Korizhka is a sweet flour product that tastes and looks like gingerbread or biscuit. In addition, it can be made lean by removing butter, milk, kefir, and eggs from the dough. Yeast is not used in its preparation. Traditional kefir gingerbread is made from gingerbread dough, to which you can add dried fruits, candied fruits, nuts, honey, and aromatic spices. Most often, granulated sugar acts as a sweet ingredient together with jam, marmalade or honey.

They first started baking gingerbread in Rus' in the 9th century. Then it was called honey cake, for the production of which flour, natural honey and berry juice were used. This confectionery product is at least 3 cm in height. After baking, the cake can be cut in half lengthwise and coated with any cream, jam or condensed milk.

Classic recipe

The classic recipe for kefir gingerbread is quite easy to prepare. Traditionally, this flour product is baked in the oven in a silicone or heat-resistant form. To prepare the dough, it is recommended to use products at room temperature.

  • 1 tbsp. kefir and favorite jam;

It is also recommended to prepare 1 tbsp. l. breadcrumbs for dusting the baking container.

  1. First you need to combine the jam with soda, then leave the mixture for 5 minutes.
  2. Then add the egg, beaten with sugar, and mix the ingredients.
  3. Then you can start kneading the dough. To do this, you need to pour in kefir and gradually add the sifted flour, without ceasing to knead the mass.
  4. Next, line the baking container with parchment, coat with butter and sprinkle with breadcrumbs.
  5. After this, you need to pour the dough into the mold, and then send the workpiece to the oven, preheated to 190°.
  6. It is recommended to bake the gingerbread for 45 minutes.


    Kefir gingerbread

First 20 min. It is advisable not to open the oven door so that the mass does not settle. After 40 min. You can check the confectionery product for readiness using a skewer.

What can I add?

You can add various spices to the dough to suit your taste: cardamom, nutmeg, ginger, cinnamon, vanilla powder. It is also allowed to use candied fruits, soaked dried fruits, fried and chopped nuts, lemon zest, cocoa, grated fruits or vegetables.

How to serve the dish?

Serve the cooled gingerbread, cut into several equal portions. The dessert can be topped with whipped egg whites or cream, fresh berries, powdered sugar, chocolate/nut crumbs, or topped with condensed milk/icing. Baked goods can be served with aromatic tea, cool milk, hot chocolate, jelly or compote.

Recipe No. 3. Lenten chocolate cake

Chocolate Lenten gingerbread can be with any additives you like, each of which gives the finished baked goods a unique aroma and taste. For example, cocoa makes the color of the pie more saturated and indicates chocolate notes in the taste; coffee and cinnamon add a special aroma; honey successfully replaces sugar.

List of ingredients:

  • cocoa – 2 tbsp. l.
  • water – 1 glass
  • flour – 1.5 cups
  • baking powder – 10 g
  • jam – 2 tbsp. l.
  • for dusting – powdered sugar
  • honey - 2 tbsp. l.
  • a whisper of salt
  • vegetable oil – 3 tbsp. l.

If the dough does not seem sweet enough, you can add a little sugar to it.

Lenten gingerbread with cocoa is prepared as follows:

  1. Prepare the dry mixture: mix cocoa, baking powder, salt, sugar and flour.
  2. In another bowl, combine jam, liquid honey, water and oil.
  3. Combine both mixtures and knead the dough.
  4. Place the dough into a greased and floured pan and bake for 35-45 minutes at 180°C.
  5. When the scheduled baking time has come to an end, you can remove the pan from the oven and pierce the cake with a toothpick to ensure that the cake is completely baked. The toothpick should be dry, without any stuck dough particles.
  6. Sprinkle the cooled gingerbread with powdered sugar.

With cocoa

Kefir gingerbread with jam and cocoa has an original chocolate taste and aroma. The fermented milk product gives baked goods even more fluffiness and airiness than soda quenched with vinegar.

