After all, sugar, in interaction with other products, will soon begin to melt, the mass will become more liquid and will spread out of the dough. To prepare it, you just need to mix all the products from the list until smooth.

7.Now that the dough has risen, we need to press it down. It is quite sticky, so grease your palms with oil. Divide it into equal balls - blanks for pies.

8.Using a rolling pin or your hands, stretch each ball into a flat cake. Place the filling in the middle and make cuts on both sides. This is shown in the photo. But, if you want, you can use another sculpting method.

Let's prepare the filling. Add semolina, powdered sugar and vanilla sugar to the soft cottage cheese. Cover with cling film.

For the dough - crumble the yeast into a bowl for kneading the dough, add sugar, pour in the milk, sift in the flour, stir with a wooden spoon so that the yeast dissolves, leave for 20 minutes to rise.

When kneading yeast dough, it is very important that all products are at room temperature. It is advisable to remove the eggs from the refrigerator in advance.

1. Prepare the products according to the recipe. Wash the eggs with warm water and soapy water.

2. Heat about 100 ml of milk to a temperature of 35 - 45 * C, add yeast, add a pinch of sugar, stir and leave for 15 - 20 minutes so that they begin to live.

3. Break 2 eggs into the thermomix bowl. In the third, separate the yolk from the white. We leave the yolk for lubrication, and the white goes into the dough. Add sugar.

4. Beat at medium speed for 2 minutes until foamy.

5. Melt butter and margarine on the stove or in the microwave. Pour into the egg-sugar mixture.

6. Heat the milk to 50* C and also pour it into the bowl.

12. Our dough has risen. It became more obedient, less sticky.

13. Take it out of the bowl and knead it with your hands dipped in vegetable oil. It is during kneading that we introduce 1.5 - 2 tbsp into the dough. spoons of vegetable oil. Cover the dough and leave for 30 - 40 minutes to repeat.

14. Our dough has increased in volume and we can start cutting.

15. Divide the dough into two parts. We roll out most of it to the size of the baking sheet, and leave a small piece for decoration.

16. To form sides, fold the edge of the dough up and inward and press.

17. Transfer the pie preparation to a greased baking sheet and place it seam side down. If you use a silicone mat or special paper for baking, you only need to grease the edges of the baking sheet.

Place the raisins in a bowl and pour boiling water over them, leave to soak for 5 minutes. Then drain the water from the raisins and add them to the curd mass, stir everything until smooth. After an hour, our dough should have risen well, so we sift the remaining flour into the bowl with the dough and add salt, mix everything thoroughly. Add softened butter and egg. Now we need to knead a soft and elastic, airy dough that should not stick to our hands. If it still sticks, you need to add a little more flour. Divide the finished dough into approximately 20 equal parts and form them into balls. Now cover the balls with a towel and leave to rise for 10 minutes. Then we sprinkle flour on the table, take one ball and knead it with our hands into a flat cake. We put the filling in the middle of the flatbread, connect the edges of the dough and form a small pie, do the same with the rest of the dough. Line a baking tray with baking paper, place the pies on it, seam side down, and leave to stand for another 20 minutes.
