What kind of jam is suitable for such baking?
The classic taste of cookies is the contrast between the sweet crumb of the dough and the fruity sour accent in the filling. Use currant, plum, apple or quince jam - any berry or fruit preparations with bright sourness. You can add fresh fruits, zest and a little lemon juice to the jam.
Crumbly shortbread dough requires a thick filling.
If the jam is a bit liquid, you can boil it down a little in advance or add a couple of tablespoons of starch.
Syrup is drained from liquid jam with large berries, such as cherry or strawberry, so that only the berries are used in the filling.
Classic shortbread with jam and crumbs
Shortbread dough can be prepared in advance. It will keep fresh in the refrigerator for three days. Frozen – for a whole month.
For the test:
- 500 g flour;
- 200 g butter;
- 150 g sugar;
- two eggs;
- 10 g salt;
- 10 g vanilla sugar;
- 10 g soda;
- 5 g citric acid.
This amount of dough will require 200 - 300 g of jam.
- Soften the butter so that it does not lose its shape. Under no circumstances should you heat it to a liquid state.
- Beat a homogeneous cream of butter, sugar and eggs. All grains should dissolve. If the baked goods are not too sweet, you can reduce the amount of sugar by a third.
- Set aside 50 g of flour, sift the rest and mix with soda and acid. Instead, you can loosen the dough with baking powder; it is added according to the instructions according to the weight of flour.
- Add vanilla and salt. Don't forget about salt even in sweet dough. It is a natural flavor enhancer.
- Gradually stir flour into buttercream.
- The dough must be kneaded quickly so that it does not “drag out”. Proper dough is soft to the touch, smooth and shiny on the outside and crumbly at the break point.
- The cookies are baked in a continuous sheet over the entire baking sheet, after which they are cut into individual pieces only when cooled.
- The dough is divided into two unequal parts. Most of it is used for the bottom crust, the smaller part is used for crumbs.
- Fatty dough will not burn, but just in case, cover the baking sheet with parchment or sprinkle with flour. You can grease it with butter - it’s easier to spread the dough on a slippery baking sheet.
- The base is formed by hand. It should be very thin, no more than 1 - 1.5 cm. To prevent the jam from leaking out, small sides are sculpted around the entire perimeter.
- The filling is distributed evenly. Large berries need to be cut in half.
- Add the remaining 50 g of flour to the second part of the dough and knead tightly.
- It is grated on a coarse grater directly over the pie.
- Cover the layer of jam, carefully distributing the dough crumbs with your fingers so as not to crush them into lumps.
- The workpiece is baked at 190ºC for about half an hour.
The surface should not brown too much, otherwise the dough will become tough.
Just bake until corn yellow.
Classic recipe
These delicious, tender and light cookies are prepared, sprinkled with crumbs and filled with jam from the following ingredients:
- Creamy margarine – 1 small pack (250 g).
- Flour – 0.5 kg.
- Soda – 1/2 teaspoon.
- Granulated sugar – 250 g.
- Small chicken eggs – 2 pcs.
- Currant jam or any other - 1 glass.
Melt margarine in a water bath. In a separate bowl, beat eggs with sugar until foamy using a mixer or blender. Pour the egg mixture into a bowl with margarine.
Sift flour together with soda. Add the dry mixture to the liquid mixture. Stir until smooth, knead the dough.
Measure out a fifth of the total dough, cut it off and put it in the freezer for half an hour.
Roll out the dough into a thin layer and place it on a baking sheet lined with parchment. To make the product come off easier after baking, the parchment can be greased with a piece of butter or margarine.
Pour jam on top of the dough base and spread it evenly over the surface.
Remove the dough from the freezer and grate it onto a coarse grater directly over the pie.
Place the workpiece in the oven for twenty minutes at a temperature of one hundred and eighty degrees. Remove, cool, cut into pieces and serve.
This amazing and delicate-tasting product goes perfectly with tea or coffee.
Shortbread cookies with jam and crumbs on top
If the classic version may seem a bit dry, then the dough with the addition of sour cream turns into a very tender crumbly cookie:
- 400 g flour;
- 200 g butter;
- 100 g sugar;
- two eggs;
- 50 g sour cream;
- 10 g salt;
- 10 g vanilla sugar;
- 10 g baking powder.
Before work, the products are prepared as usual: the butter is softened, the flour is sifted.
- Mix all the ingredients into a soft, fatty dough. It shouldn't stick too much to your hands.
- Most of the dough is used for the base. First, roll it out with a rolling pin, transfer it to a baking sheet and knead it with your hands.
- The rest of the dough is set aside to make the crumble. While the base is being prepared, it is cooled in the refrigerator. After just 10 - 15 minutes, the dough will harden and grate easily. This technique allows you to prepare crumbs that are more crumbly.
- Bake the workpiece at 180ºC for about half an hour. The completely cooled cookie base is cut into rectangular pieces.

Cooking the Viennese way
For Viennese shortcrust pastry, only yolks are used, since the whites give the baked goods density and heaviness. With yolks, the cookies turn out to be more saturated in color, light and fragile.
For 400 g flour:
- 200 g butter;
- 150 g sugar;
- two yolks;
- 10 g baking powder;
- 10 g salt.
