History of the dish

The first pancakes were prepared in Ancient Egypt - then they were flat cakes based on sour milk, flour and olive oil. The dish was called tagenitas (frying pan) and was considered the basis for appetizers. Such flatbreads appeared long before the first loaf of bread and even after its appearance did not give up their leading position among flour products.

In Rus', pancakes appeared before Epiphany and were considered a sacrificial dish given to the gods. Also, a round pancake symbolized the sun, and they were used in pagan holidays of seeing off winter and welcoming spring.

Until the beginning of the 19th century, pancakes were an everyday dish and formed the basis of the diet, and with the advent of Maslenitsa, they became a symbol of the week before Lent, and eating them at other times of the year was considered a violation and an insult.

Cooking pancakes was a family tradition, a certain ritual, and family pancake recipes were passed down from parents to children for many generations. Wheat, rye, buckwheat, and oat flour were used for baking pancakes. The dough was infused with yeast, sour milk or fresh milk. Pancakes were served with fillings - both sweet and savory.

Important! It is customary to eat pancakes with your hands; cutting them with a knife is strictly forbidden. On Maslenitsa you should eat as many pancakes as possible so that good luck will follow you throughout the next year.

Classic recipe with cocoa and milk

Ingredients for making cocoa pancakes with milk:

  • wheat flour - 200 g;
  • milk 2.5% - 450 ml;
  • chicken eggs - 2 pcs.;
  • granulated white sugar - 2 tbsp. l.;
  • salt - a pinch;
  • cocoa - 1.5 tbsp. l.

The step-by-step preparation of pancakes with cocoa is as follows. Beat eggs together with milk, add sugar and salt. Add all the cocoa powder and then gradually add the flour. You may need less of it, since cocoa itself has a binding effect.

We taste for salt and sugar; the latter may require more than usual, again because of the powder - it will add a noticeable bitterness. The dough should turn out like regular pancake dough, with the consistency of liquid sour cream. Heat a little vegetable oil in a non-stick frying pan and start baking pancakes. We stack the finished ones and, if desired, coat them with butter or leave them like that. Serve pancakes with cocoa, garnishing them with strawberries and sprinkling with powdered sugar.

Pancakes with cocoa not only look beautiful, but are also very tasty.

If there is any doubt that the cocoa will dissolve properly, you should make the chocolate milk first. Heat 200 ml of milk to 80 ° C in the microwave or saucepan, and then add the required amount of cocoa. Whisk the mixture - cocoa powder dissolves very well in hot liquid - then add the remaining milk and prepare the dough as usual.

How to make chocolate pancakes with milk

Break the chicken egg into a bowl and beat it with a fork. You can use a mixer or blender, the main thing is that the mixture is homogeneous in structure.

Add granulated sugar and cocoa.

And if you have enough time and a bar of chocolate, then you can go the other way:

  1. take 60 g of chocolate (instead of sugar and cocoa);
  2. put it to heat in a water bath (place a small enamel bowl with chocolate pieces on a slightly larger saucepan with boiling water);
  3. add 70 g of butter (instead of vegetable oil in the dough);
  4. stir until the mass is homogeneous in consistency;
  5. then follow the recipe.

Add milk and pre-sifted flour. Mix well, again using the most convenient equipment: fork, whisk, mixer or blender.

Pour in warm water. Stir.

Add vegetable oil (you can use any oil here: flaxseed, olive or other). And again, do a little magic in the cup with a whisk.

Taking a special pancake frying pan, heat it over moderate heat. For the first time, you can lubricate it with a thin layer of vegetable oil. No more is needed, since the dough contains vegetable oil. Pour a portion of batter onto the surface of the hot frying pan. Flatten the dough by rocking the pan in a circular motion. This can be done with a special wooden stick with a handle mounted perpendicular to it.

Then wait for the dough to set on top. This is a sure sign that the lower part is already baked. Turn the pancake over and bake for another half a minute. Then remove the first finished pancake, and pour another portion of pancake batter into the frying pan. Bake the chocolate pancakes with milk until all the batter is used up.

