After washing the chicken, cut it into pieces and fry in vegetable oil to form a golden brown crust (the heat should be high and fry for about 5 minutes). We also cut the eggplants into small pieces. 2. Boil a small amount of water in a saucepan and add the fried chicken pieces into it (the water should only half cover the chicken pieces). Covering the pan with a lid, simmer the chicken over low heat for about 10 minutes, then add the eggplants to it and simmer again under the closed lid. 3. At this time, prepare the vegetables: wash the onions and carrots and cut them into small cubes, then fry them in butter for about 5 minutes until the onions become transparent. Then we put the fried vegetables into the pan along with sour cream, and, after salting and peppering everything, simmer for about another 15 minutes. 4. While our sauce is stewing, cook the crumbly buckwheat porridge. 5. After frying the flour in a frying pan without oil until golden brown, pour it into the pan (we need this to obtain a thick sauce, however, if necessary, we can add a little water to it). 6. Wash the ginger and grate it on a fine grater, and together with the bay leaf, add it to the pan, then boil for about 5 more minutes. 7. Turn off the sauce, place it on plates along with buckwheat porridge, sprinkling each with chopped parsley. How to make chicken sauce velouté (French)?

In fact, the recipe above is just an adaptation of the classic French Velouté sauce. This version, unlike homemade chicken sauce, is not sweet at all, but otherwise the same ingredients are used. Velouté is often used for baking chicken legs and wings.
