If your family loves liver, then a dish like liver cake will be an excellent decoration for the holiday table. It is quite nutritious, so it is enough for a large company. The most profitable option is pork liver: it is inexpensive, accessible, and also very healthy.
Delicate pork liver cake with sour cream
Tender pork liver cake with sour cream is a light, airy and very nutritious snack. Made with layers of liver pancakes with a luscious filling, it's sure to please everyone!

- Eggs – 3 pcs.
- Pork liver – 700 gr.
- Vegetable oil – 80 gr.
- Onion – 3 pcs.
- Cream – 125 ml.
- Flour – 6 tbsp.
- Carrots – 4 pcs.
- Greens - to taste
- Sour cream – 150 gr.
- Garlic – 3 pcs.
- Ground pepper - tsp.
Cooking process:
- We remove the film and white veins from the liver. Cut into squares and grind through a meat grinder or blender.
- Pour in half a glass of cream.
- Break the eggs and add pepper and salt. Beat the mixture with a fork.
- Add flour and knead liver dough.
- To prevent the pancakes from burning, add 3 tbsp. vegetable oil.
- Remove the skins from the onion and cut into cubes. Peel the carrots and grate them on a coarse grater.
- Fry the onions and carrots in a frying pan until lightly browned.
- Mix the roast with 3 tbsp. spoons of sour cream.
- Cut the garlic cloves into small pieces and mix them with the roast.
- We also finely chop the greens.
- Now pour some of the pancake batter onto a separate greased frying pan. There is no need to fry for a long time, about 2 minutes. on each side of the liver pancake so that it is well cooked inside.
- All dough must be fried in this way.
- Then we make a layer cake. Place one pancake on a plate and spread vegetable frying with sour cream on top. Sprinkle the layer with herbs and cover with the next pancake. We also grease it and sprinkle with herbs. We do this with all pancakes.
- Coat the last layer well with sour cream, also grease the sides and sprinkle everything generously with herbs.
- We send our cake to brew and soak in the refrigerator.

- Flour – 100 gr.
- Pork liver – 500 gr.
- Milk – 250 ml.
- Salt – 1 tsp.
- Egg – 2 pcs.
- Baking powder – 2 pcs.
- Mayonnaise – 100 gr.
- Onion – 2 pcs.
- Carrots – 2 pcs.
- Garlic – 2 pcs.
- Salt – 1 tsp.
- Ground pepper – 1 tsp.

Cooking process:
- We wash the liver and cut it into small pieces to put them in a blender and chop them.
- Beat in the eggs, stir the mixture and pour in the milk.
- Mix the flour together with the baking powder, add the mixture to the liver mass and mix everything well.
- Now let's start frying the liver pancakes. Heat the frying pan, wipe it with vegetable oil and pour in the dough so that there is enough for the entire diameter of the frying pan.
- This amount of dough will make 10-13 pancakes. Fry each until slightly browned.
- Peel the onion. And cut into small pieces for frying.
- Peel the carrots, grate them coarsely and mix with onions and salt. We send the vegetables to fry until light golden.
- Season the roasted vegetables with mayonnaise, season and add salt to taste, if necessary.
- Place the pancake on a plate and grease it with a mixture of mayonnaise and vegetables. Then lay out the next pancake and cover it with the filling again. Repeat this for all layers. Decorate the last layer with grated processed cheese and finely chopped herbs.

