Step 1: add mustard to the egg yolk and beat well. Salt and beat again. Add one drop of olive oil into the mixture, stirring while doing so. We achieve similarity of the mass with mayonnaise.

2nd step: at the next stage we prepare the anchovies: the fillet must be crushed.

Step 3: Next, add lemon juice, Worcestershire sauce and prepared anchovy fillets to the mixture.

4th step: add chopped garlic to the mass too.

Shrimp sauce “Green with dill”

The next sauce is also extremely simple, based on the taste of dill, which goes well with shrimp and makes the salad truly spring in taste.

Ingredients:

  • a little dill;
  • 1/6 part lemon (slice);
  • 70-100 g mayonnaise;
  • 2 cloves garlic

Preparation:

Finely chop the dill, cut the lemon into slices. Add dill and the juice of 1 lemon slice, chopped garlic to the mayonnaise, mix everything.

Caesar sauce with mayonnaise and parmesan

  • 1/4 cup mayonnaise;
  • 2 tbsp. spoons of lemon juice;
  • 3 cloves of garlic;
  • 1/3 cup grated Parmesan cheese;
  • 2 anchovy fillets (or 1 tsp Worcestershire sauce);
  • 1/2 cup olive oil;
  • ground black pepper;
  • salt.

Using a press, chop the garlic. Add lemon juice to the mayonnaise mixture, add grated Parmesan, anchovies (or Worcestershire sauce), pepper and mix them in a blender.

If you use anchovies in the recipe, it is recommended to add a drop of honey to the mixture to reduce acidity. Worcestershire sauce already contains molasses or sugar, so no additional honey is required.

Olive oil is gradually added to the resulting mixture without stopping stirring. Add salt and mix. Parmesan cheese can be added directly to Caesar salad, or used in the preparation of sauce.

The output is about one glass of finished sauce, which is stored in the refrigerator.

Greek style feta cheese sauce

You can vary the creaminess that Parmesan adds to Caesar salad dressing, for example, by trying a feta-based salad dressing.

Ingredients:

  • 100 g feta cheese;
  • 1 tbsp. chopped parsley;
  • 1 tsp dried oregano leaves;
  • 1 tomato;
  • 100 g olive oil or mayonnaise;
  • salt and pepper to taste.

Preparation:

Mix grated feta with herbs, mayonnaise or oil, add finely chopped tomato, salt and pepper. Let it brew.

Caesar dressing without anchovies

  • eggs – 2 pcs;
  • juice of half a lemon;
  • Parmesan cheese – 2 tbsp. spoons;
  • olive oil – 1/2 cup;
  • mustard – 2 teaspoons;
  • garlic – 2 cloves.

Step 1: The creation of the sauce begins by boiling the egg in a special way: the egg shell, on the blunt side, must be pierced with a needle. The egg is placed in boiling water for 1 minute. There is an opinion that an egg boiled using this method and then cooled at room temperature acquires a number of new properties that affect the exquisite taste of the salad. Another point is that the egg must be heated to room temperature before use.

Step 2: The eggs prepared in this way are broken into a bowl, lemon juice is added and beaten.

Step 3: Parmesan cheese is grated on a fine grater and poured into the egg mixture, stirring thoroughly.

Step 4: Grind the garlic using a press and add it to the rest of the ingredients along with the mustard and stir. An important point is that the mustard should be sweetish, without a bitter aftertaste.

Step 5: Gradually add olive oil while stirring the sauce.

Sauce for shrimp “Spicy with horseradish”

This sauce is for lovers of spicy spiciness and complements salad leaves and boiled, fried or grilled shrimp very well.

Ingredients:

  • a small piece of horseradish root or prepared as a sauce;
  • 100 ml ketchup;
  • 50 ml mayonnaise;
  • lemon and sugar for taste.

Preparation:

Grate horseradish on a fine grater and mix with other ingredients.

Caesar sauce with mustard

We prepare eggs using a special method (from the previous recipe). Break the eggs into a bowl, add lemon juice and beat. Finely grate the Parmesan, add it to the egg mixture, and stir. Add chopped garlic and mustard to the rest of the products. Whisk everything thoroughly, gradually adding olive oil.

Please note: we use sweet mustard, without a bitter aftertaste.

You can diversify this sauce recipe by adding 50 ml dry white wine or using only raw yolks in the recipe. It is not forbidden to add salt, pepper, spices to your taste.

