Recipe for invisible apple pie that melts in your mouth

Warm or cold, dusted with powdered sugar or topped with chocolate, almond flakes, whipped cream or vanilla ice cream... this apple invisible pie simply melts in your mouth, with a truly great taste.

The pie is called Gateau Invisible because, according to one version, the apples become invisible after baking. In the French recipe, the apples are sliced so thin that they probably disappear. But our versions that I found use thicker apple slices, so the pie becomes a layered apple dessert with a smooth custard.

How to Slice Apples for an Invisible Apple Pie

Correctly cut fruits, by the way it can be pears, are the most important stage in preparation. Here are some tips with photos.

We choose sweet varieties. Completely clean the peel. Using a sharp knife, cut off the part on the left and right, as close to the core as possible.

Turn the slices over with the flat side (cut side) down. Slice the fruit evenly and thinly. The plates should be 2 mm thick. If they are too thin, they will break before your knife reaches the end of the apple.

You can use a shredder and the slices will be even thinner. However, when mixed with batter, they disintegrate. Also, during baking, they can melt and the pie will turn into porridge.

You can get the optimal thickness of apple slices only by cutting them by hand, as thin as possible.

How to make an invisible apple pie that melts in your mouth

  • Apples – 700 gr
  • Eggs - 3 large pieces
  • Sugar - 150 gr
  • Milk – 120 ml
  • Melted butter - 1 tbsp.
  • Flour - 90 gr
  • Almond flakes – 40 g
  • Powdered sugar for sprinkling

Peel the apples and cut into very thin slices, about 2 mm thick. Preheat the oven to 180°C. Line a 20cm x 10cm baking pan with parchment paper.

Let's make a simple dough that can be mixed with a whisk. We can do without an electric mixer. Beat the eggs and sugar until they reach a whitish foam. Pour in milk and melted butter and knead into a homogeneous mass.

Sift the flour with a special mug or through a strainer. Add gradually, stirring each time. Add chopped apples in two stages. We try to separate the stuck together pieces before pouring them into the dough. Using a silicone spatula, mix with progressive movements from bottom to top until the slices are completely enveloped by the liquid dough.

Layer the apples in a pan lined with baking paper. Pour out the remaining liquid cream. Sprinkle with almonds.

Place in the oven and bake for 40 minutes. Cover the top with foil and bake for another 10-20 minutes until done. Check with a wooden skewer or toothpick. The baking time varies depending on the number of fruits and their juiciness. The recipe is also suitable for a multicooker; bake on the Baking mode for 40-50 minutes.

Let cool to room temperature. Place in the refrigerator overnight to allow the custard to set. Just before serving, take out the cooled pie. Sprinkle powdered sugar on top and cut with a sharp knife.

Experiment with the number of apples, put less, but then the layers will decrease, and accordingly the height of the pie. If you want a higher one, add more apples, up to 900 g, otherwise the baked goods will become thin. Or just take a narrower shape.

If desired, add a little cinnamon for a traditional apple pie taste.

The final stage

We take our almost baked pie out of the oven. Drizzle egg dressing on top. Sprinkle with nuts/almonds/crushed cookies/coconut shavings and so on, as desired. Reviews recommend serving the “invisible” apple pie the next day, since it seems a little raw when freshly baked. It takes time for the apples and powder (it is important that it is a dry mass and not jam) to absorb the remaining liquid. So, put the pie back in the oven and bake for another ten minutes or a quarter of an hour. After cooling the culinary product to room temperature, put it in the refrigerator.

“Invisible” apple pie in a slow cooker

This recipe is suitable for kitchen machines, Redmond, Philips or Polaris. The main thing is to calculate so that the amount of baked goods fits normally in the bowl. We prepare both the dough and apple slices in the manner described above, as for a conventional oven. We put the unit in the “Baking” mode for fifty minutes. A quarter of an hour before the end of the program, open the lid and add the filling. Maybe you won’t get such a crispy crust on top as with the classic cooking method, but it will still be delicious. Can be served warm, like apple strudel, with a scoop of ice cream on top. Or keep it overnight in the refrigerator. Then the pie will resemble the French “invisible” dessert.

Stage 5: Filling

While our “Invisible” apple pie is baking, the recipe with photo suggests making a dressing for it. To do this, beat one egg with eighty grams of sugar. If possible, use cane brown sweetener - it works great in the oven and caramelizes rather than dissolving and melting. When the egg mass beats to a white foam, pour two tablespoons of melted butter into it. Let's roast a handful of walnut kernels in a dry frying pan. At this stage, you are allowed to give free rein to your culinary imagination. Walnuts can be replaced with almonds, wafer crumbs, and roughly crushed cookies. If we opted for nuts, they need to be chopped a little. We take a rolling pin and get to work.
