How to cook “Yeast pies with potatoes”
1. To prepare the dough, you need to pour warm water with added sugar into the yeast. Once bubbles begin to appear, add beaten eggs (leave 1 yolk aside), vegetable oil and milk. Add flour and salt and let the dough rise. After about 40-50 minutes, knead slightly and leave for at least another half hour.
2. This recipe for making yeast pies with potatoes uses the simplest filling option - boiled and mashed potatoes with salt and pepper. To make the filling more tender, you can add butter.
3. When the dough has risen well, you should immediately divide it into small pieces, rolling them into balls. While the first pies are being molded, the dough will continue to rise.
4. The ball needs to be rolled out quite thin.
5. Since the filling is quite dry, it is easy to work with. Spread a small amount onto the dough.
6. Seal the edges and yeast pies with potatoes at home and are almost ready.
7. All that remains is to grease them with yolk and sprinkle with sesame seeds. Place on a baking sheet and place in a preheated oven. They cook quite quickly, once they are browned, you can take them out, cool a little and taste them.

Pies with potatoes in the oven: step-by-step recipe
Soft pies can be served simply with tea, coffee or dry as a snack. You can take the pies on the road, to nature, or to the country house. Eating is a pleasure. To make pies in the oven with potatoes, for the dough we will need:
- premium wheat flour – 1.5 kg;
- water – 3 glasses;
- pressed yeast – 100 grams;
- vegetable oil – 1 cup;
- salt – 3 teaspoons.
For the dough
:
- wheat flour – 2 tablespoons;
- granulated sugar – 3 tablespoons;
- water – 0.5 cups.
For filling:
- potatoes – 10-12 pcs.;
- onions – 2 pcs.;
- vegetable oil – 2 tbsp. l.
We start with the filling: boil about 1.5 kilograms of potatoes until tender without adding salt. Then drain the water and leave a little broth. Add a little salt to taste and mash into the puree until smooth.
Next, fry two onions in vegetable oil until golden brown, it will add a piquant taste to the filling. Add the fried onions to the puree and stir everything until evenly distributed. Then transfer the filling to a plate for better use. When the filling is ready, you can start kneading the dough.
Separately, put the dough in a bowl, mix pressed yeast - 100 grams, add 2 tablespoons of flour, 3 tablespoons of granulated sugar, a little water, and you get a thin consistency. You can use dry active yeast Pakmaya, the main thing is to pay attention to the shelf life of the product, no more than two years.
Place the dough in a warm place and let the yeast sit, add salt - 3 teaspoons. If the yeast is fresh, then this happens very quickly, a total of 10-15 minutes. As soon as the dough bubbles, you can start kneading the dough.
To prepare the dough, sift the wheat flour. I knead in a deep bowl to make it more convenient. Pour 3 cups of water and dough into the center of the flour slide. Once the dough becomes thick, add room temperature vegetable oil. I like “Sloboda” according to GOST 1129-2013 most of all, because... does not contain cholesterol.
Mix everything thoroughly (you can use a food processor for kneading, if available). Then sift the remaining flour onto a cutting board and lay out the dough, sprinkle on top. Continue kneading with your hands, beat in all the remaining flour, the dough should turn out soft and should definitely keep its shape.
After all the flour has been incorporated into the dough for pies with potatoes, it stops sticking to your hands, so continue kneading for about two more minutes. Leave the finished dough in the same deep bowl and preferably cover it with cling film or a regular glass pan lid and leave it in a warm place to rise for 30-40 minutes.
Calorie content of pies with potatoes per 100 g. product – 212.0 kcal. Protein – 4.8g, fat – 8.1g, carbohydrates – 28.8g. per 100g of product.
After 30 minutes the dough will rise well. For cutting, you don’t have to use flour; instead, grease your hands with vegetable oil, as you prefer. Then we form the dough for slicing and cut into portions for the desired pies. We try to give each piece the shape of a ball.
To form the pies, you can use a rolling pin or make a cake with your hands. Then put the filling in the middle and connect the edges of the dough, giving it shape. To lubricate the top of the pies, take 1 egg yolk (with water), or soda (with water), or strong tea.
You get a lot of dough, enough for two baking sheets. Each sheet holds 28 pies, for a total of 56 medium-sized pies. If this amount is too much for you, you can reduce the portion as needed.
Turn on the oven and preheat to 200°C. Before putting the pies in the oven, brush the top with yolk lightly mixed with water to give the pies a beautiful golden color; if you are cooking during Lent, brush with soda mixed with water or strong tea.
While the oven is heating up, leave the greased pies to proof, during which time they will still rise slightly. In general, everything takes about 2-2.5 hours, plus baking time. Bake the pies for 20-25 minutes until golden brown in a preheated oven.
The filling for the pies can be absolutely anything! You can make sweet ones, for example, apples, cherries, currants, etc. You can also make cabbage filling, for example, stew cabbage with mushrooms or carrots or add chopped egg with pickled cucumber).
There are many options, just look at the ingredients you have at home. It makes no difference what you fill the dough with. We are all different, everyone has their own taste. As the Russian proverb says: “There are no comrades according to taste.”
Also, if desired, you can fry such pies in vegetable oil, only the amount of sunflower oil for the dough will then need to be reduced by half.