- 500 gr. — liver (any);
- 0.5 tbsp. - flour;
- 1 tsp. - salt;
- 5 - 7 pcs. - onion;
- 0.5 tsp. - mixtures of peppers;
- 1 - 2 pcs. - carrots;
- 2 pcs. - chicken egg;
- If necessary - mayonnaise;
- 1/3 tsp. - baking soda;
- As needed - sunflower oil;
- 100 gr. - starch.
- First you need to twist the liver through a meat grinder and place it in a bowl in which the rest of the ingredients will be mixed.
- Pour flour and starch into the liver and mix well to prevent lumps from appearing.
- Beat the eggs into a bowl and mix everything well.
- Then season with salt and pepper mixture and add baking soda. Mix everything until smooth.
- Then, on a well-heated frying pan, pre-watered with sunflower oil, you need to place and spread well a few tablespoons of the prepared liver. The diameter of the pan determines the size of the cake.
- When the first side is fried, the cake needs to be turned over. Fry the entire liver in this way, making 5-7 cakes.
- While the liver pancakes are being fried, you need to prepare the layer. It includes well-sautéed carrots and onions. To do this, you need to peel and grate the carrots, place them in a frying pan with sunflower oil and put them on the stove. Meanwhile, peel all the onions and chop them into small pieces, then pour them into the pan with the carrots.
- After the components of the cake are ready, you can start folding it. To do this, you first need to take a plate on which everything will be laid out; it should be slightly larger in diameter than the liver cakes. Then spread the first pancake with mayonnaise.

Thanks to the milk, there will be no bloody taste, bitterness or foreign odors in the offal. 3. The liver of a young animal is red-burgundy in color; if the color of the liver is very dark, it is old and may be tough. In this case, after soaking it in milk, sprinkle it with a small amount of baking soda and leave for 15 minutes. Then rinse well under running water. Adding baking soda will soften the old liver.

- Champignons – 400 gr.
- Onion – 2 pcs.
- Carrots – 2 pcs.
- Mayonnaise - 100 gr.
- Processed cheese – 100 gr.

Cooking process:
- Wash the pork liver under running water. Cut into pieces so that they can be easily twisted in a meat grinder. Peel the onion and cut into 4 parts. Place the pieces of liver and onion into a meat grinder and chop. Add 2 eggs to them, stir in milk. Salt and pepper. Mix thoroughly.
- From the prepared mixture we bake large pancakes, filling the entire pan. Fry them on each side.
- Peel the onions and carrots and chop them with a grater or knife. We fry it in a frying pan. When the mixture turns golden, add mushrooms to it. The champignons must first be cut into 2-4 parts. Add spices and mix.
- Place mayonnaise in a deep container. Wash and chop the greens. Pass the garlic through a press or finely chop it on a cutting board. Mix all the ingredients.
- Grate the cheese.
- Boil and chop 2 eggs.
- Place one pancake on a plate and coat it with mayonnaise mixture, and spread the mushroom mixture on top. We also coat the next pancake with mushroom and mayonnaise filling. And the third one is laid out with cheese and then greased with mayonnaise mixture. Thus, 2 through 1 we lubricate all layers.
- Spread the last layer with garlic-mayonnaise filling and sprinkle with egg crumbs.

- Roughly chop a couple of large onions and saute them until transparent.
- Roughly chop 500-600 g of mushrooms, add to the onion and fry until tender. Please note that wild mushrooms must first be boiled.
- At the very end, squeeze 2-3 cloves of garlic through a press.
- Cool and grind with a blender.
- Add mayonnaise or sour cream, salt and pepper to taste, mix.
If you alternate mushroom and vegetable fillings, you will need half as many ingredients.
Vegetable filling with mushrooms
- Fry two chopped onions and two or three grated carrots.
- Finely chop 250-300 g of peeled champignons or boiled wild mushrooms.
- Add mushrooms to vegetables and cook until done.

- First option: grate two cheeses and mix with the vegetable part.

- We wash the pork liver with water and remove the film and white streaks. We divide the liver into several pieces to make it easier to grind it in a blender (you can use a meat grinder).
- Add sour cream to the bowl with minced liver, then beat in the eggs, add semolina and add salt and pepper to taste (0.5 tsp will be enough). Mix all the ingredients.
- Peel the onions and carrots, chop them (the carrots can be grated, or also chopped in a blender). Fry the vegetables until lightly browned.
- Cut the mushrooms into 2-3 parts and fry for 15-20 minutes.
- Take a baking dish and line the bottom with special paper. Pour in 1/3 of the liver dough. Place mushrooms on top in an even layer. Then again half the remaining dough. We spread the roasted vegetables. And fill in the last layer of dough.
- Place the mold in the oven for 30-40 minutes.
- We take out the cake. Cut the tomatoes into thin slices, place them on the top of the cake, sprinkle it with grated cheese and herbs.
