If you don’t have milk or kefir at home, bake pancakes in water with eggs; if there are no eggs, but there is milk, then the option of pancakes without eggs is suitable for you. Pancake dough with milk according to the classic recipe
The simplest pancake recipe is dough made with milk; it can be prepared in different ways, resulting in pancakes with holes or openwork. If you don’t know how to make dough for pancakes with milk, first use the classic option.
Products you will need:
- 2 medium sized eggs.
- A little less than 1 liter of milk, 700 grams will be enough.
- Less than half a coffee spoon of soda.
- Salt and granulated sugar according to preference.
- Don't forget about flour.
The thickness of the pancake will depend on the volume of flour. If you want to make thin ones, then add flour, but just a little, stir with a whisk and, if necessary, add more. The mass should be liquid and easily spread over the entire area of the pan.
American pancakes with milk “Pancakes”
Ingredients:
- Egg - 3 pcs.;
- Salt - a pinch;
- Flour - half a glass;
- Full-fat milk (at least 4%) - 1 glass;
- Sugar - 2 tbsp;
- Vanillin - 1 sachet;
- Vegetable oil - 2 tbsp;
- Baking powder - 2 tsp.
Cooking method:
- To begin with, you should separate the whites of the eggs from the yolks;
- Then add salt and milk to the yolks, mix everything thoroughly;
- In a separate bowl, carefully stir the flour and baking powder. Now you can mix this bulk mixture into the mixture with the yolks and milk;
- Use a mixer and mix the egg whites and sugar. Using a mixer, you should get a dense foam - this way, the pancakes will be tastier and fluffier;
- Add the protein mixture to the mixture and mix everything thoroughly and gently with a regular whisk;
- At the final stage, add vegetable oil;
- After completing the preparation of the dough, you can begin the most interesting process - baking;
- Use a Teflon-coated frying pan and pour some dough onto a well-heated surface. Do not think that pancakes require a lot of dough to prepare - here it is enough to adhere to the principle of preparing ordinary Russian pancakes;

How to knead dough for pancakes
Before you make the pancake dough, prepare all the ingredients and necessary utensils. I do this in a saucepan, knead the dough with a whisk, it does a great job of removing lumps of flour. I recommend adding white spices in the form of salt and sugar according to taste preferences. In our family, sweet dough is not particularly in demand, so I put much less granulated sugar than salt. After you bake one pancake, taste it for salt and sugar; this method will help you determine what exactly is missing in the recipe.
- Pour the required amount of cow's milk into a saucepan, shake it with 2 eggs, salt, soda and sugar. After this procedure, add wheat flour, you can use another, for example, pancake flour. Do this gradually in several stages, pour in and immediately shake, and so on until you find the desired consistency. For thin and lacy pancakes, knead the mixture into a liquid mixture. If you want to wrap vegetables or meat filling in them, add more flour.
- Place the frying pan on the fire, do not make it too low, otherwise your pancakes will not bake, but steam. Wait a few minutes for the frying pan to heat up, grease it with oil and after 15 seconds pour the batter onto the pancakes. If you want to make milk pancake dough with holes, add a glass of vegetable oil to it and mix until smooth.
- While pouring the liquid mass, keep the pancake pan suspended; the pan should be rocked from side to side so that the mass is distributed evenly. Do not leave the stove; it takes very little time to bake one side, less than a minute. If you see that it has browned, turn it over to the other side. This can be done using a wooden spatula or a sharp knife.
Place the finished pancake on a pre-prepared plate, brush it with melted butter or wrap it with a sweet filling of jam and cottage cheese. Openwork pancakes without eggs with milk or whey
Craving pancakes, but don't have any eggs at home? There is no need to run to the store, because you can bake delicious and tender openwork pancakes without eggs.
For the recipe for eggless pancakes we need the following products:
- whey – 0.6 l (can be replaced with milk);
- wheat flour – 0.3 kg;
- baking soda – 0.5 tsp;
- melted butter - 1 tbsp. l.;
- sugar – 1 tbsp. l.
Advice! It is better to mix the pancake dough in a blender, this will make them even tastier, because there will be no lumps in the dough at all.
Cooking process:
- Warm the whey slightly and mix with all the other ingredients. Knead the dough until it reaches the consistency of liquid sour cream.
- Bake in a well-heated frying pan on both sides until golden brown.
- Grease hot pancakes with butter and sprinkle with sugar.
