There is nothing complicated in preparing such a shortbread dessert. If you follow all the rules of the recipe, you will get a very tasty delicacy with a delicate curd filling and juicy cherries. Children especially love this dessert. In appearance it resembles a homemade cake, but in taste and texture it is quite similar to brownies.

So what ingredients do we need to make shortbread pie with cottage cheese and cherries? The recipe (it will be much more interesting to cook with a photo) requires the use of:

  • large chicken eggs – 2 pcs.;
  • baking powder – 4 g;
  • soft butter – about 150 g;
  • sifted wheat flour - approximately 250 g (add until the dough becomes stiff);
  • fatty granular cottage cheese - 200 g;
  • frozen cherries (it is better to defrost them first) – about 200 g;
  • fine sugar - about 7 large spoons.

Making shortbread dough

Recipes for pies with cottage cheese and cherries can involve the use of any dough. The easiest and fastest to prepare is a sand base. To knead it, combine soft butter with sugar (with 2 large spoons) and rub thoroughly with a spoon. Next, add egg yolks (the whites are left for filling) and baking powder.

Having achieved a homogeneous consistency, add sifted flour to the resulting mass and knead thoroughly. If necessary, add a few large spoons of cold water to the dough. The output is a smooth and cool sand base, which is wrapped in cling film and placed in the refrigerator (for 10-20 minutes).

How long does it take to bake a pie in the oven?

Almost all recipes for pies with cottage cheese and cherries can be made very quickly. After the dessert is formed, it is sent to a preheated oven and baked for 45-50 minutes.

After time, the homemade delicacy is taken out and cooled. It is sprinkled with powdered sugar on top, cut into pieces and presented to the table along with unsweetened tea.

To make a pie with frozen cherries on kefir, you will need the following set of ingredients.

Main stages of preparation:

  1. The first step is to pour the sifted flour into a bowl along with baking powder, add cocoa powder, add sugar and mix the ingredients.
  2. In a separate deep plate, mix kefir with water and vegetable oil using a whisk. Then you should combine the dry mixture with the liquid.
  3. Afterwards, you need to defrost the cherries, let the excess juice drain, put the thawed cherries in the dough and stir evenly.
  4. You can line the multicooker bowl with food paper, grease the walls of the bowl with oil, lay out the dough and level it with a kitchen spatula, set the “Baking” program and cook the pie for 80 minutes. You can check the doneness of the baked goods using a wooden skewer.
  5. The baked pie must be cooled by removing the lid, then carefully removed from the bowl and transferred to a plate. To make the glaze, you need to melt the dark chocolate, add cream to it and mix thoroughly.

  6. You can decorate the top of the cake with the prepared glaze, cut it into portions and serve it with tea.

Preparing loose dough and curd filling

Before baking such a pie in a slow cooker, you should knead loose dough for it and make a curd filling. To do this, creamy margarine is ground together with wheat flour, and then 3 g of baking powder and table salt are added. The output is homogeneous small crumbs, which are left in the refrigerator for a while.

  • 0.5 cups chopped almonds;
  • 150 g cherries;
  • 0.5 cups of melted butter;
  • vanilla bag;
  • a pinch of salt.

Preparation:

Beat eggs with sugar and vanilla.

Add cottage cheese and other ingredients except cherries.

Beat the dough with a mixer - it will be quite liquid.

  • sifted wheat flour - 150 g;
  • good butter (72-75% fat) - about 120 g;
  • dark chocolate - approximately 120 g;
  • fine sugar - 50 for the dough and 100 g for the filling;
  • large eggs - 2 pcs. into the dough and 2 pcs. For filling;
  • baking powder - 1 dessert spoon;
  • vanillin – 5 g;
  • vegetable oil – about 15 ml (use for lubricating dishes);
  • vanilla sugar - 2 dessert spoons;
  • table salt - add to taste;
  • pitted cherries - about 300 g;
  • grainy country cottage cheese - 300 g.

