I have often wondered where they come from? It seems like you conscientiously look out for every green thing, and after a couple of days you discover a “surprise”. Moreover, the last cucumbers are often frustrating, yellowed, bitter and twisted. Previously, I simply sent them for seeds, but now I’m starting to select options for preparations. An incredibly appetizing salad is made from overripe vegetables, marinated in their own juice, seasoned with spices that give the delicacy a piquant touch.

  • head of garlic;
  • fresh parsley;
  • 150 ml of odorless oil and 9% acid;

Cooking method:

1. Cut the washed fruits into small slices and place them in a large container.

2. Peel the onion, chop it into thin half rings and add to the cucumbers.

Cooking method:

1. Wash the freshly picked cucumbers and immediately start cutting them into small cubes. But if the fruits were collected more than a day ago, they should be washed well and soaked in cold water for 3 hours before use. Place the chopped pieces into a wide container.

2. In a separate cup, pass the garlic cloves through a garlic press, mix with sugar, mustard, black pepper and salt. Then pour in the oil and vinegar and mix the mixture again.

3. Pour the marinade over the vegetables and mix well.

4. Chop the greens and young dill umbrellas, which will give the delicacy an incredible aroma, add to the vegetables, mix the ingredients, cover with a towel and leave at room temperature for a couple of hours. Don’t forget to go to the salad once every half hour and mix it.

You can also not put the appetizer in glass containers, but boil it in a saucepan, and only after that spread it out and roll it up. But in this case, the taste of vegetables will not be as refreshing as after sterilization.

Wash the cucumbers and add to the marinade. As soon as the mixture boils again, turn the circles several times with a spoon. The stove is turned off after 3 minutes.

This incomparable salad, the recipe for which I got from my beloved grandmother, is very simple to prepare and is eaten in an instant.

For 4 liters you need to prepare the following products:

  • 1200 grams of overripe fruits;
  • 900 grams of tomatoes;
  • 3 large onions;
  • 5 peppercorns and dill umbrella for each jar.

For 2 liters of filling:

  • 2 tbsp. level spoons of rock salt;
  • 4 tbsp. spoons of sand;
  • 0.5 cups 9% acid.

Cooking process:

1. Wash the vegetables, cut off the ends of the cucumbers and cut them into circles, cut the tomatoes into four parts, removing the white stem of the stalk, chop the onion into rings.

2. Sterilize the glass container washed with soda solution, then put pepper and dill umbrellas on the bottom.

3. Next, lay out the vegetables in layers so that the layer begins and ends with onion rings.

4. Place the ingredients needed for the marinade into the boiling liquid and let it boil. After the dry particles have completely dissolved, pour the boiling marinade over the vegetable stock.

  • 200 grams of tomato paste;
  • 200 grams of 9% acid;

Cooking process:

4. Next, you can prepare cucumbers with or without sterilization. Having chosen the first option, pour the tomato marinade over the vegetables, cover the container and sterilize for 10 minutes. To perform the second method, before pouring brine, you need to pour boiling water over the cucumbers, keep covered for 10 minutes, drain the liquid and repeat the process. Only after this, pour in brine and roll up the delicacy.

5. Place the hermetically sealed workpiece upside down, cover it with a towel and leave until the product cools.

Vegetable caviar cubes

Required ingredients:

  • carrots – 2 pcs.;
  • onion – 1 pc.;
  • cucumbers – 1 kg;
  • tomato paste – 2 tbsp. l.;
  • bay leaf – 3 pcs.;
  • black peppercorns – 5 pcs.;
  • garlic cloves – 3 pcs.;
  • vinegar 3 percent - 3 tbsp. l.;
  • salt – 1.5 tbsp. l.;
  • sugar – 2 tbsp. l.;
  • vegetable oil – 5 tbsp. l.

Washed cucumbers are peeled and cut into cubes. Peel the onion and chop it. The carrots are chopped on a coarse grater.

All vegetables are placed in an enamel pan, salted, a few black peppercorns, bay leaves and sugar are added. Then add vegetable oil and mix.

If little juice comes out, you need to add a couple of tablespoons of water.

Simmer the vegetable mass for 25 minutes over low heat, stirring occasionally. Then add a few cloves of garlic, crushed in a press, and tomato paste. After a few minutes, remove from heat and add vinegar.

  • 75 grams of sand;
  • 1.5-2 tbsp. spoons of rock salt;
  • 7 tbsp. spoons 9% acid;
  • 200 ml vegetable oil.

