One of my favorite soups with homemade egg noodles in chicken broth and wings. It will turn out quickly, tasty and aromatic!

Pea soup with chicken wings

Ingredients:

  • 5 chicken wings;
  • 300 g frozen green peas;
  • 200 g potatoes;
  • 100 g onion;
  • 100 g carrots;
  • 1.3 liters of water;
  • sunflower oil;
  • salt;
  • ground black pepper;
  • dried oregano;
  • dried basil.

Cooking time – 35 minutes.

Calorie content per 100 grams – 125 kcal.

Cooking steps:

  1. Rinse the wings, place in a pan, add water. Place on the stove and bring to a boil, skimming off the foam all the while. After boiling, reduce the gas or electric stove power to minimum and cook for about 15 minutes;
  2. Peel the vegetables, cut the potatoes into small pieces, and place in water. Divide the onion into quarters and chop, grate the carrots, sauté everything in oil (add the onion first). Add sautéed vegetables and green peas to the soup;
  3. Salt and add seasonings. Cook for approximately 10 minutes. Serve immediately.

Delicious pea soup

Pea soup is always a combination of spices and vegetables. The chicken-based broth is tender and savory. A large number of dried herbs gives the soup a pleasant and tart aroma. To prepare pea soup with chicken wings you need to take:

  • five wings;
  • 300 g frozen green peas;
  • one hundred grams of onion;
  • two hundred grams of potatoes;
  • 100 g carrots;
  • 1.3 liters of water;
  • a little vegetable oil;
  • salt;
  • dried basil and oregano;
  • ground black pepper.

The calorie content of this soup with chicken wings is only 125 kilocalories per hundred grams. You can also take fresh herbs to decorate the plate.

Vermicelli soup

Ingredients:

  • 5 chicken wings;
  • 40 g vermicelli;
  • 0.9 l of water;
  • 100 g onion;
  • 100 g carrots;
  • dill and parsley;
  • ground black pepper;
  • salt.

Cooking time – 25 minutes.

Calorie content per 100 grams – 155 kcal.

Cooking steps:

  1. Rinse the wings and place in a pan, add water. Boil, removing the foam, reduce the heat or the power of the electric stove to a minimum, cook for 17-18 minutes;
  2. Peel the vegetables and chop into half rings. Chop the greens. Add everything to the broth.
  3. Add seasonings and vermicelli, cook for about 10 minutes. Serve hot, garnished with fresh herbs.

Smoked chicken wing soup

Ingredients:

  • 5 smoked chicken wings;
  • 250 g potatoes;
  • 100 g carrots;
  • 100 g onion;
  • 100 g yellow bell pepper;
  • 100 g tomatoes;
  • dill greens;
  • 1.3 liters of water;
  • salt;
  • ground black pepper;
  • vegetable oil.

Cooking time – 35 minutes.

Calorie content per 100 grams – 217 kcal.

Cooking steps:

  1. Wash and peel the potatoes, cut into cubes or strips. Place in a saucepan and add water, bring to a boil and cook over low heat or low power on an electric stove;
  2. Grind the onion and pepper into thin strips, chop the tomato into slices, chop the greens. Sauté in oil, gradually adding vegetables in the following order: onion, carrots, pepper, tomato;
  3. At the same time as the vegetables, add the wings and some of the greens to the soup, let simmer for 5 minutes, then season after sampling;
  4. Serve with fresh dill.

How to make chicken soup with rice

Ingredients:

  • 4 chicken wings;
  • 200 g potatoes;
  • 1.3 liters of water;
  • 70 g rice;
  • 100 g onion;
  • 100 g carrots;
  • curry;
  • salt;
  • ground black pepper;
  • vegetable oil (preferably olive oil);
  • any greens.

Cooking time – 35 minutes.

Calorie content per 100 grams – 144 kcal.

Cooking steps:

  1. Wash the wings, fry until golden brown over high heat with curry, place in a saucepan, add water, bring to a boil, skimming off the foam, and cook for about 15 minutes;
  2. Peel and chop the potatoes, rinse the rice (drain the water at least three times), add the potatoes to the broth first, and after 3-4 minutes add the rice;
  3. Prepare the remaining vegetables, chop finely, sauté in oil and add to the soup being prepared. Cook for about 10-15 minutes;
  4. The soup is served hot with chopped herbs. If you have time and desire, you can make bread croutons for this soup by drying pieces of bread in a frying pan with salt and curry; you can eat them as a snack or pour them into the soup.

  • 200 g loaf;
  • curry.

Cooking time – 45 minutes.