Composition of ingredients

Required Products:

  • 1 tbsp. kefir;
  • 2 tbsp. flour;
  • 1 tbsp. jam;
  • 2 – 3 tbsp. l. cocoa;
  • 1 tbsp. l. soda quenched with vinegar;

The vinegar used to extinguish soda can be replaced with lemon juice.

  3. Next, pour vegetable oil into the resulting mass and add flour mixed with cocoa in small portions, continuing to beat the ingredients. The result should be a homogeneous mass without lumps. You can also add pre-soaked raisins, candied fruits or nuts to the dough.
  4. After this, you need to grease the baking dish with oil and pour the whipped mixture into it.
  5. Then you should put the workpiece in the oven, preheated to 180°.

The dessert must be baked for 45 minutes.

How to bake a gingerbread

Before you start kneading the dough, you need to turn on the oven and preheat it to 1800C. The dough will cook very quickly, and by the time the pan with the dough needs to be placed in the oven, the temperature in it should be high.

While the oven is heating:

  • Break the eggs into a deep bowl in which it will be convenient to knead the dough;
  • add sugar to eggs;
  • Beat eggs and sugar until fluffy white foam forms. It is better to do this with a mixer, but if this is not possible, then you can get by with a whisk. You just have to put in more effort and spend more time;
  • add jam to the beaten eggs. You can take absolutely anything - plum, cherry, apricot, apple, currant or any other berries and fruits, the main thing is that they do not contain seeds. If the jam has been standing for a long time and has begun to ferment, then its use will be optimal, because during fermentation carbon dioxide is released and the dough will rise better. In this case, you don’t have to extinguish the soda with vinegar; the acid from kefir and jam will be enough;
  • Stir the jam with a spoon and add a glass of kefir. It is better to take full-fat kefir - with it the dough turns out more fluffy and airy, and with low-fat kefir it rises less;
  • beat the dough until smooth;
  • add soda and cinnamon;
  • sift the flour through a sieve and pour it into the dough in small portions, while continuing to beat it.

The finished dough is quite liquid (the jam taken for preparation plays a role - if it is liquid, then the dough will be the same, if the jam is thick, then the dough will be more viscous).

  1. Grease a metal baking dish with vegetable oil. For these purposes, it is convenient to use a silicone brush. There shouldn't be a lot of oil.
  2. You can replace the butter with parchment paper and line the pan with it.
  3. The silicone mold should also be lightly greased with vegetable oil or sprinkled with cold water.
  4. Place the finished dough in a silicone mold. Place it in an oven preheated to 1800C and bake until done. If there is one large form, it will take about 40-50 minutes. During the last 10 minutes, you should keep a close eye on it and check its readiness with a toothpick or wooden stick. It should remain dry.
  5. If the dough is divided into two smaller forms, it will take 25-30 minutes.
  6. After the gingerbread is ready, you need to remove it from the oven and leave it to cool.
  7. Remove the cooled gingerbread from the mold and sprinkle with powdered sugar.

With honey

Gingerbread with added honey differs from other recipes in its incomparable aroma. When making baked goods, it is recommended to give preference to natural products. Crystallized honey should be melted in a water bath or in a microwave oven.

Composition of ingredients

To prepare honey gingerbread you will need:

  • 2 eggs;
  • 120 g each of granulated sugar and honey;
  • 170 g flour;
  • 1 tsp. baking soda;
  • 120 g kefir;
  • ground cinnamon/vanilla (to taste);
  • 100 g of peeled walnuts, chopped.

It is not recommended to replace baking soda with baking powder.

  2. After this, you need to add honey and soda to the resulting mass.
  3. Then these ingredients should be mixed until the honey is completely dissolved.

  5. At the last stage of preparing the dough, add nuts and mix again.
  6. The result should be a homogeneous, not very thick mass.
  7. Then you need to place the dough in a greased baking dish, after which the workpiece should be placed in the oven, preheated to 170°.

The honey gingerbread must be baked for 35 - 40 minutes. You can check readiness with a toothpick.

