Trying to speed up the process using a microwave or warm water will not lead to anything good.
  • You can bake the breast whole or cut into medallions. Cut the meat across the grain. When baking a whole breast, it is still recommended to separate the fillet from the bones.
  • To prevent the whole breast from drying out when baking, place it in a baking sleeve or wrap it in foil. 15 minutes before the end of cooking, tear the foil or film so that the breast is browned.
  • The breast will turn out juicy and soft even without foil, if you cover it with batter or rich sauce and sprinkle with cheese.
  • To make the turkey breast juicy and to soften it, they resort to marinating. For breasts, formulations containing sour cream or other fermented milk products, mayonnaise, butter or vegetable oil are most suitable. Keep the breasts in the marinade for at least 2 hours.   • Turkey breast medallions or roast fillets cut into pieces are cooked for 25-35 minutes at a temperature of 180-200 degrees.

This recipe comes with step-by-step photographs. Be sure to try this recipe, you won't regret it. I saw a recipe for such turkey breast pastrami in many sources, including Yulia Vysotskaya (she prepared it in exactly the same way, with garlic and soaking in salt water, but the ingredients for coating were slightly different: sweet paprika, salt, a mixture of different peppers: white, black, red and vegetable oil). I strongly recommend it because this is a recipe that I personally prepare again and again - everyone at home asks for it, and I myself want it. You know, there are such dishes that sink into the soul and are remembered. This is one of them. Even now, when I look at photos of this turkey pastrami, I really want a piece.

Ingredients:

1.5 kg. turkey breast fillet, 2 liters of water for marinade, ground coriander - 1 teaspoon, coriander beans - 1 tablespoon, mustard - 1 tablespoon, red hot pepper - 1 teaspoon, oregano - 1 tablespoon, dried basil - 1 tablespoon spoon, red paprika - 1 tablespoon, garlic - 5 cloves, vegetable oil - 3 tablespoons, salt - 4 tablespoons.

Cooking method:

  1. Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
  2. After 2 hours of marinating, remove the turkey fillet from the water, pat lightly with napkins, and stuff with chopped garlic cloves. You can use more garlic.
  3. Prepare a homogeneous mixture of all seasonings and vegetable oil. Brush the meat thoroughly on all sides with this mixture.
  4. Preheat the oven to 250 degrees. Please note - it is very important to preheat the oven.

  6. After 15 minutes, turn off the oven and, without ever opening the oven door, leave the turkey breast fillet in the cooling oven for 2 hours.

So, within 2 hours, the turkey will be fully cooked in the turned off oven. It will have a baked crust and will be very juicy inside. Perhaps the meat will be pink inside, but this should not scare you - this is how it should be - just try it, it is amazingly tasty.

Recipe No. 2. Spicy turkey breast fillet baked in the oven in foil

This recipe is even simpler than the previous one, but it is suitable only for those who like it spicy, because it involves adjika, red pepper and garlic (just a nuclear mixture!). If you don’t really like spicy dishes, then instead of red pepper, take black pepper, and smaller ones, and instead of adjika, you can use regular, non-spicy ketchup or tomato paste. Do not skimp on the garlic; stuff the turkey with it “lengthwise and crosswise”, making deep cuts with a sharp knife and pushing the pieces of garlic deeper inside.

Ingredients:

1.5 kg. turkey breast fillet, adjika - 2 tablespoons, garlic - 5 cloves, vegetable oil - 2 tablespoons, red hot pepper - 0.5 teaspoons, salt - 2 teaspoons (flat), water for soaking the turkey.

Cooking method:

  1. Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
  2. After 2 hours of marinating, remove the turkey fillet from the water, pat dry with a paper towel, and stuff with garlic.
  3. Prepare a mixture of adjika, vegetable oil, hot red pepper, and coat the meat thoroughly with this mixture.

Recipe No. 3. Turkey fillet in the oven with potatoes

Great recipe, very simple and very tasty. There are a minimum of ingredients (to simplify the recipe, I am giving here a very ascetic version - basically just turkey and potatoes, but in the next recipe I will show what other vegetables can be added to this recipe, besides potatoes). This dish is best prepared in a sealed baking bag.

