Ingredients for 2 baking sheets:

  • Flour - 100 gr.;
  • Olive oil - 3 tbsp;
  • Yolk - 1 pc.;
  • Hard cheese - (Parmesan, Masdam, Gruyere, etc.) 100 gr.;
  • Butter - 40 gr.;
  • Basil - a small bunch;
  • Paprika - to taste;
  • Nutmeg - to taste;
  • Salt - to taste.

Preparation:

  1. Grate the cheese on a fine grater. Chop the basil.
  2. Cut the cold butter into cubes.
  3. Combine sifted flour, yolk, butter, olive oil, basil and spices (salt, paprika, nutmeg) in a bowl. Quickly knead the dough, form it into a ball, wrap it in film and put it in the refrigerator for at least 1 hour.
  4. Cut the dough into 2-4 pieces, leave one (it’s convenient to work with cold dough) and roll out to about 3 mm thick.
  5. Cut out small triangles from the dough with a knife (by the way, you can make cookies of any shape), carefully transfer to a baking sheet lined with baking paper.
  6. Use a cocktail straw to make holes in the cookies.
  7. Bake in a preheated oven at 180 degrees. approximately 10 minutes. Keep an eye on the cookies, they cook and darken very quickly.

Recipe for browned cheese crackers with cumin and sesame seeds

Taking the recipe for our favorite cheese dough as a basis, we did a little magic on the composition and proportions and created crumbly cookies with dried herbs, sprinkled with grains of salt. A very cozy treat for a cup of strong sweet tea and a snowy December Saturday.

We will need:

  • 120 grams butter
  • 150 grams of any semi-hard cheese
  • 2 yolks
  • 250 grams of flour
  • a coffee spoon of salt and sugar
  • a generous pinch each of cumin, basil, coriander and sesame
  • half a coffee spoon of baking powder
  • 4-5 tablespoons of cold water.

Preparation:

  1. Place the butter in the freezer in advance (for 20-30 minutes)
  2. Grate the butter and cheese into a deep bowl, add sugar, salt, basil, coriander and cumin.
  3. Sift the flour with baking powder and mix everything well with your hands until coarse crumbs form.
  4. In a small cup, mix one yolk with cold water with a fork and quickly pour the mixture into the dough.
  5. Knead it well with your hands and roll it into a ball. You can put it in the refrigerator for 20 minutes or work immediately, sprinkling the table with flour.
  6. Roll out the dough into a layer 4-5 millimeters thick and cut out the figures. Line a baking sheet with parchment greased with sunflower oil, lay out the cookies and grease them with the second yolk. Sprinkle with sesame seeds and salt.
  7. Bake for about 25 minutes at 180-190 degrees. Can be served warm.

  • milk 100 ml.
  • sugar 1 tsp.
  • salt 1/2 tsp.
  • baking powder 1/2 tsp.
  • olives/sun-dried tomatoes (approx. a handful)
  • rosemary 1 sprig.

How to prepare:

  1. Preheat the oven to 180°C.⠀
  2. Grate the cheese on a coarse grater.⠀
  3. Grate the pre-chilled butter on a coarse grater.⠀
  4. Mix flour with baking powder, sugar and salt, add grated cheese and butter, rub everything into crumbs with your hands.

  7. Finely chop the olives/dried tomatoes, add to the dough and mix everything.⠀
  8. I divide the dough in half and add olives to one half and tomatoes to the other.⠀
  9. Form the dough into a sausage, wrap in cling film and place in the freezer for 15 minutes.⠀
  10. Cut the chilled dough into 1 cm thick circles.⠀
  11. Grease a baking sheet with olive oil, place cookies and bake in a preheated oven for 15 minutes.⠀
  12. I bake for 10 minutes on the “bread baking” mode and another 5 minutes on the “small grill” mode⠀

The proposed recipe saves time, food and baking paper. These cookies are cooked in a frying pan.

We recommend making quick cheese cookies from the following ingredients:

  • 2 eggs;
  • 2 table. l. flour;
  • salt - ¼ tsp;
  • low-fat cheese - 150 g;
  • pepper - approximately 10 g;
  • cooking spray, shortening or oil to grease the pan.

You will get 6-8 products. The express recipe is easy to remember:

  1. Coarsely grate the cheese. Mix eggs, flour, grated cheese.

  • If you couldn’t buy homemade cottage cheese and you have a low-fat product on hand, it doesn’t matter. Use it, but put not 2 tablespoons of oil in the dough, but 3. The dough should not crumble, the oil gives it an elastic structure. If the cottage cheese is too wet and the dough sticks to your hands, add a little more flour.
  • Roll out the dough thinly using a rolling pin. The thickness of the cake should be 1.5-2 mm. Cut the cake into small rectangles and triangles (3x6 cm). You can use a curly knife so that there are teeth along the edges of the products.

Place a deep frying pan on the fire, pour oil into it (oil depth is at least 1 cm). Heat the oil to 160-170 degrees. Dip the prepared pieces into boiling oil, fry until golden brown on both sides (1-2 minutes).

Place the finished products on a paper napkin so that it absorbs excess fat. It is convenient to remove cookies from the frying pan using a fork or slotted spoon. Place the cooled pastries on a plate.

  • flour – 100 g,

Preparation:

  1. Grate the cheese on a fine grater.
  2. Add sifted flour, sesame seeds, turmeric (or saffron), spices, mix.
  3. Add chopped cold butter, yolk and quickly knead the dough.
  4. Place the dough in the refrigerator for about an hour.
  5. Roll out, cut into pieces, cut holes in them like on cheese (with some suitable objects, I had metal nozzles for depositing round-shaped cream).
  6. Transfer to a parchment-lined baking sheet. Bake for 10-15 minutes at 180°C.
  7. Remove and let cool. Ready.

From puff pastry

A simple recipe for a crispy snack using a minimum amount of ingredients:

  • semi-finished puff pastry - 400 g;
  • any hard cheese - 300 g;
  • raw egg - 1 pc.

Prepare as follows:

  1. Three cheese on a grater. Take two layers of dough, brush both with beaten egg using a brush. Place the cheese on one layer and cover the top tightly with the second. Press down so that the cheese sticks to the dough.
  2. Cut the cheese dough into strips and brush with egg.
  3. Bake for 15 minutes at 200 degrees.

It is possible to diversify the recipe by adding spices: it could be paprika, Provençal herbs, sesame seeds, pepper, garlic.
