Chicken cutlets stuffed with mushrooms are a very tasty dish! The cutlets turn out incredibly tender, and their pleasant aroma will make your guests ask for more.
Chopped cutlets
Ingredients:
- chicken fillet – 1 kg;
- fresh mushrooms – 0.5 kg;
- garlic - several large cloves;
- flour - half a glass;
- sour cream - half a glass;
- parsley and dill - 1 small bunch;
- onion – 2 pcs.;
- ground pepper and salt;
- oil for frying.
Cooking process:
- To prepare juicy and tasty chopped chicken cutlets, you need to start by preparing the ingredients. Fresh meat should be rinsed, then dried, and cut into small cubes less than 1 centimeter in size.
- Cut the onion into small cubes or thin half rings. Champignons or any other mushrooms should be finely chopped. To reduce them in size to the required parameters, lightly fry the onion with mushroom products in sunflower oil until tender.
- Cool the mushroom mass, and then place it in a deep bowl and add chopped meat, chopped herbs with garlic, sour cream and a small amount of wheat flour. Stir the minced meat and season it with spices at your discretion.
- Pour a little oil into the frying pan, heat it well, and then use a spoon to place the future cutlets on the grill surface. Fry for a few minutes on each side until crispy. But what if you slightly diversify the traditional dish? I suggest making cutlets from chicken and champignons - at least no less tasty, but more original and unusual. Thanks to the mushrooms, chicken cutlets turn out more tender and acquire an unusual aroma - in short, this is a must-try. With aromatic cheese
Ingredients:
- ready minced chicken – 0.6 kg;
- small onion – 1 pc.;
- fresh mushrooms – 0.15 kg;
- hard cheese – 0.15 kg;
- breadcrumbs;
- ground black pepper and salt for taste.
Cooking process:
- If you don’t have ready-made minced meat, you can make it yourself according to the classic recipe, simply passing it through a meat grinder. Then sprinkle the meat mass with salt and spices for taste and begin pre-processing the mushrooms. Chop them as finely as possible, and do the same with a small onion. As for hard cheese, you can simply grate it. It is advisable to use a large one for such purposes.
- Pour oil into the frying pan and place the onion in it. When it is lightly fried, stir it and add mushrooms to it. Prepare the mushroom filling for chicken and mushroom cutlets by stirring occasionally for five minutes.
- Next, according to the recipe, you need to remove the hot frying pan with mushrooms from the heat, sprinkle them with grated cheese and quickly stir. Take some minced meat in your palm, form it into a flat pancake and fill it with filling in the center. Seal the edges tightly so that the chicken cutlets with mushrooms and cheese take on an oval shape.
- Fry the meat pieces for seven or even ten minutes on each side over low heat, after dipping them in breadcrumbs. They will make sure that the finished cutlets are crispy and look appetizing.
Chicken cutlets with mushrooms - recipe
To prepare chicken cutlets with mushrooms, you can use either ready-made minced chicken or chicken breast or chicken legs, which at home can be turned into higher quality minced meat than in the store. Wash the legs or chicken breast and dry with napkins to remove excess moisture. Trim the meat from the legs. Cut the chicken breast into cubes. Pass the chicken meat through a meat grinder or grind it in a food processor or blender. Place minced chicken in a bowl.
Grate the onion on a fine grater or grind it together with the chicken.
Wash the champignons. Cut the mushrooms into several pieces. Grind them, like chicken, using any of the above methods.

- chicken breast or prepared minced meat – 0.5 kg;
- loaf - several slices;
- milk - a quarter glass;
- white onion – 1 pc.;
- fresh egg – 1 pc.;
- dried mushrooms - a few tablespoons;
- fresh mushrooms – 0.3 kg;
- shallots – 1 pc.;
- wheat flour - half a glass;
- butter – 1 tablespoon;
- ground pepper and sea salt.
Cooking process:
- According to the recipe, classic minced meat must be supplemented with a white loaf, which was previously soaked in warm milk. Onions or white onions should be cut into small cubes or used for chopping with a coarse grater. Fresh greens must be rinsed under running water and finely chopped. Finally, you need to supplement the chicken meat with sour cream, spices and eggs. This mass should be given a little time to brew thoroughly.
- To prepare the mushroom filling, champignons or any other fresh mushrooms need to be washed, dried, and then finely chopped. Meanwhile, dried foods need to be soaked in boiling water for several hours. At the end, the water will need to be drained, and the softened products will need to be cut.
- Place the butter on the frying surface. When it is completely melted, you will need to place chopped shallots there. Sprinkle the onion with pepper and salt. Cook it for about 4 minutes, and then add the mushrooms. It is better to simmer the products for about 10 minutes so that the moisture is completely removed. The finished filling should be cooled completely.
- With wet hands, form the minced meat into a flat cake, fill it with mushrooms and onions. Make sure the filling is tucked safely inside these flatbreads. Fry the mushroom-stuffed chicken cutlets after coating them generously in breading flour or breadcrumbs. Fry the cutlets until golden brown on each side. Bon appetit!
How to cook “Chicken and champignon cutlets”
Ingredients.

Cooking process:
- If you want to make dietary chicken cutlets with mushrooms in the oven, you should start by preparing the minced meat. Rinse the meat, dry with a towel and pass it through a meat grinder. The onion must be peeled and cut into small cubes. You can also pass it through a meat grinder along with the chicken.
- Next you need to deal with the mushrooms. Choose any products that suit your taste, but do not forget that wild mushrooms require special attention. They must first be boiled in salted water. Some types of mushrooms should even be peeled. With champignons everything is much simpler. The garlic should be peeled, rinsed and set aside for a while.
- Grind the mushrooms and garlic using a meat grinder to mix into the meat and onions. Some cooks add bread to such cutlets, but in this case there is absolutely no need for it. The secret of the dish is that the finished minced meat must be thoroughly beaten, throwing it forcefully on the table. Once the minced meat is completely homogeneous, you can continue to follow the recipe.
- Forming cutlets is much easier with wet hands. You can give them an oval or round shape according to your choice. All you have to do is place the blanks on a baking sheet greased with vegetable oil.
- Preheat the oven to 170 degrees, and then place the baking sheet with the future cutlets into it. At the end of cooking, which takes about 40 minutes, the roasting pan with the meat beauty should be moved to the top shelf so that it acquires an appetizing golden crust.
