No holiday, especially a birthday, is complete without sweets and desserts. For ease of serving, you can prepare individual cupcakes with filling and a top of cream.

How to make a “Holiday Cupcake”

Prepare all ingredients.

Pour boiling water over dried apricots and raisins and leave for 10 minutes.

Grind margarine or butter with vanilla and sugar.

Add eggs and stir.

Add washed and dried raisins, chopped dried apricots and chopped nuts.

Mix everything again. Add flour and baking powder.

The dough should be quite viscous.

Transfer the dough into a greased pan. Bake at 180 degrees for about 1 hour.

The festive cupcake is ready. Cool on a wire rack and decorate to taste.

I drizzled melted chocolate over the cake and sprinkled chopped walnuts on top. You can decorate the cupcake with frosting or simply sprinkle with powdered sugar.

“Men’s cupcakes” - on the eve of Defenders of the Fatherland Day

The candy-pink Valentine's Day swept past us like a light drifting snow, and the whole country began to joyfully and slightly tensely await the onset of one of the most powerful and serious holidays in the Russian state - Defenders of the Fatherland Day.

Harry, on the eve of the holiday, decided to shake the rigid link a little: “confectionery - girls” and come up with something like that - at the same time tasty, but also suitable for us - the muscular-stubble half of humanity!

Recently, having seen with what ease girls buy all sorts of sweets, muffins and cupcakes along with coffee, and men scratch their heads in thought, not knowing what to take to a cafe (tasty and at the same time filling), it dawned on me the thought of “man cupcakes.”

Thought - done!

So - in addition to the classic ingredients for the cupcake - we take mushrooms (preferably wild mushrooms, of course - but fresh oyster mushrooms or champignons are also suitable), chicken and cheese.

We take chicken - boneless thighs (one or two is enough).

They are undoubtedly closer to us men! (breasts - we’ll leave healthy lifestyle to the nicknames)

For cheese - we take any semi-hard or hard uncured cheese with a creamy “tend” (Russian, Smetankovy, Oltermani, etc.).

First - of course, we fry the mushrooms (with finely chopped onions) - undoubtedly better - in melted butter (which, by the way, we switched to after a trip to Italy - there almost everything is cooked with it (and also with good beef fat) - especially in the alpine zone).

With some skill, you can simultaneously fry chicken thighs, cut into small pieces, in a nearby frying pan.

My version of frying is this: into heated oil we throw 2 cloves of garlic, crushed with the flat side of a knife (as they show in cooking shows), after 2-3 minutes of frying (until the garlic starts to burn and stink) - we take it out and throw it away. Add the chicken and fry it, stirring, until golden brown.

Then - 5-7 minutes before turning off - add salt, a little ground red pepper and a couple of pinches of chicken seasoning.

After turning off the mushrooms and chicken, prepare the filling: cut the ham and cheese into small cubes. Once the mushrooms and chicken have cooled, chop them finely (it’s convenient to press the pieces with a fork and chop them finely with a knife).

Now - the main thing...

Dough!

It is made extremely simply (I give the quantities for 6-8 small cupcakes):

  • first, put the ingredients out of the refrigerator to warm up (everything should be at room temperature):
  • Butter (a quarter of a stick), when it becomes soft, grind it with 2 tablespoons of granulated sugar in a deep bowl (where the dough will be) - you can stir with a large spoon (male culinary specialists - undoubtedly take a brutal spoon) or a strong whisk - until the mass is will become a little “fluffy” and snow-white.
  • Add an egg and a third of a glass of kefir (if you don’t have it, a couple of spoons of sour cream, slightly diluted and mixed with milk), a couple of pinches of salt will do. Also, obviously it wouldn’t hurt to add 20-30 grams of cognac or rum (We are Men!) into the dough (you can add the same amount inside!). But in principle, you can do without alcohol.
  • Mix everything very well (with a whisk, mixer) and begin to add the sifted flour and stir... in the middle of the flour kneading process, add half a spoon of (tea) baking soda. We're mixing everything up again. All it takes is a full glass of flour (take extra wheat).
  • The thickness of the dough, as a result, should be denser than dough for pancakes and pancakes, but thinner than for pies (it should slowly but still drain from a spoon turned on its edge).
  • Coat with soft butter (you can use your finger) - cupcake molds (Silicone in molds rules! (Damn - I didn’t think I’d say such a pun)). Fill the molds one-third full with dough and carefully put on top a little mixture of small pieces of boiled-smoked brisket (buy it so that it has veins - “salt meat”) and cheese. Similarly - pieces of chicken and cheese, and the third type - mushrooms and cheese. But of course you can make cupcakes with one or two filling options. Try not to press the pieces too hard against the edges of the mold.

  • Carefully spoon a little dough into each mold so as to hide the first layer of filling. After doing this procedure with all the forms, add another small layer of the same filling.
  • Using a spoon, cover the second layer of filling again with a small amount of dough. So - your forms should be filled 2/3 - with dough (with filling inside), in principle - you can fill a little more - for example - 4/5. It should look something like this:

  • Place all the molds on a baking sheet in the oven, preheated to 190-200 degrees
  • As soon as the cupcakes “come out” like a lump from their molds, set the temperature to 180 degrees and bake until the tops turn brown.
  • All! Take it out, cool it a little and GO! - taste!

If you ask me how and with what to eat them, I will try to give you advice.

In the morning - with tea or coffee (you can cut this cake in half in height - and spread it with butter or soft cheese - this will also be great!).

You can take the cupcakes with you for lunch to the office (nourishing and enjoyable), or you can use them in the evening, with wine, as a confectionery addition.

Of course, they won’t go with any wine - you’ll have to take dry or semi-sweet sparkling wine, and a dense and sweetish wine - such as Cahors or semi-dry wines made from withered grapes - will also go well.

Thick Shiraz would also be great!

Of course, men can use this recipe on their own, however, if the “mistress of the house” (or just a girl) bakes such a “dessert” for her “defender,” I think he will appreciate it, especially on the eve of Defender of the Fatherland Day.

How to make "Birthday Cupcakes"

To prepare the dough, combine eggs with sugar. Beat them into a fluffy mass.

While the eggs are beating, bring the milk and butter to a boil. Wait for the butter to melt.

Sift the flour with soda and vanilla so that it is saturated with oxygen and the dough is fluffier.

Gently whisk the flour and liquid mixture into the dough. The dough should remain fluffy and airy.

Pour the finished dough into muffin tins, filling them only 2/3 full, as the dough will rise during baking. Place in the oven preheated to 180 degrees for 20-25 minutes.

Cool the finished muffins and remove the core. Fill the inside of the cupcakes with filling - confiture, jam, chocolate.

For the cream, combine heavy cream with powdered sugar and beat into a fluffy, stable mass.

Using food coloring, decorate the cupcakes to your liking. Let them sit in the refrigerator for a while so that the cream hardens a little. Enjoy your tea!