Cooking steps:

  1. Fry the wings in vegetable oil until golden brown, place in a saucepan and cook for about 10 minutes after boiling;
  2. Peel the vegetables, cut them, put them in the broth, remove the wings a third of an hour after the start of cooking. Salt and pepper the mixture;
  3. Cook for about 15 minutes, remove from heat and cool slightly, then puree in a blender;
  4. Cut the loaf into cubes and make crackers out of it, dry it in a frying pan without oil with curry salt, chop the greens;

The cooking process is simple

Let's begin the process of preparing this dish. Take the chicken wings and wash them thoroughly under running water. Some housewives cut the wings into several parts, but you can boil the whole wing, especially if it is small. Place the prepared raw materials in a saucepan and set to cook on the fire. At the beginning of cooking, the heat is quite strong, but after boiling it should be reduced and the soup should be simmered at a gentle simmer. As soon as the water boils, white foam appears on the surface, it must be periodically removed with a slotted spoon.

Before cooking, some cooks fry the wings in vegetable oil until golden brown, and then boil them in water. These wings have already undergone partial heat treatment, so they cook for just a short time - 10 or 20 minutes. They retain their shape well, do not become soggy during cooking, and have a beautiful, golden hue. So, we cook the fried chicken wings in water until tender, and at this time we deal with the vegetables.

Separately, peel the onions and carrots, wash them and cut them into small cubes, which we then fry in butter or vegetable oil until golden brown. We will use frying at the end of cooking, when the dish is ready. So, we made the frying and set it aside, while the wings were boiled in a pan. Chicken wing soup is prepared in several stages: the cooked wings are removed from it and rice or noodles are added to the broth, which continue to cook until tender.

From the boiled wings taken out of the soup, separate the flesh from the bones, chop it and place it in the finished soup, add the prepared fried carrots and onions, then add chopped herbs, ground pepper, bay leaf and other spices.

Tips from experienced chefs

Chicken wing soup is a fairly simple dish. It is prepared quickly and does not require any special skills, but small tricks will make cooking even easier and more interesting:

  1. If the soup is being cooked for children, then it is better to cook it with the so-called “second” broth. To do this, after boiling, you need to drain all the broth, rinse the meat and add a new portion of hot water, and then cook in the usual way;
  2. Since chicken wings provide a rather rich broth, it is not recommended to serve the soup with sour cream or other sauces based on milk and animal products;
  3. To add brightness to the soup, you need to add a wide variety of vegetables of all colors to it: carrots, onions, herbs, tomatoes, peppers and others. Garlic arrows go well with tomatoes - they can also be sautéed in a frying pan or immediately added to the dish being prepared;
  4. You need to add very little vegetable oil to the frying pan for sautéing, so as not to add even more fat to the finished dish;
  5. Chicken goes well with curry, so this seasoning can be safely added to soup. Also, a mixture of dried oregano, basil and ground black pepper will make the soup sparkle with bright colors;
  6. Homemade white bread croutons are a great addition to any chicken soup. They can be sprinkled directly onto a plate or placed into individual cups instead of bread;
  7. Olive oil will make the soup taste brighter, which is very important since chicken meat does not have a pronounced taste;
  8. It is better to cut the potatoes finely enough so as not to increase the cooking time and spoil the dish, because when reheated they become hard;
  9. Chicken broth and boiled eggs are a great combination. You can complement the noodle soup, thereby also decorating it, with an egg cut into two halves;
  10. If the soup is made from smoked chicken wings, season it before turning it off to avoid adding too much seasoning.

Whatever recipe you choose for soup with chicken wings, it will definitely turn out healthy and rich, you just need to put in a little effort and apply these little secrets.

Classic recipe

The basic recipe for flavorful chicken wing soup is as follows.

Ingredients:

  • Chicken wings:
  • carrot;
  • onion;
  • vegetable oil;
  • rice or other cereals;
  • potato.

Cooking method:

  1. The main raw materials are washed well and divided into parts (can be left whole). It is recommended to fry the meat a little before placing it in boiling water. This way it will cook faster, won’t fall apart, and the broth will acquire an appetizing hue;
  2. The foam that appears must be constantly skimmed off, and the workpiece itself must be cooked until cooked;
  3. While there is time, you need to prepare the vegetables. Carrots and onions are cut into beautiful cubes and sauteed in vegetable or butter (depending on the desired degree of dietary content of the final dish);
  4. The meat is removed from the broth, rice or other cereals are placed in it, you can get by with just potatoes, chopped into cubes or strips;