Kefir coffee cake with prunes

I have already talked about how I prepare honey cake with prunes without rolling out the cakes here. You can diversify this pastry by preparing a coffee gingerbread, but with prunes. Using the classic gingerbread recipe as a basis, you can add coffee to the dough. To do this, it is enough to brew concentrated natural coffee or use instant coffee. 100 ml of drink is introduced into the preparation and mixed.

The prunes are first poured with boiling water and left to cool completely. Next, strain off the liquid, dry on a towel and cut into small pieces. In this case, I recommend not adding raisins, nuts, etc. Coffee, spices and prunes are a great trio.

Instead of prunes, dried apricots are quite appropriate. It will make the taste interesting and noble, but softer.

With jam in a slow cooker

When making gingerbread with kefir, jam can be replaced with jam or marmalade. Using a multicooker for baking confectionery will not complicate the task at all, but will only make it easier.

Composition of ingredients

Required components:

  • 250 ml kefir;
  • ¾ tbsp. sugar and favorite jam;
  • 20 g butter;
  • 3 tbsp. l. breadcrumbs;
  • 2 eggs;
  • 2 tbsp. l. powdered sugar;
  • 2 tbsp. flour;
  • 1 tbsp. l. soda

In this recipe, the use of unquenched soda is allowed, since kefir performs this function.

  1. First you need to mix kefir with soda in a large bowl and leave it for 15 minutes.
  2. After time has passed, it is worth combining sugar with jam in a separate bowl, then pour the sweet mixture into a container with kefir.
  3. Then you need to add the eggs and mix the ingredients thoroughly. To do this, it is advisable to use a mixer or whisk.
  4. Next, you should start kneading a fairly liquid dough, gradually adding flour.
  5. After this, it is recommended to leave the resulting mass for 20 minutes.
  6. After the time has passed, grease the multicooker bowl with butter, lightly sprinkle with breadcrumbs and pour in the dough.
  7. Then you need to set the “Baking” mode, the timer for 45 minutes. and close the lid.
  8. During baking, it is advisable not to open the multicooker so that the dough does not fall off.

When the dessert is ready, you should leave it in the switched off appliance for some more time, then transfer it to a large dish and cool.

Serve the cooled gingerbread, cut into several equal parts. The top can be generously sprinkled with powdered sugar, roasted and chopped nuts or grated chocolate.

Classic gingerbread

If you don’t have semolina and oatmeal in the house, you can make a pie simply with flour. It only takes 15 minutes to bake. And the gingerbread itself can be greased with condensed milk, chocolate, sour cream or custard.

  • 250 ml kefir;
  • 2 tablespoons honey;
  • 3 eggs;
  • 500 g flour;
  • 50 g butter;
  • 15 g baking powder;
  • 2 packets of vanilla;
  • 0.5 tbsp. Sahara;
  • a pinch of citric acid.

Beat chicken eggs until foamy, add baking powder and kefir, mix. Add vanillin, acid, honey and granulated sugar. Blend with a blender until smooth, about 2 minutes. Gradually pour flour into the resulting mixture, add melted butter and stir until the dough becomes smooth, completely free of lumps.

The dough is placed in a mold and baked for a quarter of an hour in a preheated oven. When the gingerbread becomes golden brown, it is removed and cooled.

In the oven without eggs

Kefir gingerbread with jam or jam without eggs tastes not much different from baked goods with their addition. To bake a flour product in the oven, you can use a metal or silicone mold, pre-greased.

  2. Next, add soda and mix the ingredients.
  3. The resulting mass should be left for ½ hour.
  4. After the time has passed, you need to add baking powder, salt and combine the ingredients. You can also add spices if desired, such as vanilla, ground cinnamon or dried ginger.
  5. Then you should move on to kneading the dough. To do this, you need to gradually add flour to the sweet mixture, thoroughly mixing the components.
  6. Next, you need to pour the dough into a baking container, previously greased with vegetable or butter.
  7. After this, place the mold in a preheated oven.
  8. The gingerbread needs to be baked for 1 – 1.5 hours at 170°, which depends on the thickness of the dessert.
  9. After time has passed, it is recommended to turn off the heat and leave the baked goods in the oven for another 10 minutes.

