Immediately brush each cutlet with sour cream. I had sour cream 20% fat.

I didn’t even pour water onto the baking sheet, juice came out of the cutlets, and I poured it over them in the middle of cooking. I’ll say right away that this is how the minced meat behaved. If your mince is leaner meat, you may need to add a few tablespoons of water to the pan.

The oven should be well heated to 200° degrees, this condition allows the protein in the meat to coagulate and the juice to remain inside the cutlets, ensuring their juiciness. Place the cutlets with oatmeal in the oven for 15 minutes.

After 15 minutes, open the oven door slightly and pour the juices over each cutlet. If all the liquid from the baking sheet has evaporated, it is best to add a small amount of water (50 - 100 ml) to prevent the cutlets from burning.

If you do not use sour cream to grease the cutlets, at this moment put a small piece of butter on them. Then put the cutlets back in the oven for another 15 minutes.
