To prepare cutlets from rice and minced meat, we will need the following ingredients: rice, minced meat, carrots, onions, egg, salt, ground red pepper, dried basil, vegetable oil.
I already had minced pork ready. I just defrosted it. If you don't have minced meat, you can make it yourself or buy it at the store.
Now peel the onions. Let's cut it into small pieces. Peel the carrots and grate them on a large grater. It is advisable to take juicy and sweet carrots, then the cutlets will turn out tastier.
Pour some vegetable oil into the frying pan and heat it up. Add our vegetables and fry until they smell like onions. Season the vegetables with salt. Remove the pan from the heat and let them cool. When you transfer the vegetables to the minced meat, do not add the vegetable oil that is left from the vegetables, otherwise the minced meat for the cutlets will turn out to be sharp in taste and excessively fatty.
I took round rice, rinse it under running water. Pour water into the pan, wait until it boils, add rice and salt. Cook the rice until cooked, don’t forget to stir. Remove the rice from the heat, place it in a colander and drain off the excess liquid. We rinse it under cold water and put it back into the pan. We wait until it cools down. It is advisable that the rice is not overcooked, then it will be easier to make cutlets from it.
Place rice, minced meat, vegetables, egg, salt and spices in a deep bowl. Mix all the ingredients.
Now add 1-2 tablespoons of flour and mix again. If your minced meat is too runny, add more flour.

To prepare rice cutlets with minced meat for six servings, we will need:

  • Half a kilogram of pork.
  • Four hundred grams of beef.
  • A glass of rice.
  • A tablespoon of starch.
  • Two small carrots.
  • Two medium onions.
  • Three cloves of garlic.
  • Salt pepper.
  • Breadcrumbs.
  • Vegetable oil.

Cooking steps:

  1. Boil rice with peeled carrots until cooked.
  2. We make mixed minced pork and beef. To do this, you can use a meat grinder with a medium grid or a food processor.
  3. We pass onion, garlic and boiled carrots into the minced meat through a meat grinder.

Ingredients:

  • 1 kg. meat (veal, beef, pork - in any proportions)
  • salt
  • 1.5 tbsp. boiled (preferably long grain) rice
  • 2 eggs
  • 2 onions
  • ground black pepper
  • lard or sunflower oil
  • 2 or 3 cloves garlic
  • flour
  • 1/4 tbsp. very chilled water

Preparation:

  1. We sort the rice, rinse and pour boiling water, maintaining a 1:2 ratio. Cover the rice with a lid and leave for 10-15 minutes so that it absorbs the water. If not all the water has been absorbed, the excess can be drained. Let the rice cool.
  2. We clean and wash the onions and garlic. Cut the onions into four parts.
  3. We wash the meat and cut it into small pieces. Grind the meat, onion and garlic using a meat grinder or blender.

  4. Dilute the resulting minced meat with chilled water, add chilled rice, and beat the eggs. Salt and pepper. Mix everything thoroughly until smooth.
  5. We take the prepared minced meat with a tablespoon and roll it into a bun (1 tablespoon with a heap of minced meat for 1 cutlet). Place the meat balls on a cutting board or flat plate.
  6. In a separate deep plate, pour the flour we need for breading the cutlets.
  7. Roll the prepared meat balls in flour, and you can give them a flattened cutlet shape or leave them round.
  8. Immediately after deboning, place the cutlets in a hot frying pan with melted lard or vegetable oil. Fry them, like simple homemade cutlets, under a lid over medium heat for about 7 minutes, until the top side of the cutlet turns gray and the bottom is golden brown.
  9. Turn the cutlets over and fry for the same amount of time (7 minutes) on the other side, also until golden brown.
  10. Transfer the finished cutlets from the frying pan to a saucepan and cover it with a lid.
  11. In the same way, fry all the cutlets and put them in a saucepan.
  12. When all the cutlets are ready, you can stew them if desired. To do this, pour a little sunflower oil (or put a little lard) on the bottom of the saucepan, pour in 1/2 tbsp. water, add 1 or 2 bay leaves and 4-5 peas of black and allspice, you can also add other spices or dried herbs, cover with a lid and simmer for 5-7 minutes.
  13. Ready-made meat cutlets with rice can be served with mashed potatoes or pasta, porridge, or vegetable salad. You can also serve horseradish or mustard with these cutlets.
