Recipe: Chopped chicken breast cutlets - with dill and without eggs

The great thing about these cutlets is that the ingredients are cut into small cubes - there is no need to grind anything.
Very convenient and fast. Wash the chicken and dry it with a towel. Cut the chicken fillet into small cubes. Chop the peeled onions.

We also finely chop the dill.

Mix all the chopped ingredients (chicken fillet, onions, dill) in a deep plate, add kefir (mayonnaise), stir, then add 3 tablespoons of starch.

Mix everything well and leave for 20 minutes so that the starch swells and removes excess liquid. You should get a fairly thick “minced meat”; if it’s a bit runny, add more starch.

There is no need to sculpt such cutlets; place them by the tablespoon on a frying pan heated and greased with vegetable oil and fry on both sides. I fry over low heat so that everything is steamed and not overly fried. When frying chopped chicken cutlets, do not cover the frying pan with a lid, otherwise the cutlets will fall apart into chopped cubes.

This is approximately how many cutlets you get from two large fillets. Very tasty hot or cold. Served with mashed potatoes, vegetables, rice, pasta or just bread.

How to cook Chopped Cutlets

First of all, we thoroughly wash the fillet under running water, dry it on paper napkins, and then finely chop it.

In a bowl with chopped meat, break the egg and add starch, mix everything.

Now add three tablespoons of mayonnaise and mix the minced meat again.

Next, chopped onions, garlic and herbs are added to the bowl. Salt and pepper everything, mix all ingredients thoroughly until smooth. Now put the resulting mass in the refrigerator for about an hour.

Wash and dry the chicken fillet on a paper towel, then chop it as finely as possible.

  3. Place the fried cutlets in a deep pan, alternating them with vegetables. The topmost layer is eggplant and pepper.
  4. Pour water diluted with tomato sauce. We wait for it to boil. Then simmer covered over low heat for about half an hour.
  5. After 25 minutes, add the greens and garlic passed through a press.

Tip: to prevent eggplant from becoming bitter, it is recommended to pre-soak it, chopped, in well-salted water. How long to keep? 15 minutes is enough.

A hot meat dish, complemented with sauce, will not only acquire an attractive gastronomic appearance, but will also be enriched with healthy vitamins that the generous autumn gives us.