How to make pancake batter using milk
You can make pancake dough using powdered milk, but this method is not for everybody, and not everyone likes to mess around with dry milk; most prefer kefir for pancakes, milk or water. If you want to make pancake dough with milk so that the pancakes have holes, then add a little vinegar to the dough.
What you need for pancake dough:
- 600 ml warm milk.
- A couple of testicles.
- A mug of flour, preferably with a lump.
- A large spoon of sugar.
- Add salt to taste; its presence can be determined after the first pancake by tasting it.
- A coffee spoon of soda and the same amount of vinegar.
- A glass of vegetable oil.
Friends, do not mix all the ingredients at the same time with a mixer, otherwise if the sequence is broken, you will not get the expected result. To begin, choose a deep and comfortable container, mix sugar, eggs, salt and butter, then pour in warm milk. Mix everything with a whisk, add flour gradually, as in the previous version. The pancakes will turn out with holes if you add slaked soda. There are two ways to extinguish it, using vinegar and lemon juice. Which option to use is up to you. I most often use lemon juice.
With the power of this recipe, you will make a batter for pancakes, which means that in the end you will get them thin and delicate, just like in the picture. Bake them in the usual way in a frying pan or special dish.
Delicious recipe for pancake dough with milk and water, without eggs and slaked soda
I don’t really approve of extinguishing soda in pancakes, I don’t see the point, it’s not felt in the dough, because there’s not a whole packet of it). Moreover, you can do without it by adding, for example, baking powder or adding nothing. But the problem with eggs also arises, either they are not at home, suddenly, or someone is allergic to them. So what to do, the answer has been found. Take this recipe to your treasure chest and save it in your notebook.
We will need:
- Milk – 200 ml
- Water – 100 ml.
- Sunflower vegetable oil – 2 tbsp
- Sugar – 1 tsp
- Salt – 1 pinch
- Flour – 350 ml
- Soda – 1 pinch (optional)
Stages:
1. Start by sifting the flour through a sieve. Be sure to do this work to enrich it with oxygen.
2. Now add granulated sugar, salt and soda to the flour.
3. Next, in such a thin stream, look how the author captured this moment so well, pour in the warm milk and when pouring, stir the mixture with a whisk.
4. Then tip over the vegetable oil and water. Thus, the pancake batter should have a homogeneous consistency without lumps. If they do appear, let it sit for about 20 minutes.

Simple water pancake dough
Pancake dough is also made with water, some to save milk, while others stick to low-calorie dishes. It is difficult to answer what the taste of this dish on water is; perhaps they are not so rich and aromatic, but otherwise nothing special. Pancakes can be prepared using water in different ways, with or without eggs, with yeast and even custard. Choux pastry for pancakes is very tasty, its recipe is also simple. Later I will publish an article about water pancakes with choux pastry, but for now I will provide a classic version.
To make pancake dough using water, you will need:
- 2 mugs of water.
- 3 medium sized eggs.
- More than half a teaspoon of salt.
- A mug of flour, preferably with extra.
- A glass of butter.
- Sugar to taste and preference.
Mix all the products one by one, first mix the eggs and water, then add the salty and sweet spoon, then the butter, add the flour last. Before preparing the first pancake, grease the frying pan with oil; then there is no need to do this, because this product is already present in the mass.

Pancakes cooked in boiling water (choux pastry) are very tasty
Pancakes cooked in boiling water turn out delicate, with a small hole in them, and even the next day they do not lose their taste.
Ingredients:
- eggs – 2 pcs.;
- milk – 250 ml;
- boiling water – 250 ml;
- salt - a pinch;
- sugar – 3 tbsp. l.;
- flour – 160 g;
- vegetable oil – 3 tbsp. l.
Preparation:
- Beat eggs with sugar and salt, add milk, mix.
- Add flour to the egg-milk mixture, which must first be sifted, stir everything until smooth.
- Pour boiling water in a thin stream, while stirring the dough vigorously.
- Add vegetable oil.
- We bake pancakes and invite everyone to drink tea.
Dough in a bottle for Maslenitsa
Lately, you can increasingly see videos of young mothers preparing pancake dough for their children in a plastic bottle. Using this tool you can make pancakes with patterns or even cobwebs. I haven’t prepared this dough in a bottle with water, so I can’t share my impressions, but with milk it turns out very funny and tasty.
Products we will need:
- 1 mug flour.
- 1 spoon of granulated sugar.
