Lenten charlotte is a wonderful pastry for tea.
It’s easy to make, and in terms of taste it’s not inferior to the one in which eggs, milk and sour cream are placed. In many places in our Motherland, the year turned out to be a very apple year, which means that in the generous autumn evenings, almost all families will have a delicious tea party with the most popular apple pie. The recipe for lean apple charlotte will help to please your dear household on the cold autumn evenings of fasting days.
Features of preparing lean charlotte
The classic sponge cake recipe is based on using a large number of eggs, but this is unacceptable in Lenten baking. The dough for lean charlotte with apples is mixed with different liquids. The base of the pie can be:
- water;
- fruit juice or compote;
- liquid honey;
- jam;
- infusion of dried fruits;
- Herb tea.
Using baking powder, baking powder or soda slaked with lemon juice makes the dough fluffy and airy, and the cake crumbly. Be sure to add sugar.
Lenten charlotte becomes rich thanks to the use of vegetable oil. It is advisable to use refined, odorless oil, such as sunflower or grape seed.
Various spices (cinnamon, lemon zest, star anise, vanilla, cardamom) enrich the taste of the pie, making the charlotte even more aromatic.
The apples for the filling should be juicy and firm, not too sweet or even slightly sour. You can cut them in different ways: into large slices, half rings or cubes, but the thinner the slice, the better the apples will bake.
Pears, citrus fruits, dried fruits and nuts are also added to the filling. This will diversify the taste of charlotte.
Charlotte without eggs, milk and sour cream
Ingredients
- apples 4–5 (it is better to take sour varieties)
- flour 1.5 cups
- warm water 2/3 cup
- sugar 2/3 cup
- vegetable oil 3 tablespoons
- 2 pinches of salt
- a pinch of soda
- vanillin
Preparation
Apples are peeled and cored and cut into pieces approximately 3–5 mm thick. Place on the bottom of a greased form.
Next, heat the water to about 40 degrees. Add sugar, salt, vanillin and soda.
Add flour to the resulting mixture and mix. By the way, the choice of whole grain flour will give the lean charlotte a special taste, and it will only have health benefits. Measure out about 3 tablespoons of vegetable oil, add to the dough, mix. Pour the dough onto our apples, spread it with a spoon so that it covers all the pieces.
Readiness can be determined when the edges of the dough move away from the sides of the pan. It is important not to overcook the baked goods in the oven, as the apples may burn, which will give the pie a bitter taste. Place in the oven for 40 minutes at a temperature of about 180 degrees. Before serving, you can sprinkle the lean charlotte with powdered sugar, which is completely optional, since there is a lot of sugar in the recipe.
Lenten dough is distinguished by its callousness. But this is only on plus lean charlotte. The pie turns out crispy over the entire area, which goes perfectly in taste with baked apples in baked goods.
Lenten charlotte with orange juice
Ingredients
- apples (sweet and sour, hard varieties) - 3–4 pieces
- orange juice (any) - 150 ml
- water - 100 ml
- odorless vegetable oil - 50 ml
- wheat flour - 300 g
- sugar - 150 g
- vanilla sugar - 1 teaspoon
- salt - 1/3 teaspoon
- baking powder - 10 g
- soda - 1/3 teaspoon
Preparation
Wash the apples, peel them, cut out the core, cut into slices, then into medium cubes. Pour orange juice, water and vegetable oil into a bowl. Add sugar, vanilla sugar, salt. Mix with a whisk. Add baking powder and soda to the sifted flour. Mix. Gradually add flour to the liquid mixture and mix. The dough should be homogeneous, without lumps. Cover the bottom of a springform pan (form diameter 24 cm) with parchment and grease with vegetable oil. Place the apples in the mold. Fill the apples with dough. Bake lean apple pie in a preheated oven at 180 degrees for 30–40 minutes. We determine the readiness of the pie with a wooden stick: when piercing there should be no traces of raw dough. After the apple pie has cooled, sprinkle powdered sugar on top.
Lenten pie with apples in a slow cooker
List of ingredients:
- vegetable oil – 3 tbsp. spoons;
- flour – 320-350 g;
- honey/sugar – 6-7 tbsp. spoon;
- brewed tea – 100-120 ml;
- apples – 3 pcs;
- vanilla;
- cinnamon – 1-1.5 teaspoons;
- baking powder – 2-2.5 teaspoons.
Time required: 85 minutes. Number of servings: 6. Kitchen appliances and equipment: dough container, frying pan, grater, sieve, baking dish.
- Pour tea into a deep bowl, add sugar or honey and vegetable oil. Stir thoroughly.
- Mix the sifted flour with cinnamon and baking powder.
- Pour this mixture into a bowl with liquid ingredients.
- Breaking up the flour lumps, knead the dough, similar to thick sour cream.
- Using a vegetable peeler, peel the apples and cut out the hard core.
- Cut the apples into thin slices.
- Remove the bowl from the multicooker and lightly lubricate it by pouring in a little refined vegetable oil.
- Place the first layer of the fourth part of the dough. Top with a third of apple slices. We do this two more times.
- Place the bowl back into the slow cooker.
- Set the appropriate baking mode. Turn on the timer for 80 minutes. If your model does not allow you to set all the time at once, then set the maximum possible, and after the timer fires, add the remaining time.
- Ready-made lean and aromatic apple pie, cooked in a slow cooker. Let cool.
- If desired, sprinkle cocoa powder on top, which can be mixed with powdered sugar.

Lenten pie with apples without eggs

Dough:

Baking powder for the dough | 8-10 g |
Filling:
- cinnamon – 1-1.5 teaspoons;
- medium apples – 3-4 pcs;
- granulated sugar - 2 tbsp. spoons;
- any honey - 2 tbsp. spoons without a slide;
- water – 1.5-2 tbsp. spoons.
Kitchen appliances and equipment: dough container, frying pan, grater, sieve, baking dish.
Preparing the filling
- We divide the washed apples into parts and cut out the core.
- We cut each part into slices of small thickness.
- Heat up the frying pan. We put honey, cinnamon and sugar in it. Pour water and stir. It will be tastier if you replace the water with any fruit juice. For example, squeeze it out of an orange, and
- Grate the zest on a fine grater into the dough.
- Cook for 2-3 minutes. We put apples. Stir and turn off.
- While the filling is cooling, let's make the dough.
Knead the dough
- Add baking powder to the flour. Sift the mixture and add water, stirring constantly.
- Knead the thick lean dough for apple pie. If necessary, add a little more flour.
Cooking a pie
- Preheat the oven by setting the temperature to 190° .
- Pour some vegetable oil into the mold and grease it. Sprinkle with crackers, semolina or flour.
- Spread the apple filling evenly from the pan.
- Fill with dough and place the mold on a baking sheet or wire rack.
- Bake for 45-50 minutes. It may take longer depending on the size of the pan and the thickness of the cake.
- Turn the finished Lenten pie with apples and cinnamon onto a plate or dish with the filling facing up. Cool and serve.