Then you should cool the dessert and transfer it to a plate.

No oil

Kefir gingerbread with jam without butter is no less tasty. It is advisable to add seedless jam. If available, the sweet mass can be ground in a blender until smooth.

  • 1 tbsp. kefir, jam and granulated sugar;
  • 1 tsp. soda;
  • 2 eggs.

It is recommended to use products at room temperature.

Serve the cooled confectionery product, divided into equal portions. On top of the cake you can pour condensed milk, melted chocolate, glaze or generously sprinkle with sifted powdered sugar.

How to make gingerbread with kefir

A fragrant pie does not require dancing with a tambourine. Place everything in a bowl except the flour and stir. There is no need to extinguish the soda; kefir or yogurt will do that.

Next, gradually introduce the sifted flour. The dough should have the consistency of thick sour cream. The photo shows that it will be difficult to level itself; it needs help with a spoon.

If you want to add cocoa, you should first add it and stir. Manufacturers often adulterate cocoa powder with starch and flour, so the product attracts moisture. When the cocoa is added (1 tablespoon is enough for such a cake), add flour in parts. Knead and place in a mold greased with vegetable oil and sprinkled with flour. If the mold is silicone, like mine, then there is no need to grease.

Baking time for the gingerbread is 20-25 minutes.

Baking temperature - 160 ᵒC.

The top can be sprinkled with powdered sugar. I melted the chocolate and it turned out delicious.

Sugarless

Kefir gingerbread with jam or sugar-free preserves can be prepared with the addition of whole grain flour, which will make the dessert more healthy. You can replace the sweet bulk component with date puree, which will give the finished baked goods an original taste.

Composition of ingredients

To make sugar-free gingerbread, you will need:

  • 0.2 kg of whole grain flour and 0.1 kg of wheat flour;
  • 150 g each of raisins, walnuts;
  • 1 tbsp. l. lemon juice;
  • a pinch of ground spices: nutmeg, cloves, ginger, vanilla;
  • 1 ml each cinnamon and soda;
  • 0.4 liters of mint or strong black tea;
  • 0.1 kg date puree;
  • 80 ml olive oil;
  • a pinch of salt.

It is recommended to use roasted walnuts.

  1. Before preparing the gingerbread in the evening, it is recommended to soak whole grain flour in tea. In the morning, the liquid must be drained.
  2. Then add lemon juice, butter, nuts, spices, salt, date puree and soaked raisins to the resulting mass. All ingredients must be mixed thoroughly.
  3. Next, you can proceed to kneading the dough. To do this, you need to combine wheat flour with soda, then gradually pour it into the sweet mass, stirring.
  4. After this, the mixture should be placed in a mold coated with oil.
  5. Then the workpiece should be placed in a hot oven.

The gingerbread should be cooked for 40 – 45 minutes. at 175°.

How to serve the dish?

Before serving, the baked goods must be cooled and then divided into equal slices. You can use whipped cream or egg whites, chocolate or nut crumbs as decoration.

Kefir gingerbread recipe

Basically, this recipe is nothing more than the kefir dough from this recipe. But spicy, aromatic spice additives will make a gingerbread out of it. For the pie you will need:

  • kefir - 1 glass;
  • eggs - 2 pcs.;
  • sugar - 1 glass. I put half of it in a frying pan and made caramel;
  • soda - 1 teaspoon;
  • salt - 1 g;
  • vegetable oil - 3 tbsp. spoons;
  • spices - ½ teaspoon (cinnamon, cloves, coriander, cardamom);
  • flour - 2-2.5 cups until the consistency of thick sour cream as in the photo. In this case, wheat flour. However, it can be combined with rye 1:1. The rye flour crust will also be delicious. I have personally tested this in a Christmas cake like this recipe.

I added to the dough:

  • walnut kernel - 1/2 cup, crushed with a rolling pin;
  • drunken cherries from this recipe - ½ cup;
  • raisins - 1/3 cup.

Rug with semolina

The semolina mat with kefir turns out very tender and airy. And the addition of honey will give baked goods a rich taste, provided that a natural product is used. The dough must be prepared from liquid honey, so if necessary, it must be melted.

