    But even I was surprised by the very tasty and simple appetizer that my friend prepares from liver. Today I will share with you a simple way of how to prepare the most ordinary liver cake from beef liver, and so that everything works out even for novice housewives, the recipe will be step-by-step.

    How to make liver cake

    1. Liver, 1 onion and garlic through a meat grinder. 2. Beat in two raw eggs. Mix.

    Liver cake made from pork liver with milk is an appetizing, satisfying and original dish. Pork liver contains an incredible amount of vitamins, minerals and proteins. This is a great dish to have a good meal and really enjoy your lunch!

    Ingredients:

    • Pork liver – 800 gr.
    • Milk – 400 ml.
    • Chicken eggs – 3 pcs.
    • Flour – 100 gr.
    • Salt - to your taste
    • Mayonnaise – 100 gr.
    • Carrots – 2 pcs.
    • Onion – 2 pcs.
    • Processed cheese – 1 pc.
    • Greens – 1 bunch

    Cooking process:

    Tip: Place the cream cheese in the freezer before cooking.

    1. Wash the liver and cut into small pieces. Pour a glass of milk into a deep bowl and soak the liver in it so that the cake does not become bitter. You need to leave the liver for 4-6 hours.
    2. Place the soaked liver pieces into a blender or grind through a meat grinder.
    3. Pour 150 ml into the resulting mass. milk, add eggs and mix.

    • beef liver – 1 kg;
    • milk – 200-250 ml;
    • eggs – 2 pcs.;
    • flour or semolina - 100 g (possibly more if the dough is too liquid or less if too thick);
    • onions – 4 medium-sized heads;
    • mayonnaise - for coating;
    • vegetable oil - for frying;
    • greens (parsley and dill), salt - to taste.

    Cut the liver into arbitrary pieces and soak in milk for half an hour. Then pass the product through a meat grinder. Pour the milk in which the product was soaked into a bowl with chopped liver, add eggs and flour, and add salt. Mix the mixture thoroughly to obtain a substance similar in thickness to pancake batter. When everything is ready, you can start baking pancakes. For this, it’s better to take a pancake frying pan, but if you don’t have one, then a regular one will do. You need to turn the pancakes over very carefully, as they turn out to be quite soft. Frying time for pancakes is approximately 1 minute on each side. When the “cakes” are ready, you can start preparing the filling. To do this, fry the onion in vegetable oil until golden brown, then mix with finely chopped herbs and a sufficient amount of mayonnaise. The liver cake must be assembled in the same way as similar confectionery products. The liver pancake is coated with the prepared “cream”, the next cake is placed on it and also coated with the mayonnaise-onion mixture. The top of the cake also needs to be coated and, if desired, decorated. The appetizer should be allowed to stand in a cool place for a couple of hours so that the layers are thoroughly soaked.

    The classic liver cake will turn out even tastier if you add carrots to the filling. The cooking technology remains the same as in the previous recipe. The only difference is that the onions are not fried in splendid isolation, but together with finely chopped carrots. For the specified amount of products you need to take 2 medium root vegetables.

    How to make beef liver cake if you only have a very small piece? Don't worry: you can mix beef and chicken liver and the cake will turn out very tender. The fact is that chicken liver is more “airy” and gives the cake the necessary porosity. The filling will be absorbed faster, and the cake will be even tastier.

    If you soak the liver in milk, the bitterness and specific liver flavor will go away.

    We twist the beef liver in the same way, but add chicken liver, and then onions to it. Already at the stage of preparing the minced meat, you can add a clove of garlic and a loaf of bread soaked in milk (but then you should not add flour!).

    You can choose the most simple filling - mayonnaise mixed with herbs, garlic, and thick Greek yogurt. Believe me, there is no need to be fancy with this recipe: the cake will turn out delicious!

    You can make the filling for liver cake with a variety of fillings. An excellent appetizer is obtained if you add mushrooms and cheese to the “cream”. To make this liver cake you will need:

    • beef liver – 1 kg;
    • flour or semolina – 300 g;
    • milk – 200 ml;
    • eggs – 4 pcs.;
    • onions – 4 medium-sized heads;
    • carrots – 4 root vegetables;
    • champignons – 500 g;
    • cheese – 100 g;
    • garlic – 3-4 cloves;
    • mayonnaise - for filling;
    • vegetable oil - for heat treatment;
    • salt, pepper - to taste.

    Preparing a liver cake begins with baking the cake layers. Grind the liver using a meat grinder, pour in milk, add eggs and flour, pepper and salt. Shake the dough, a la pancake dough. Bake pancakes. For the filling, grate the carrots on the finest grater, chop the onions and mushrooms as finely as possible. These three products must be fried in vegetable oil: onions and carrots separately, mushrooms separately and placed, respectively, in different bowls. Grind the cheese on a fine grater, crush the garlic in a crush and mix both products with mayonnaise.

