We will need:

  • Flour - 450 gr.
  • Kefir - 200 ml.

  • Granulated sugar - 150 gr.
  • Raisins - 100 gr.
  • Vanilla sugar - 15 gr.
  • Soda - 1 teaspoon
  • Lemon juice (can be replaced with 9% vinegar) - to extinguish soda

Preparation:

  1. Let's prepare the raisins before we start preparing the dough. Pour boiling water over it and leave to soak. In the meantime, you can start kneading.
  2. Take a deep bowl, break the required number of eggs into it and add sugar. Beat the whole mass using a mixer. The result should be a homogeneous consistency, the sugar should be completely dissolved.
  3. Next, add kefir and continue beating the egg mixture.
  4. Now add vanilla sugar, extinguish the soda with lemon juice and mix. Next, pour in the melted, cooled butter. Make sure the butter has cooled properly, otherwise the kefir may curdle.
  5. The dough is almost ready, all that remains is to add flour (in small portions). Please note that the flour should be sifted before use. Continue beating the liquid mass with a mixer.
  6. The dough is ready, pay attention to its consistency. It should be in the form of thick sour cream. Add soaked raisins here, after draining the water. Mix again, the finished dough can be divided into molds.
  7. To ensure that the raisins are distributed more evenly in the dough, I suggest rolling them a little in flour before using. Only after this manipulation should it be used in cooking.
  8. Before baking, preheat the oven to 180 degrees. Then carefully transfer the forms to a baking sheet (for convenience) and you can bake. We will bake the product for 25-30 minutes. After the time has passed, be sure to check for readiness using a wooden stick.

Your dessert is ready, let it cool slightly. Then remove from the molds and serve, but first decorate the baked goods with powdered sugar, fresh berries and mint.

It is strictly forbidden to open the oven during the first 15 minutes of cooking, otherwise the muffins will fall and will not rise again. After cooking, do not rush to take them out, otherwise they may also fall off.

  9. Bake the Zebra cake in an oven preheated to 180-190 degrees, baking time - from 45 minutes to 1 hour, depending on the size of the mold and oven.
  10. Check the readiness of the cake with a wooden skewer: it will come out dry from the baked cake.