- A glass of butter.
- 2 chicken eggs.
- 2 mugs of milk.
- A little salt and soda, less than half a teaspoon.
How to make pancake batter in a bottle
Now let's figure out what exactly you want from this recipe. If you don’t want to dirty the dishes, then you need to pour all the bulk products into a plastic bottle.
In a separate cup, mix milk with eggs and butter. Using a kitchen watering can, add the liquid mixture to the bottle, screw on the cap and shake the bottle vigorously.
To be honest, you won’t be able to avoid completely dissolving lumps of flour, but pouring it into the pan is very easy; you don’t need to use a ladle or a large serving spoon.
If you want to please your child with beautiful and delicate pancakes, then make a hole in the cork and use a stream to place the dough as you wish, draw patterns, hearts or stars.
Pancakes with a pattern made from unusual dough
Products:
- 500 g - milk
- 3 eggs
- 300 g flour (1.5 cups)
- 2 tbsp. spoons of sugar
- 3 tbsp. spoons of sunflower oil
- 1 tbsp. spoon cocoa
Pattern baking method
1. Prepare the pancake dough in the usual way, mixing all the ingredients until smooth. Pour a little of it into a cup, add cocoa and mix.
2. Pour white dough into a ladle, hold it over a heated frying pan and pour a little more dough with cocoa into the ladle. Immediately pour two colors of dough from the ladle into the pan and bake the pancake.
3. Look, the pancake has a marble texture with veins and resembles the structure of natural marble.
4. We turn the pancake over, it turns out that there are also interesting stains on the other side.
5. You can make a different pattern on the pancakes - drip and pour an abstract pattern in random lines. This is what it will look like from one side.

Yeast dough for pancakes, simple and tasty
The recipe for yeast dough for pancakes with milk is very simple, the ingredients are simple, and the cooking time is minimal. It’s difficult to answer how many minutes yeast pancakes take to bake, because a lot depends on their thickness and the power of the fire.
Products:
- 1 – 2 regular spoons of sugar.
- 2 mugs of flour.
- A little less than a teaspoon of salt.
- 20 grams of fresh yeast or 70 grams of dry yeast.
- 2 – 3 testicles.
- 2 mugs of milk.
- 50 - 70 grams of oil.
You know what products are needed for pancakes with yeast, let's get down to the process itself.
- I cooked only once with regular yeast and once with yeast and water, then I tried the method with dry yeast and milk, and that’s where I chose. You can bake pancakes with yeast and without eggs, but only if you don’t have them, otherwise it’s best to use all the ingredients.
- Dissolve dry or raw yeast in warm milk, add sugar and a little salt. Wait until bubbles appear in the milk, this means that the yeast is of good quality and the mixture for the recipe will be prepared perfectly. If you see bubbles, add the beaten eggs and then the flour. It is advisable to pass the flour through a sieve.
- After mixing all the products, place the dough in a warm place for 40 minutes. The dough should be thicker than yeast-free dough.
- After this time, the adze will have increased in volume by yeast, which means it is ready for use. Yeast pancakes should be baked in the usual way, on both sides. Of course, such coatings will be much thicker than the usual ones on water or milk.
Useful tips
In the kitchen, as in any other place, something can happen that doesn’t fit into the cooking process. There are a lot of reasons for the occurrence of completely ridiculous situations and there is no point in listing them; the main task is to correct your own mistakes in a timely manner.
- When baking pancakes with kefir, choose kefir with the lowest percentage of fat content, in addition to this, you can additionally dilute it with some water (necessarily boiled and cooled). Such a secret will allow the housewife, including the inexperienced one, to deftly remove hot pancakes from the frying pan;
- A special pancake frying pan is best suited for baking pancakes; if you have one in the house, you can always bake your favorite dish with pleasure;
- To increase the gluten content of flour (gluten is indicated as a percentage on each package of product), liquid into the dough (namely water or milk) must be added hot;
- When baking, the pancakes tear when turned over - the dough does not have enough viscosity (add an egg or a little flour);
- In order to completely eliminate the appearance of lumps in the dough, you must first dilute the flour in a small amount of water and salt - this will significantly reduce their appearance;
- Sifting flour when preparing dough will improve the taste of the final product and saturate the flour with oxygen;
- If you need to speed up the process of preparing pancakes, use the following recommendation: fry them in several pans;
- To ensure that the first pancake turns out “as it should”, heat the frying pan thoroughly before frying.
