Ingredients

  • chicken fillet – 0.18 kg;
  • beef – 0.25 kg;
  • eggs – 2 pcs.;
  • garlic cloves – 2 pcs.;
  • semolina – 70 g;
  • pepper mixture – 4 g;
  • onion – 1 head;
  • table salt - to taste;
  • refined oil – 65-70 ml;
  • parsley, basil - 5 sprigs;
  • milk (2.5%) – 0.23 l;
  • wheat flour – 400-500 g;
  • granular yeast (fast-acting) – 12 g;
  • granulated sugar – 8 g;
  • creamy margarine – 45 g.

Step-by-step preparation

  1. Rinse chicken, beef and pork well, dry with a cloth, cut into medium cubes. Place the meat pieces in a food processor and pulse.
  2. Peel the onion and garlic, rinse them with water, and chop them into small slices. Grind the vegetables using a blender and combine with the meat mixture.

  3. Wash the basil and parsley, cut into small pieces, and add to the mince.
  4. Add salt, season with pepper mixture, add one egg. Then add semolina and mix thoroughly. Let the finished minced meat brew in a sealed container for about a quarter of an hour. During this time, the cereal will swell and make the meat mixture fluffy and strong.

  5. Form rectangular meatballs from the minced meat, roll them thoroughly in flour and place in a hot frying pan with oil. Fry the cutlets for five minutes on each side until yellow-orange. Then transfer to a separate plate and cool.

  6. Now you should prepare the dough. To do this, add sugar to the warmed milk, add a teaspoon of salt, and add melted margarine. Then beat in the second egg and stir.
  7. Combine flour with dry yeast and gradually add to milk solution. After this, knead the elastic dough and leave it in a warm room for 20-30 minutes (so that it increases in volume).

  8. Place the wheat mass on a table sprinkled with flour and knead thoroughly until it stops sticking to your palms. Give the finished product a spherical shape and leave it to “rest” for another 10 minutes.
  9. Now divide the yeast base into ten pieces, then roll them into thin flat cakes with a diameter of 11-12 cm. Place the fried balls on the dough circles and turn the pieces into small rolls. You need to wrap it very carefully so that each cutlet in the dough is well covered with a delicate shell and pleases the eye with its appearance.

  10. Place the products in a saucepan with boiling oil and cook for 3-4 minutes until their bottom and sides turn brown. Then turn the meatballs over and brown on the other side until an appetizing crust forms.

Tip: wheat flour must be sifted 3-4 times before use. Then it will be enriched with oxygen, make the dough rise faster, and give it softness and airiness.

Arrange the aromatic, crispy products on a serving platter and place them on the table warm. It is advisable to offer them hot meat broth, sour cream sauce or a mug of strong sweet tea. Bon appetit!

Useful tips for the housewife

In order for the finished cutlets in the dough to turn out juicy and fluffy, during their preparation you need to follow a few simple rules , which are almost truisms in cooking.

  1. To prepare a straight dough, you should take dry baker's yeast, which is ideal here.
  2. Dry yeast is always poured with warm milk - it should not be either cold or too hot.
  3. At the stage of kneading the minced meat, you need to beat it slightly - this way it will be much juicier.
  4. It is better if the cutlets are not very large and oblong in shape, so they will bake evenly. If you make the cutlets larger, the baked goods will turn out larger, and the dough may fall apart during baking. If semi-finished products are used for baking, they can be cut into 2 parts and shaped into the desired shape by hand.
  5. If the surface of the cutlet is brushed with beaten egg yolk before baking, the baked goods will acquire a glossy shine and a ruddy tint. You can dilute the yolk with plain water. But if you use an egg together with whites, the whites can cause unsightly streaks.
  6. By adding granulated sugar when baking, you will get a beautiful and rosy product, since it is this that gives the dough a golden hue. In this case, you need to strictly follow the recipe and add exactly as much sugar as prescribed in the recipe. If you add less sugar than required, the dough will have an unappetizing grayish tint.
  7. If there is dough left after cooking, do not rush to throw it away. You can wrap regular sausages or sausage slices in it. Or you can simply make fluffy buns with your favorite filling or donuts.
