Turn on the oven at 180 C. The oven should be good - with even heating from above and below.

To knead the dough we will need:

  • 2 mixing bowls
  • Mixer
  • Scales

All utensils must be clean, not greasy and dry.

Separate the whites from the yolks and place them in 2 bowls - one with yolks and the other with whites.

Beat the egg whites with a mixer at maximum speed for 3-5 minutes. Well-beaten whites will not fall out of the cup if you turn it over.

If you used erythritol, then you need to add it to the whites 1 minute after the start of beating and beat the whites together with erythritol.

Add everything else to the yolks (liquid, sweetener, baking powder, flour). We carefully weigh everything - don’t rely on your eye. Take a mixer from the whipped egg whites and mix everything in a second bowl - everything except the whites. There is no need to beat - the main thing is that there is no lump.

Now add the whipped whites to the dough. We do this with a spoon or silicone spatula. You can't use a mixer - the dough will fall off. Add one large spoon and mix gently. Added a second one and mixed again.

If any lumps remain from the whites, they can be broken by quickly moving a spoon over the surface of the dough. This way it will not settle, and the whites will break and there will be no lumps.

Now grease the mold, pour the dough into it and put it in a hot oven for 20 minutes.

After 20 minutes, remove the biscuit from the oven and carefully run it along the edges to make sure the edges are not sticking. Also carefully turn it over and remove it from the mold.