Preparing the dough

To make a classic brownie pie, beat large eggs together with sugar at high speed. Vanillin and a little salt (a couple of pinches) are added to the resulting mass.

After mixing the ingredients, begin preparing the dark chocolate. It is broken into slices and melted in a bowl with butter. After mixing the ingredients until smooth, add them to the eggs. Then wheat flour and baking powder are added to them. The result is a not very thick chocolate dough.

On curd dough

It will take approximately 90 minutes to prepare the cherry pie with cottage cheese dough.

Baking with frozen cherries on cottage cheese dough is prepared as follows:

  1. First you need to sift the flour through a sieve along with baking powder. Place cottage cheese in a separate container, add granulated sugar along with vanillin, pour in milk and sunflower oil. You will need to remove the zest from the lemon using a fine grater and add it to the cottage cheese with milk. Now all components need to be thoroughly mixed with a whisk until a single mass is obtained. If the cottage cheese is grainy, it should be pressed through a sieve.
  2. Now you need to pour the flour mixed with baking powder into the resulting mass in parts, stirring thoroughly after adding each part. The finished dough should stick a little to your hands. The finished dough should be wrapped in plastic wrap and left at room temperature for 20 - 25 minutes.
  3. In the meantime, you can prepare the filling. To do this, you need to drain all the liquid from frozen cherries, place it on a sieve, and remove the seeds.

  4. You can break the eggs into a clean bowl, add granulated sugar and beat with a mixer until light foam appears, then add sour cream, vanillin, starch and mix the ingredients until smooth.
  5. Next, you can line a 20x30 cm rectangular baking dish with parchment paper, spread the dough over it with your hands, forming small sides, arrange the cherries and pour the sour cream filling over the dough. The workpiece should also be sprinkled with almond petals.
  6. Afterwards, you can put the cake in the oven, heated to 170 °C, and bake it for about 50 minutes. Transfer the finished pie to a wire rack and cool slightly before serving.

Forming a chocolate dessert

You can bake a Brownie pie with cherries and cottage cheese either in the oven or in a slow cooker. The main thing is to use a deep bowl, which must be lubricated with vegetable oil.

To form this dessert, the chocolate dough is divided into three parts. Having placed one of them in the container of the device, it is covered with half of the curd filling and berries. After this, the cherries are poured with the 2nd part of the chocolate base. Next, the white curd mass and berries are again placed on the pie. Finally, the entire product is covered with chocolate dough again.

Puff pastries with cherries

To prepare cherry puffs, you need to prepare the following ingredients:

  • 500 g yeast-free puff pastry;
  • 200 g frozen cherries;
  • 250 ml cherry juice;
  • 80 g brown sugar;
  • 1 tbsp. l. butter;
  • 1 egg.

Detailed description of the cooking process:

  1. First you need to defrost the cherries by placing them in a sieve or colander to drain excess liquid.
  2. Next, roll out the puff pastry into a large circle and cut triangular pieces out of it using a knife. Place 3-4 cherries on the wide side of each triangle and roll the pieces into a bagel shape.
  3. Now you can place the bagels in a heatproof baking dish and prepare the cherry caramel syrup. To do this, pour cherry juice into a saucepan, add butter to it and add granulated sugar. Place the container over medium heat and dissolve all the sugar, constantly stirring the ingredients.
  4. Then the syrup needs to be poured into the mold with bagels. The preparations should be half covered with syrup.
  5. Now you need to preheat the oven to 180 °C, place the bagels inside and bake them for about 20 - 25 minutes. In the meantime, you need to break an egg into a bowl, remove the yolk from it using a plastic bottle, move it to another container and grease the workpieces with it for 5 minutes. until done using a pastry brush.

Ready-made cherry puff pastries can be served with cold milk or cocoa.

Serve for family tea

If you want to beautifully serve the Brownie pie to the family table, then it is recommended to sprinkle it with snow-white powdered sugar. It should be noted that when cut, this dessert turns out to be quite unusual. Dark layers beautifully alternate with white ones, and cherries give the pie a special sourness and juiciness.