Required Products:

  • large citrus fruits – 1 pc.;
  • brewed saffron - 2 tbsp. l.;
  • regular mustard - 4 tsp;
  • sesame seeds – 40 g;
  • granulated sugar – 2 tsp;
  • unrefined oil - 2 tbsp. l.

How to cook:

  1. Cut and squeeze the orange.
  2. Pour the squeezed liquid into a frying pan, sweeten, heat and evaporate the liquid over low heat for 20 minutes.
  3. Infuse saffron in boiling water.
  4. Combine the juice with mustard and cook for 30 seconds.
  5. Fry sesame seeds over low heat.
  6. Remove the juice and mustard mixture from the heat, combine it with the butter and stir everything thoroughly.
  7. Add saffron water and sunflower oil to the orange mixture.
  8. Transfer the mixture to a bowl, sprinkle with sesame seeds.

Caesar sauce with sprats

  • egg – 1 pc.;
  • olive oil – 1/2 tbsp. spoons;
  • lemon juice – 1 tbsp. spoon;
  • garlic – 1 clove;
  • sprats – 2-3 pcs. fish;
  • ground black pepper – 1/4 teaspoon;
  • sugar – 1/2 teaspoon;
  • a pinch of salt.

Grind the sprats in a blender. Beat the eggs into a homogeneous mass, add lemon juice. Add sprat pate obtained by grinding in a blender. Mix all ingredients thoroughly and gradually add olive oil. Whisk the sauce until you get a homogeneous mass.

Another exclusive orange sauce for shrimp

Continues the orange-shrimp theme. You don't have to serve just one sauce; give your guests a choice and delight them with the flavors.

Ingredients:

  • 2 oranges;
  • dried clove inflorescences;
  • 1-2 tsp. Sahara;
  • saffron tincture;
  • 25 g brown rum;
  • 1 tbsp. lemon juice;
  • salt to taste;
  • ½ tsp. honey

Preparation:

Wash the oranges and stuff them with cloves, wrap them in foil and put them in the oven. Bake for 30-40 minutes. Then you need to pull out, remove the clove inflorescences and cut the baked oranges into slices, you also need to remove the seeds. Cut off the sharp edges of the slices, as these parts are quite tough. Cut the slices into pieces and transfer to a blender. Grind until smooth fruit mass. Add sugar, saffron tincture, rum, and lemon juice to the prepared orange mass.

Chef's tip! This sauce goes well with shrimp, Caesar salad and poultry; it can be a universal addition to the holiday table, both for salad and other dishes.

Caesar sauce with capers

  • 3 egg yolks,
  • one and a half spoons of sweet mustard,
  • 4 cloves of garlic,
  • 150 ml olive oil (second pressing),
  • one and a half tablespoons of lemon juice,
  • 35 gr. small capers,
  • 40gr. anchovy fillets in oil,
  • 1 teaspoon Worcestershire sauce.

1.In a bowl, beat the yolks, lemon juice and mustard for about seven minutes. Continue whisking until the mixture lightens in color and becomes thicker. Without stopping whisking, add olive oil and continue stirring for about 5 minutes.

2.Use a knife to chop the garlic cloves and capers and add to the mayonnaise. Heat the anchovies in a dry frying pan, cool and grind them into dust, add to our sauce. Mix everything and season with Worcestershire sauce. Our wonderful sauce is ready!

Balsamic Vinegar Sauce

This sauce is non-standard; it is used for various seafood salads. You can bring it to the classic recipe by adding mayonnaise, but you don’t have to do this.

Preparation:

  • 2 tbsp. dark wine vinegar;
  • 2 tsp mustard;
  • 70-120 ml olive oil;
  • salt and pepper to taste;
  • 50 ml mayonnaise (optional).

Preparation:

Mix the ingredients and add a little oil at a time, whisking the mixture.

Recipe for classic Caesar dressing at home

Caesar sauce with Tabasco

Ingredients

Step-by-step preparation

  1. Peel the garlic clove and chop it very finely. Sprinkle the chopped garlic with 3 grams of salt and try to crush it with a knife so that you get garlic paste.

  2. Combine 5 grams of mustard, one raw yolk, 10 milliliters of lemon juice in a bowl and mix with a whisk until all ingredients are mixed.

  3. Add garlic paste, 5 milliliters of wine vinegar to the resulting mass and mix thoroughly with a whisk.

  4. Gradually add 45 milliliters of olive oil and mix with a whisk.

  5. At the very end, add 5 milliliters of Worcestershire sauce, 2-3 drops of Tabasco and mix to form a mass with a uniform texture.

  6. Transfer the finished sauce into a gravy boat and serve.
