  • salt, spices - to taste.

Wash the rice grains thoroughly in two or three waters until the turbidity of the water is removed. For soup, it is better to take short-grain rice, as it cooks faster. But the long variety is also suitable, although it will take more time to cook.

Pour water into the pan and pour in the cereal. Turn on the heat and bring to a boil, stirring so that the grains do not stick to the bottom. Then remove the foam and reduce the heat.

Peel and wash the potatoes, cut into medium cubes.

Add potatoes to boiling water with rice. Cook for 20 minutes after boiling.

To prepare a delicious rice soup without meat, you need to peel the potatoes, onions and carrots, wash them and cut them. Wash the chopped potatoes and place them in boiling water in a saucepan. While cooking the potatoes, pour rice into the pan, then fry and add carrots and onions, and at the end add salt and pepper, add chopped green onions, parsley and dill and cook everything until tender.

I pour 2.5 liters of water into a saucepan and put it on the stove. While the water is boiling, I peel the potatoes, carrots and onions, and also rinse the rice well so that the water is no longer cloudy.

Place rice into the pan. Stir and let the rice soak.

Next, add potatoes, cut into small cubes.

Simmer vegetables with rice for 10-12 minutes over low heat and cover.

Add tomato paste, stir, simmer for another 3 minutes.

The soup base is ready.

We need to prepare 1.5 liters of boiling water to pour the base. The soup will be thick. If you want a thinner soup, pour 2 liters of boiling water. Bring to a boil, reduce heat to low, cover with a lid and cook until the rice is cooked. It's another 15 minutes.

Add spices to the prepared soup: ground coriander, cinnamon, allspice, bay leaf and freshly ground pepper. Stir and cook for another couple of minutes. The soup is ready.

You can make croutons for serving. I cut the loaf slices into squares, placed them on a non-stick pan, sprinkled them with coriander and basil, sprinkled them with olive oil and put them in the oven, preheated to 180 C for 10 minutes. The crackers are ready.

Serve the soup sprinkled with croutons. The crackers are aromatic and tasty. This is an addition to the soup, you don’t have to make them. The soup is delicious even without croutons!