The filling is laid out in a very thin layer, the jam is boiled down to a jam.
- The flour is sifted together with baking powder.
- All other components are combined in a separate container. The butter and yolks should be warm 15 – 20ºС.
- Beat the butter-egg cream for a long time until the grains of sugar and salt are completely dissolved.
- On the contrary, the dough is kneaded very quickly so that the gluten in the flour does not have time to become limp. The whole mass is wrapped in film and put in the refrigerator for an hour.
- The dough for the bottom crust is grated and lightly crushed.
- Spread thick sour jam or jam on it.
- Cover the filling with a top layer of crumbs. A thick layer will be baked into a continuous “pillow”, so there should not be too much crumbs.
- Bake at a temperature of 180ºC for 20 - 25 minutes; it is very important not to overcook the mold with future cookies in the heat.
Viennese cookie recipe
This is a very simple recipe for cookies with jam, which has a lot of similarities with shortbread. To prepare Viennese cookies for breakfast for tea, you should have the following products on hand:
250 gr. sl. oils; 1 kg flour; 300 gr. jam; 2 pcs. chickens egg; 1.5 tsp. baking powder; half tsp salt; 200 gr. sah. sand.
The step-by-step recipe will tell you in detail how to make cookies with jam at home yourself:
- Sl. I melt the oil, then give it time to cool. When warm, mix it with eggs, sugar and salt. I work as a mixer.
- In another bowl, stir 1 tbsp. flour and baking powder. I sift the mixture and add it to the first mass.
- Beat with a mixer and gradually add the rest of the flour. The dough should thicken, only then turn off the mixer.
- I mix the dough with my hands and divide it into 2 parts - one larger than the other. 2/3 of the dough will be used as a base, and 1/3 will be used as crumbs. I put the smaller part in the freezer so that I can grate it and sprinkle the dough on top.
- I form a layer of dough on a baking sheet. This time you don’t have to make the sides. I put jam on top. I put the grated dough from the refrigerator on top.
- I bake cakes with crumbs at 200 gr. 20 minutes. When the baked goods with jam are ready, I cut them into pieces, for example, small rectangles, and only then serve them.
How to cook without eggs
Dough made without eggs can be stored in the refrigerator for a week, and in the freezer for almost two months. It is convenient to store such a preparation, which in half an hour can turn into a fragrant homemade dessert.
Cookies with jam and crumbs prepared according to this recipe can be used in a vegetarian menu or prepared during Lent if you replace the butter with solid coconut oil.
For 500 g flour:
- 150 g sugar;
- 100 ml vegetable oil;
- 200 g butter;
- 10 g salt;
- 10 g baking powder.
If the dough turns out too stiff, you can add a couple of tablespoons of water. The liquid should be icy 1 – 3ºС, otherwise the dough will “drag in” and the baked goods will turn out hard.
- One part of the dough is distributed on a baking sheet.
- The second part is kept in the freezer for 15 - 20 minutes.
- Thick jam is distributed in a thin layer. Dough without eggs requires a filling that is especially bright in taste, since it itself has a neutral taste.
- Bake at 180ºC for 20 - 25 minutes. The crumbs on top should not acquire a rich color.

Recipe from Yulia Vysotskaya
Yulia Alexandrovna brings her own twist to any, even the most everyday recipe. In her execution, cookies with crumbs become tall, soft and very tender. By the way, it’s worth talking not about the raisin, but about the date, because it is from these berries that the filling is prepared according to the TV presenter’s original recipe.
For the test:
- 225 g wheat flour;
- 120 g corn flour;
- 200 g butter;
- 90 – 125 g powdered sugar;
- 20 g baking powder.
For filling:
- 200 g pitted dates;
- zest from one orange;
- 250 ml mineral still water;
- 10 g ground cinnamon.
The filling can be prepared in advance so that it cools thoroughly.
- Pour water over dates, fresh zest and cinnamon. Natural salts will act as a flavor enhancer. Heat over medium heat until the water begins to boil.
- Cool the dates in the liquid. They should soften a little and become saturated with the aroma of cinnamon and orange.
- Using a blender, bring the fruit to a smooth porridge state, but do not turn it into a liquid puree. You may not need all the liquid, so add it in parts.
- Be sure to sift the dry ingredients for the dough through a fine sieve.
- Combine the flour mixture with the softened butter by hand, lightly whisking with your fingers.
- Form the butter crumbs into one ball, wrap tightly in film and cool in the refrigerator for an hour. The dough will become more homogeneous and firm - in this form it is easier to knead it on a baking sheet and grate it.
- You need a deep baking tray, as the dessert will turn out quite tall. Lubricate the bottom and, of course, the sides with oil.
- Fill the bottom of the pan with a thin layer of dough. Prick it with a fork at a distance of 3 - 4 cm so that the cake is well baked and does not swell.
- Place the filling in a layer of the same thickness as the base. Grate some of the crumbs onto the dates.
- Preheat the oven to 170ºC. Place a baking sheet and reduce heat to 150ºС. Bake for a little less than half an hour.
Remove the dough from the mold and cut it into individual cookies when it has completely cooled down.