Composition of ingredients

  • 0.1 l kefir;
  • 130 g each of flour and semolina;
  • 4 eggs;
  • 0.1 l honey;
  • 10 g baking powder;
  • 50 ml vegetable oil;
  • 130 g sugar.

It is also worth preparing 0.2 liters of purified water.

  1. First you need to beat the eggs with granulated sugar in a large bowl until the 2nd ingredient is completely dissolved.
  2. Next, you need to pour kefir and butter into the egg mass and mix the products.
  3. After this, add flour combined with semolina and baking powder into the liquid mixture and mix the products thoroughly.
  4. Then you can add lemon zest, nuts, cinnamon or vanilla powder.
  5. Next, you need to coat the baking dish with vegetable or butter and pour the dough into it.
  6. After this, the workpiece must be placed in a hot oven.

The gingerbread should be baked for 30 – 35 minutes. at 175°. You can check readiness with a wooden skewer.

Before serving, it is recommended to divide the baked goods into several equal parts and decorate with fresh berries, pieces of fruit or nuts. You can also top the dessert with condensed milk and melted chocolate.

Honey cake with kefir

Honey pie is good without spices. However, in the gingerbread recipe, replacing sugar with honey, we get a very tasty product that does not go stale for a long time.

If the honey has become thick and crystalline, don’t worry, don’t drown it, add it to the dough as is. If you don’t need honey, add 1-2 tablespoons to the recipe, and throw ½ cup of sugar into a dry frying pan. Heat, turn sugar into caramel. Add 50-60 g of water and leave until completely dissolved. To make the process go faster, you can warm it up a little.

Artificial honey cannot replace natural honey, but herbs and spices interrupt the taste and smell so much that it is unlikely that anyone’s nose will be able to smell the difference.

Honey pie is good with poppy seeds. It is enough to add 30-40 g of dry poppy seeds to the dough, and the appearance will be completely different.

Rug with oatmeal

Kefir gingerbread with jam and oatmeal has a thick consistency. It is advisable to give preference to cereals that require a long cooking time. Do not use instant oatmeal.

To prepare honey gingerbread, you will need:

  • 3 eggs;
  • ½ tbsp. jam;
  • 0.2 kg flour;
  • ½ l kefir;
  • 5 g baking soda;
  • 0.2 kg oatmeal;
  • 0.1 kg sugar.

In this recipe, there is no need to quench the baking soda with vinegar.

  4. After time, add sugar and jam to the kefir mixture and mix the products again.
  5. Next, you need to gradually introduce flour, kneading a not too thick dough.
  6. Then the sweet mass must be placed in a greased mold.
  7. After this, the container should be placed in the oven, preheated to 180°.

It is recommended to bake the confectionery product for about 45 minutes.

Cautions

Do not forget that gingerbread with honey is a fairly high-calorie dish. It is better to eat it in the first half of the day and little by little.

Honey should not be added to the pie if you are allergic to bee products. In this case, it is better to replace it with jam.

When ready, the milk gingerbread has a moderately dense, but very soft, tender and juicy dough. The glaze can be prepared by heating 2 - 3 tbsp until bubbly. l. drinking water combined with 180 g of powdered sugar.

  1. First you need to put a dry frying pan on medium heat and pour half the prepared amount of sugar into it. It is advisable to use non-stick cookware.
  2. Then you should wait until the sweet component melts and darkens. There is no need to stir the sugar at this time.

  3. Next, you need to pour in the milk in a thin stream, stirring the products with a wooden or silicone spatula.
  4. After this, add butter, the remaining granulated sugar and achieve homogeneity of the mass.
  5. Then the sweet mixture must be removed from the stove and cooled.
  6. At the next stage of preparation, you can start kneading the dough. To do this, you need to combine caramel with flour. The last component should be pre-mixed with soda and spices.
  7. Next, the finished homogeneous dough should be placed in a mold covered with parchment and coated with butter.

  1. First you need to mix sugar with water and honey in a saucepan.
