Ready-made puff pastry is now sold everywhere, you can buy it without any problems. And therefore you can quickly prepare something from it, for example, cookies with filling, any kind. This will take 30-40 minutes and the goodies are ready.

There are a great many recipes for baking puff pastry; today we will look at the smallest part of these recipes. And so, let's go.

What kind of puff pastry is there?

Before making puff pastry cookies recipes with filling, let’s remember what kind of dough is there? But it’s true, some people don’t know that there is a yeast-free puff pastry and a yeast one. They are slightly different from each other, as the name implies, and accordingly the baked goods are different.

Of course, it’s convenient to just go to the store and buy puff pastry, be it simple or yeast. And for those who want to try making the dough with their own hands, see the article: how to make puff pastry at home. There are several recipes and everything is described in detail. But I’ll tell you right away, it’s not as easy as it seems.

In this article, I made my own yeast-free puff pastry and made cookies from it. But the yeast puff pastry is purchased. It took me about 7 hours to make a simple dough, but the result is worth it))).

What is the difference in puff pastry?

  • Yeast-free puff pastry is made from unleavened dough (water, salt and flour) and butter dough (there is a lot of butter and a little flour). And by doing a lot of folding and rolling the dough it becomes flaky. It rises well and you can use it to make liver, puff pastries, cakes, strudels, and so on.   • Yeast puff pastry is prepared in exactly the same way, but the main dough is yeast. Here, of course, everyone chooses for themselves which test to use. This dough can be used to bake croissants, buns, Viennese pastries and much more.

Let’s start with the topic of puff pastry cookies recipes with filling, and the kids will love this recipe. These cookies will entertain your child and yourself, let's go.

Ingredients:

  1. Puff pastry (yeast-free) - 1 sheet;
  2. Egg - 1 piece;
  3. Jam (any) - about 6 tablespoons;
  4. Vanilla sugar - 2 tablespoons;
  5. Cinnamon - 1/2 tablespoon (optional).

Step 1.

In this recipe I will use my own puff pastry, this is how it turned out:

Place a sheet of puff pastry on the table and cut out circles. They can be cut out with special molds, or you can simply take a mug with a large diameter. We use two circles for one cookie, so the total number must be even.

Mix vanilla sugar and cinnamon. The latter may not be used as you wish. Now sprinkle all the mugs with this mixture.

Step 3.

Now prepare a baking sheet, line it with parchment paper and grease it with oil. We put the mugs there. They will be the bottom layer.

Step 4.

Now put a little less than a spoonful of jam on half of the circles, they will be the bottom layer. You can use it in any way, for example, I have an assortment of wild strawberries, raspberries and some blueberries.

Cut out triangles from pieces of dough and make ears out of them.

Now put the remaining circles on top. We press down a little from the edges, otherwise in the oven the edges may bend upward a little (this happened to me). Now beat the egg and grease our cookies.

Place in the oven preheated to 180°C for 20 minutes. But watch how they brown, you can take them out.

When ready, take it out and use a spoon with jam to make eyes, a mouth and a nose onto the finished baked goods. You get such funny faces.

Cookies with apples
We continue the theme of puff pastry cookies recipes in the oven. My child and I really liked these cookies, they are sweet and have an unusual taste.

We will need:

  1. Puff pastry (yeast-free) - 1 sheet;
  2. Green apples - 1-2 pcs;
  3. Peach or apricot jam - 100 g;
  4. Water - 50 - 60 g;
  5. Egg - 1 pc.

Step 1.

Peel the apples, cut them into slices and remove the core. Cut the apple into thin slices. Very thin, approximately 4 mm.

To prevent apple slices from darkening, you can dip them in cold water with a spoon of lemon juice.

Step 2.

Place jam and water in a small container, heat over low heat and stir for 2 minutes. We rub the resulting jam through a sieve.

Step 3.