    Liver cake can be made not only with hard cheese, but also with its processed counterparts. For this snack you need to buy:

    • beef liver – 1 kg;
    • sour cream – 4 tablespoons;
    • eggs – 4 pcs. for dough and 4 pcs. For filling;
    • flour or semolina – 200-250 g;
    • onions – 4 medium-sized heads;
    • processed cheese – 200 g;
    • garlic – 5-6 cloves;
    • mayonnaise - for spreading, approximately 300-350 g;
    • salt, pepper - to taste;
    • vegetable oil - for frying.

    Cut the onion and liver into small pieces and place in a meat grinder together. Add salt, sour cream, flour and eggs to the bowl with minced meat, and if desired, pepper. Shake the dough and bake several cakes in a frying pan. Separately, grate boiled eggs and processed cheese on a coarse grater, which should first be kept in the freezer for 15-20 minutes. Finely chop the onion and fry in a frying pan until a pleasant golden hue, then remove from the frying pan into a bowl with grated eggs. Mix the mixture well. Crush the garlic cloves and mix with mayonnaise.

    Assembling the snack is carried out by alternating the prepared filling: • crust, garlic sauce, processed cheese, crust, garlic sauce, onions with eggs, etc. Place the finished liver cake in a cool place for 2-2.5 hours, then serve it to guests or household members for consumption.

    • milk – 250 ml;

    • baking powder – 1/2 teaspoon;
    • onions – 2 medium-sized heads;
    • tomatoes – 2 pcs.;
    • eggplants – 2 pcs.;
    • processed cheese – 200 g;
    • garlic – 4 cloves;
    • mayonnaise - for coating;
    • salt, pepper - to taste;

    Cut the liver and onion into convenient pieces and grind in a meat grinder. Add salt, baking powder, flour, eggs, milk and a little vegetable oil (a tablespoon is enough) to a bowl with minced meat. The resulting dough should have a consistency similar to sour cream. If this state is achieved, you can start baking liver pancakes. Bake whole eggplants in the oven (about 30 minutes at 180°C). When they have cooled a little, peel off the skin and chop. The main thing is to take into account all the subtleties in preparation! Absolutely everyone will like this appetizer and will quickly disappear from their plates!

    Ingredients:

    • Flour – 100 gr.
    • Pork liver – 500 gr.
    • Milk – 250 ml.
    • Salt – 1 tsp.
    • Egg – 2 pcs.
    • Baking powder – 2 pcs.
    • Mayonnaise – 100 gr.
    • Onion – 2 pcs.
    • Carrots – 2 pcs.
    • Garlic – 2 pcs.
    • Salt – 1 tsp.
    • Ground pepper – 1 tsp.
    • Vegetable oil – 3 tbsp.
    • Processed cheese – 1 pc.
    • Greens (dill, onion) – bunch

    Cooking process:

    1. We wash the liver and cut it into small pieces to put them in a blender and chop them.
    2. Beat in the eggs, stir the mixture and pour in the milk.
    3. Mix the flour together with the baking powder, add the mixture to the liver mass and mix everything well.
    4. Now let's start frying the liver pancakes. Heat the frying pan, wipe it with vegetable oil and pour in the dough so that there is enough for the entire diameter of the frying pan.
    5. This amount of dough will make 10-13 pancakes. Fry each until slightly browned.
    6. Peel the onion. And cut into small pieces for frying.
    7. Peel the carrots, grate them coarsely and mix with onions and salt. We send the vegetables to fry until light golden.
    8. Season the roasted vegetables with mayonnaise, season and add salt to taste, if necessary.

    The difference between this liver cake and previous recipes is the curd cream filling. In addition, it can be prepared not only from beef liver. A wonderful dish will turn out if you use chicken liver as the main ingredient. This appetizer will surely surprise both guests and family members. To make this liver cake a success, you need to purchase the following from your nearest store:

    • beef or chicken liver – 500 g;
    • sour cream – 100-150 g;
    • eggs – 1 pc.;
    • flour or semolina – 100 g;
    • onion – 1 small head;
    • cottage cheese – 400 g;
    • zucchini – 1 pc.;
    • carrots - 2 root vegetables;
    • garlic – 5 cloves;
    • mayonnaise – 100 g;
    • tomatoes – 1 pc.;
    • salt, pepper - to taste;
    • vegetable oil - for frying.

    Grind the liver in a meat grinder, add the egg and spices to the minced meat, mix well. Pour sour cream into the future dough and mix again.     Beef liver cake with pickled cucumbers

    When preparing a liver cake, many housewives have a problem with baking pancake cakes. They don’t want to turn over, they crumple, break or simply burn. This is actually not a problem:

    1. firstly, you need to fry such pancakes in a very hot frying pan (preferably in a pancake pan);
    2. secondly, you can add a little vegetable oil to the dough;
    3. thirdly, you can do without large pancakes altogether by making a cake from small pancakes.

