Recipe:
- Cooking cutlets. To do this, you need to peel the vegetables and pass them through a meat grinder twice along with the beef. Add starch, semolina, cream, salt and necessary spices to the resulting mixture.
- Mix everything thoroughly and divide the resulting minced meat into 12 lumps of the same size.
- Fry in a frying pan until half cooked.
- Now let's do the dough. Add yeast and sugar (a teaspoon) to the water. Let stand until a small foam cap forms (the time will be 7-10 minutes).
- Mix the curdled milk with egg white, salt, vegetable oil and the remaining amount of sugar, add the appropriate yeast, then add flour in small parts. Knead the dough.
- Leave it for 1 hour in a warm place to rise. If there is no warm place in the house, you can place the dough in a saucepan or other container with a lid and place it in a bowl of warm water.
- When the dough has risen, knead it lightly and divide the dough into 12 equal parts.
- Form each piece of dough into a rectangle (you can make a traditional circle) and wrap the cutlet in it. Leave for another 20 minutes so that the dough rises a little.
- Now our pies need to be coated - to do this, mix the yolk, sugar and milk in a bowl. Brush the tops of the pies with this mixture. Bake in an oven preheated to 200 degrees for 20-25 minutes.

Instructions on how to cook:
- Add finely chopped onion, pre-chopped garlic, salt and seasonings to the minced meat. Mix everything well and beat lightly (take small pieces of minced meat with your hands and throw them back into the bowl. Alternatively, just lightly beat the minced meat with your hands). This way it will be juicier and its texture more uniform.
- Roll out the puff pastry (approximately 3 mm thick) and cut into strips 5-6 mm thick. The knife should be sharp enough so that the dough does not drag behind the knife.
- Divide the minced meat into pieces (you should get 15-16 pieces), form them into balls. Each ball needs to be rolled in flour.
- Wrap each meat ball with prepared strips of dough - 2 strips of dough per cutlet.
- Cover the sheet with special baking paper and place the cutlets. Add egg yolk to milk (take 1 tablespoon), mix well until smooth and use a silicone brush to brush the cutlets with this mixture.