Ingredients:

1 kg. turkey breast fillet, potatoes – 6 pcs., onions – 1 pc., carrots – 1 pc., salt, ground black pepper, 2 tablespoons of vegetable oil. Optional: 300 grams of whole mushrooms.

Cooking method:

  1. Wash the turkey fillet and cut into cubes (2-3 cm on a side).
  2. Peel the potatoes, wash them and cut them into fairly large pieces.
  3. Chop the onion and grate the carrots.
  4. If there are mushrooms, just wash them; there is no need to cut them, even if they are large champignons.
  5. In a saucepan, combine turkey fillet, carrots, onions, potatoes, vegetable oil, salt and pepper the mixture.
  6. Place the mixture in a baking bag or a thick cauldron, add a couple of tablespoons of water, and place in the oven for 50 minutes at 200 degrees. The form in which the dish is baked must be hermetically closed (if it is a cauldron, then the lid must cover it tightly). The dish will turn out very juicy and soft. The water should not evaporate, the dish should not be fried, it should be stewed in its own juice.

Mushrooms – champignons, whole – will look very good in this recipe. Just wash them and add them to the mixture. The finished dish will contain whole mushrooms. Cabbage will also look good in this dish. Ideally, a mixture of regular (fresh white cabbage) and sauerkraut.

Recipe No. 4. Turkey fillet in the oven with vegetables

There are a lot of ingredients in this recipe. I love recipes that have a lot of ingredients, because they give a very, very rich taste, just an explosion of emotions, true pleasure. It is clear that almost any vegetables in this dish can be neglected and cooked without their participation. The taste will just be a little different, but nevertheless, it will still turn out very tasty.

Ingredients:

1 kg. turkey breast fillet, potatoes – 4 pcs., onions – 1 pc., carrots – 1 pc., shredded white cabbage – 200 grams, sauerkraut – 150 grams (handful), small zucchini – 1 pc., small eggplant – 1 pc., handful green beans, sweet pepper (preferably colored - red, yellow) - 1 pc., adjika or delicious Georgian tomato sauce - 3 tablespoons, salt, ground black pepper, 2 tablespoons of vegetable oil, herbs: dill and parsley.

Cooking method:

  1. Wash the turkey fillet and cut into cubes (2-3 cm on a side).
  2. Peel the potatoes, wash them and cut them into fairly large pieces.
  3. Chop the cabbage, grate the carrots, chop the onion, cut the zucchini and eggplant into cubes (you can remove the skin), and chop the red bell pepper into strips. Green beans do not require chopping.
  4. Mix all the vegetables and meat in a large saucepan, add salt and pepper to taste, add tomato sauce, vegetable oil, and mix.
  5. Transfer the mixture into a baking bag or large cauldron, cover it with a lid, and bake in the oven for 2 hours at 180 degrees. Let it simmer and simmer until fully cooked. Vegetables will release all their juices and flavors.

Recipe No. 5. Turkey breast fillet in the accordion oven with soy sauce, cheese and tomatoes

This method of roasting meat is well known to experienced cooks. The meat is cut into slices along the entire length, without cutting to the end, that is, the piece remains intact, but is cut repeatedly along the length. A slice of tomato and cheese is inserted into each cut (pocket). As a result, we get a very beautiful accordion of meat, in each fold of which you can see the red color of the tomato and browned cheese.

  • ketchup – 50 ml;

Cooking method:

  • Rinse the turkey breast fillets under the tap and pat dry with a paper towel. Cover with film and beat a little on all sides. Remove the film. Using a sharp knife, pierce the breast in several places. Place it in a bowl.

You will need:

  • 500-600 g turkey loin,
  • vegetable fat,
  • onions, 2 pcs.

How to cook quickly and easily?

1. Remove skin from turkey breast. Rinse and dry the meat. Cut the sirloin into small pieces. In a preheated saucepan, brown the fillet pieces in oil without salt and spices. When it is slightly fried, you can already add salt and pepper and fry it for a few more minutes over moderate heat.

2. Chop the peeled onion into thin strips. Add chopped onion to the turkey and simmer, stirring occasionally.

3. Process and dry any fresh mushrooms or champignons. Cut the mushroom caps and stems into thin slices. It's time to add them to the meat and onions. Now this whole mixture of mushrooms, onions and turkey fillet should simmer for 10-15 minutes.