Roll the dough a little and cut out rectangles. Small enough to fit in your hand. It is not necessary to make exactly the same ones, even if they are different and creative.

Prepare a baking sheet, put parchment on it and grease it with oil. Now we lay out our rectangles on it. We lift the edges of the rectangles with our fingers to create indentations. This is to prevent our jam from leaking out.

Now we place our apples in the middle in one layer, more densely. They will shrink in size as they bake. pour a thin layer of our peach (apricot) syrup on top. Not much, just to fill the bottom and voids.

Preheat the oven to 180 - 190 °C. Now beat the egg and coat the edges of the cookies. Place in the oven for 25 - 30 minutes. Once the edges are browned, take it out. If there is still syrup left, you can pour the rest. Let it cool and you can serve it with tea.

Cookies with filling

In addition to the usual cookie cutters designed for flat, patterned cookies, we were interested in finding a new type of cutter. This is what cookie cutters with filling became like. They are distinguished by a deeper indentation, a grooved surface of the indentation, an overall spoon-like shape, and the way the cookie itself is formed.

A recipe for cookies from oriental cuisine was tested. The cookies are called maamul.

For cookies you will need: 500 g flour, 250 g semolina, 200 g butter, 100 g vegetable oil, 150 ml water, 25 g powdered sugar, 4 g baking powder, a pinch of salt. And the filling.

The original maamoul dough also contains mahleb seasoning and rose or citrus water. We did not use these ingredients. The ratio of flour and semolina may be different, or you can do without semolina at all.

The filling can be the following: ground dates with spices, finely chopped nuts with sugar, finely chopped dried fruits and nuts, etc. In our case (in the photos) there were finely chopped dates mixed with cinnamon and a little water. The cookies turned out very tasty. I liked the nut filling much less.

Stage 1. Kneading the dough. Cut the butter into cubes in a bowl as finely as possible (or take already softened butter), add powder and salt, grind with butter. Add vegetable oil, stir thoroughly. Pour in water, stir. The mass will not be homogeneous, so do not stir for long. Separately mix dry ingredients: flour, semolina and baking powder. Pour the mixture into the first bowl. Knead the dough, first in a bowl, then with your hands on the table. If it is too sticky, add more flour. The dough should stick to your hands and the surface. Wrap the ball of dough in a bag or cling film and put it in the refrigerator for 1-2 hours (the dough should become evenly cold).

Stage 2. Filling. Remove the pits from the dates, finely chop the dates, place in a bowl, sprinkle with cinnamon to taste and pour in a few teaspoons of water to make it easier to mix. After mixing, press the mass with your hands so that it becomes denser. Then it will be easy to roll filling balls out of it.

Stage 3. Formation of cookies. Remove the dough from the refrigerator and take a cookie sheet. There is no need to grease the pan for this dough. Pinch off a piece of dough and roll into a ball. Place the ball in the mold, flatten it with your fingers into a cake that fits the entire cavity. The cake should protrude slightly beyond the edges of the cavity. Place a ball of filling in the center and flatten it slightly. Gather the dough piece over the filling into a knot. Flatten the resulting lump so that all the cookies are spread out along the recess of the mold (especially where the edges are) and do not protrude from the top. So it will then be flat on the bottom and beautiful on top. If the cookies turn out to be larger than the mold, next time you need to take a smaller ball of dough and filling. The most important point: take the spoon mold in your hand, hit it on the table and knock the cookies onto the surface. Continue this way until the dough and filling are finished.

It is convenient to use several molds at once; the process of forming cookies is greatly accelerated.

Stage 4. Bakery. Bake cookies in a preheated oven at 180 C for about 20-25 minutes. The cookies should remain white, while the dough should be baked. Cool the cookies. Sprinkle with powder.

As can be seen in the photographs, the texture of the dough was preserved after baking. And the cookies tasted excellent!

By the way, the first test was not so successful, perhaps there was an error during kneading - the dough spread after baking, not completely, but the relief was preserved worse (it seems that there was not enough flour in the dough, or the unheated oven played a role).