Cooking principle:

1. Overgrown cucumbers with cut ends and peeled onions are cut into cubes, the greens are chopped, the garlic is passed through a garlic press, and the carrots are grated.

2. All the cuttings are transferred to a large container, and the remaining ingredients are added to it. The mixture is mixed well and left for 3-4 hours so that the vegetables release some of their juice. In this case, you need to stir the workpiece once every half hour.

3. Place the infused mixture on the hob, bring to boiling temperature and boil for no more than 12 minutes.

4. Place the hot dressing in a warm, steamed glass container, seal tightly and place under a warm towel until the product cools completely.

Stew of overripe vegetables

It’s unlikely that anyone would think that you can make… stew from overgrown cucumbers. Meanwhile, this is a universal preparation: a salad, an appetizer, and a good companion for stewed vegetables and meat dishes.

Ingredients:

  • 2 kg of cucumbers;
  • 1 kg of tomatoes (it is best to use large, fleshy ones);
  • 1 kg carrots;
  • 3 peppers;
  • 1/2 -1 kg of onion;
  • 1/2 tsp. citric acid;
  • 10 cloves of garlic;
  • 1/2 tsp. ground black pepper (if you like spicy snacks, add a little ground chili pepper);
  • 1 tbsp. l. coarse salt;
  • 150 ml vegetable oil;
  • 1 large bunch of greens.

It is not necessary to use exactly this ratio of ingredients - you can use different quantities of vegetables or only those that are on hand.

Preparation:

  1. Peel and remove the seeds from the cucumbers, and then cut into small cubes. Also chop the tomatoes or grate them. If you don’t have enough of the latter, you can supplement the missing volume with regular tomato paste (but not ketchup!).
  2. Grind the carrots on a coarse grater, cut the onion and pepper into thin half rings, finely chop the garlic.
  3. Heat the oil in a deep bowl and add the cucumbers. Fry them until transparent and only then add the rest of the vegetables in the following order: carrots, after 10 minutes - tomatoes, after another 5 minutes - onions, garlic and peppers.
  4. Simmer the vegetable mass over low heat, stirring occasionally, for about 10 minutes, add salt, herbs, simmer for another 10-20 minutes (the vegetables should become soft) and add citric acid.
  5. Stir the vegetable mixture, immediately turn off the burner and place the mixture in sterilized jars and seal.
  6. Turn the hot containers over, cover them with something warm and leave them like that until they cool completely.
  7. Subsequently, the cucumber stew is stored in a cool place.

Spicy canned overgrown cucumbers with chili ketchup without sterilization

Despite the fact that we will pickle overgrown cucumbers, they will retain their crispy flesh and will turn out moderately spicy and very tasty.

For 4 one liter cans you need to take:

  • cucumbers, as much as will fit;
  • 12 garlic cloves;
  • currant leaves;
  • dill umbrellas.

For filling:

  • 75 ml 9% acid;
  • 4 tbsp. spoons of sand;
  • 5 tbsp. spoons of salt;
  • 8 tbsp. spoons of chili ketchup.

Cooking method:

1. Place umbrellas, currant leaves and garlic on the bottom of dry, clean jars.

2. Before cooking, washed cucumbers should be kept in cold water for about 2 hours. After this, cut off the ends of the vegetables and fill the container tightly.

If the fruits are too large, they can be cut into several pieces.

3. Fill the workpiece with boiling water, cover and leave for about half an hour.

4. Place all the ingredients needed for pouring into an enamel saucepan. Pour water from the cans into it, mix everything well and place on the hob. When the brine reaches boiling point, remove the container from the heat and pour into jars.

5. We seal the hot cucumbers hermetically, turn them upside down, cover them with a thick blanket and leave them for a day.

This dish is considered the most popular among housewives who prepare food. So my family has its own special recipe, which my grandmother used to cook.

For 2 liters of snacks you will need:

  • 1200 grams of overgrown fruits;
  • 400 grams of onion;
  • a bunch of green dill;
  • a stack of 9% acid and vegetable oil;
  • 50 grams of sugar;
  • 30 grams of non-iodized salt;
  • 0.5 teaspoon each of ground black pepper and curry.

Cooking technology:

1. Wash the fruits and soak in cold water for 2-3 hours. Then we trim the ends and cut into circles up to 1 cm thick.

2. Cut the peeled onion into rings and add to the cucumbers. Season the vegetables with salt, sugar, vinegar and mix well. Leave the mixture for 10-15 minutes until the juice appears.

3. Then add chopped dill and the remaining ingredients to the preparation. Mix the salad well and leave for 3 hours, not forgetting to stir the ingredients every 30 minutes.