    This is exactly how the appetizer is made in this recipe. And you need to prepare the following ingredients for it:

    • beef liver – 500 g;
    • milk – 500 ml;
    • eggs – 3 pcs.;
    • flour or semolina – 160-200 g;
    • baking powder - teaspoon;
    • onions – 2 medium-sized heads;
    • pickled cucumber – 1 pc.;
    • mushrooms – 150-200 g;
    • cheese – 150-200 g;
    • garlic – 2 cloves;
    • mayonnaise plus sour cream – 200 g in total;
    • salt, pepper - to taste;
    • vegetable oil - for frying.

    Pass the liver and one onion together through a chopping device (meat grinder or blender). Add the remaining ingredients for the dough to the resulting mass: flour, milk, eggs, salt, baking powder, vegetable oil (a tablespoon). Knead the dough and bake pancakes from it. Finely chop the second onion and mushrooms with a knife and fry until tender. Grate the cheese and cucumber separately and into different dishes. It is better to use the smallest grater. For the sauce, mix mayonnaise with sour cream, spices and garlic crushed in a crush. Now you can start assembling the cake.     • two eggs;
    • half a glass of kefir or sour cream;
    • 100 g butter;
    • a couple of spoons of breadcrumbs;
    • 300 g of mushrooms (champignons are suitable);
    • two carrots;
    • 2-3 medium onions;
    • salt and pepper to taste.

    Chop and fry the onion. Grate the carrots and place in the same pan. Add chopped mushrooms here and fry until all the liquid evaporates. At this time, grind the liver into minced meat, add eggs, kefir/sour cream, spices and crackers.

    Find a suitable baking dish, line the bottom with foil and add the first layer of minced meat. Fry on top and then mince again. There should be a liver layer on top, over which you need to wrap the foil, but do not close it too tightly.

    Place the cake in the oven preheated to 210 degrees. To make the delicacy tender and airy, you can leave a container of water in the oven, which will evaporate. The cake will cook for 35-40 minutes, after which it needs to be cooled and left in the refrigerator overnight.

    Bird liver cake with omelette

    This is one of the few liver cake options that can be consumed immediately after assembly. The snack without any impregnation turns out juicy and, of course, very tasty. That is why this liver cake is perfect for a family breakfast on a weekend. The following products are needed for this dish:

    • chicken liver – 500 g;
    • milk – 150-200 ml;
    • eggs – 4 pcs.;
    • flour or semolina - 100-150 g (possibly more if the dough is too liquid or less if too thick);
    • onion – 1 small head;
    • tomato – 1 pc.;
    • mayonnaise – 200 g;
    • vegetable oil - for frying;
    • salt, herbs and spices - to taste.

    The beginning of preparing liver cake according to this recipe is standard: pass the liver and onions through a meat grinder, add flour to them, break an egg (1 pc.), pour in milk (a third of the specified amount), salt and add spices. Mix the dough as for pancakes and bake pancakes for the liver cake. Break the remaining eggs into a separate bowl, pour in the milk, lightly add salt and beat with a mixer. Fry an omelette. By the way, in this case you need to fry it on both sides. Simply cut the tomatoes into thin slices. The liver cake is assembled in the following sequence: pancake coated with mayonnaise, pieces of omelette, mayonnaise spread, tomato slices, the next pancake. Simply grease the last “cake” with mayonnaise and decorate with herbs. The liver cake can be immediately sent to family members for testing.

    With mushrooms

    Some craftswomen know how to create real culinary masterpieces by laying layers of several types of fillings. One of the most popular is mushroom. Mushrooms and liver combine perfectly, complementing each other, emphasizing the natural taste. Making a cake is not difficult. And the first thing to do is fry the liver cakes. All that remains is to assemble the cake in the following sequence:

    1. On the first pancake we place champignons fried in a frying pan with onions.
    2. Coat with sauce made from mayonnaise, garlic, finely chopped dill.
    3. Repeat the second mushroom layer.
    4. The third layer is grated cheese (it is better to take the Dutch variety).
    5. The fourth is mushroom.
    6. Cover the fifth one again with grated cheese and decorate with herbs.

    The cake will be much tastier if you find steamed rather than frozen liver; it will give a delicate sweetish taste, which distinguishes fresh offal prepared according to the rules.

    If you have more layers, continue alternating cheese and mushroom layers until the cakes are finished. The cake should be allowed to soak for at least several hours, and in order for the filling to be better absorbed, coat the cakes warm: this will make the dish much juicier.