Continuing the theme of puff pastry cookies recipes in the oven, I completely forgot about the simplest recipe. It really couldn't be simpler. You need the dough itself, if you have it, then leave it for 20-30 minutes and you can serve it with tea. And if there are also different molds for squeezing out different shapes from the dough, then creativity and speed - a treat for tea is quick and easy.

Ingredients:

  1. Puff pastry;
  2. Sugar;
  3. Chicken egg - 1 pc.

Step 1.

We take out the dough and defrost it. Preferably as described in the test instructions.

Step 2.

Place the dough on the table. To prevent it from sticking, simply add flour to the table or place a silicone mat. Now, without rolling out the molds, we squeeze out the figures. You can simply use a glass, a shot glass, or cut different shapes and strips with a knife. In general, what and what comes to mind.

Place parchment paper on a baking sheet, grease with butter and place squeezed out or sliced ​​cookies. Do not place them close to each other, as the cookies will increase in volume.

Ingredients:

  • Butter - 250 g
  • Sugar - 125 g
  • Processed cheese - 70 g
  • Flour - 350 g
  • A pinch of salt

Preparing the dough

  1. Place soft butter, sugar, a pinch of salt and processed cheese in a bowl. Knead everything with your hands until smooth.

2. Add sifted flour and knead the dough. The dough should be dense.

3. Take part of the dough and form a ball between your palms.

4. Flatten the balls between your palms and dip sugar on one side and place on paper.

5. We will form the products using the Kinder Surprise toy.

6. Take the lid of the box and make oval indentations in a circle.

7. After applying the pattern, use your finger to make a depression in the middle of the blanks.

9. Bake the pieces in the oven at a temperature of 180 degrees for 15 minutes and at a temperature of 220 degrees for another 5 minutes.

Puff pastry cookies recipes in the oven are simple and quite quick. Now let's see how easy it is to make delicious croissants. Although they differ from store-bought ones, they are very tasty.

Instead of condensed milk, you can use absolutely any filling, the main condition is that it be thick. Then it won't leak out in the oven.

We will need:

  1. Puff pastry (yeast) - 1 sheet;
  2. Egg - 1 piece;
  3. Sugar;
  4. Condensed milk - about 6 teaspoons.

Step 1.

We take out the dough or prepare it ourselves. If you take it out of the freezer, defrost it.

Step 2.

Place the dough on the table, sprinkling it with flour or placing a silicone mat. Now you need to cut the strips lengthwise. I first divide it in half, and then the remaining strips into approximately equal pieces. But we make sure that we get narrow rectangles.

Next is the triangle mode. That is, we cut these rectangles diagonally so that we get elongated triangles. As in the photo below.

Now we begin to lubricate the widest part and upwards above the middle with condensed milk. Leave the edges empty. It is necessary to take into account that the condensed milk will melt and spread. Make the condensed milk layer thin.

Now, from the widest base, we begin to wrap it in a spiral so that the narrow part is in the middle of the cookie.

Now put parchment on a baking sheet, grease with oil and place on a baking sheet, leaving a little space between the cookies.

  • Egg.
  • Two large spoons of sour cream.
  • A pinch of table salt.
  • 80 gr. frozen butter.
  • Three large spoons of boiled condensed milk.
  • 50 grams of sugar powder.
  • Wheat flour is sifted using a sieve. Combine with table salt. Sugar powder, grated butter, egg, and sour cream are added to the resulting mixture. The dough is formed into a ball, which is covered with food grade film. It needs to be put in the refrigerator. After fifteen minutes, the mass is taken out and leveled with a rolling pin. Using a mold, cut out circles from it. In each of them you need to make a depression and place condensed milk in it.

    The delicacy is placed on a baking sheet and put into the oven. The dessert takes fifteen minutes to prepare. Round cookies with condensed milk are a popular sweet recipe.
