Turkey Satsivi
Traditional Georgian dish. At the festive table, Georgians eat it first.

  • Turkey fillet 0.5 kg
  • Walnuts 200 g
  • Water 700 ml
  • Green onions
  • Adjika 1 tsp.
  • Garlic 3 cloves
  • Salt, hot spices to taste

Cut the turkey into pieces. Place in a saucepan with cold water. Add green onions and finely grated garlic. Turn on the stove, bring the broth to a boil and cook for 20 minutes.

Remove the meat from the broth, cool it slightly, rub with salt and transfer to a baking dish. Bake in an oven preheated to 190 degrees for about half an hour until the meat is browned.

Cool the broth and strain. Grind the walnuts in a blender, add spices and spicy adjika to them, mix with the broth. Pour it over the turkey and put the finished dish in a cold place for 10 hours. Serve cold.