One option for serving chocolate pancakes with milk and cocoa is to wrap them in soft, sweet curd cheese or grainy cottage cheese mixed with sour cream.

Or you can layer the pancakes with this filling and place one on top of the other - you get a whole pancake chocolate cake with curd filling! This is a very good way to highlight the contrast of chocolate and white.

You can also use it as a filling or decoration:

  • berry or fruit jam (jam, jam);
  • sweetened condensed milk.

Not all dishes are universal: some are suitable for winter, some are purely summer; others are for the morning, and there are also exclusively evening dishes. But pancakes are good for all occasions, and I highly recommend making amazing chocolate pancakes - a recipe made from cocoa.

Make them and make sure that they are incredibly tasty and will bring pleasure both at the beginning of the day and on a calm, quiet evening.

Grease each pancake with a piece of butter.

Pancake cake is not a dietary dish, it is quite high in calories

Cooking process:

All ingredients are mixed in one container: cold milk, vegetable oil, water and a pinch of salt.

Granulated sugar and raw eggs are added. Mix everything with a whisk.

Cocoa powder and flour are sifted and mixed in a separate cup. Gradually add to the liquid ingredients and knead the pancake dough.

It’s best to add coconut flakes last. There should be no lumps in the dough, so mix the ingredients thoroughly before adding cocoa. This can be done in a blender or mixer; many housewives do this manually using a regular whisk. The dough for chocolate pancakes is ready, let it stand for 15-20 minutes to allow the gluten to swell.

Once the pan is hot, start pouring it into the hot pan. Do not use a lot of vegetable oil to lubricate dishes. It is best to use a non-stick frying pan, but if you don’t have a special one at hand, you can grease the pan with a small amount of oil using a silicone brush.

Fry the chocolate pancakes on both sides and place on a plate. They can be stacked or immediately rolled into rolls. To do this, the pancake is folded in half and then rolled into a tube.

You can also make triangles out of chocolate pancakes by folding them in half twice. There are other ways to beautifully serve pancakes to the table. If desired, you can use sweet sauces to coat the rolls, it will look like a filling. Or just serve rolls - pancakes with honey.

Of course, eating pancakes every day (and not just for breakfast) is fraught with weight gain. Pancakes have a high glycemic index (50-70%), that is, glucose from them is absorbed at a high speed, which is harmful for diabetics, and healthy people should eat them in moderation.

They are literally stuffed with fat, because the cooking process uses fatty foods - at least butter and milk. However, eggs, a small amount of milk, wheat and barley flour, and vegetable oil contain many benefits for the body. In this case, fruits, dried fruits, natural jams, minced chicken, cheese, etc. are suitable as fillings. And there is nothing wrong with making pancakes sometimes for breakfast or for Maslenitsa.

  3. Break up all the lumps and clots, dilute the mixture with kefir and start frying the pancakes.

Tips from the chef

Chocolate pancakes are the perfect homemade cake for those with a sweet tooth who are delighted with the chocolate taste. Very often, culinary beginners encounter many problems at the dough preparation stage. Practical advice from the chef will help you avoid incidents and “misses”.

Dry ingredients must be passed through a sieve. And in some cases you need to do this twice in a row. What will it give? Firstly, there will be no lumps in the dough, and secondly, the texture of the dough will be more airy, which will allow you to get thin pancakes.

Milk. You should purchase a dairy product with a fat content of at least 3%. Ideally, pancakes are cooked in a dry frying pan. And so that the baked goods do not end up dry, the presence of fats is mandatory.

Adding baking powder. Baking powder allows you to create a pancake with “pimples”. But as experts say, pancakes with added baking powder are not “suitable” for consumption the next day. They literally become stale and tasteless. Baking powder can be replaced with soda.

Chocolate pancakes go well not only with tea and coffee, but also with soft drinks. Children also love such baked goods. Delight your household with original pancakes, and don’t forget to wrap them with some filling!
