Cottage cheese pancakes - a step-by-step recipe for fluffy cheese pancakes just like in kindergarten

Cheesecakes can be made thin, like pancakes, or you can make them more fluffy, like we were fed for an afternoon snack in kindergarten. To get a dessert that many people have known since childhood, we need to increase the amount of flour. The ease of preparation of this dish puts it among the breakfast leaders.

Ingredients:

  • Cottage cheese 9% – 400 g
  • Egg – 2 pcs.
  • Wheat flour – 1 tbsp.
  • Salt – 1/2 tsp.
  • Sugar – 2 tbsp. l.
  • Soda – 1 tsp.
  • Table vinegar 9% – 1 tbsp. l.
  • Vegetable oil for frying

In a deep bowl, beat the eggs with a mixer, gradually adding sugar and continuing to beat until a thick foam forms.

Sift the flour into a separate container, add salt, then gradually add the beaten egg mass and cottage cheese, mashed until smooth. Now we will add slaked soda to the dough.

To get slaked soda, we pour it into a glass and add table vinegar. If you've never done this before, don't be alarmed when the baking soda reacts with the vinegar and starts to foam a lot.

Important! The cottage cheese should not be greasy and wet, otherwise the cakes will begin to spread across the pan.

Mix everything well. This is the curd mass we got.

Now knead the resulting mass well until the lumps disappear. Form small balls and fry on both sides until golden brown over low heat.

Place on a plate, sprinkle with powdered sugar and cool. To remove excess oil, line a plate with a paper towel or napkin.

The cheesecakes are ready! Enjoy your meal!

Bon appetit!

Add another 0.5-1 spoon of flour, you will get fluffier curds in the pan

Secrets and options for making curds from cottage cheese

Finding out the secret of making delicious cottage cheese from professional chefs is unrealistic, although what does their opinion mean compared to the ability of our mothers and grandmothers to prepare this dish. Here, based on this, we can highlight several secret points for preparing cheesecakes:

  • Before preparing cheesecakes, choose fresh cottage cheese, preferably homemade, and squeeze it well to remove excess moisture. The less whey remains, the better and more satisfying the final product will be. Moreover, the drier the cottage cheese, the less flour you will have to add to it, which means the healthier the cheesecakes will be.
  • To make the cheesecakes super tender, especially for children, the cottage cheese can be rubbed through a sieve or blended in a blender until smooth. This will make your dish lighter and more pleasant to taste; the consistency of the cottage cheese is very important!
  • To avoid adding flour, be sure to add an egg; depending on preference and diet, you can add a yolk or white (for those who want to lose weight).
  • Cheesecakes will not turn out whole and fluffy if they contain a lot of sugar, so it is better to add natural flavoring - a pinch of vanilla or cinnamon, banana.
  • Cook with vegetable oil
  • Flour can be replaced with starch, semolina, and ground oatmeal.

History of cottage cheese

Cottage cheese is considered a national dish of Russian, Belarusian and Ukrainian cuisine. The exact origin is unknown, but we can say with confidence that this dish is prepared differently in different countries. They add flour and starch, semolina as a cocoa sweetener, vanilla, fruits, berries and dried fruits, and also make them salty, with dill and other herbs.

Cottage cheese is prepared almost the same way everywhere: pressed cottage cheese is mixed with eggs and flour or its substitutes, but the method of preparation is different for everyone. Eastern cuisine suggests baking cheesecakes in the oven or cooking in boiling oil. We are accustomed to traditional frying pans. Cottage cheese is served with condensed milk, especially in Belarus, with sour cream in Ukraine, as well as with jam and honey, as many Russians do.

Recipe 4: tender airy cheesecakes (with photo)

Cheesecakes are very tender in taste, airy, with a pronounced curd flavor.

  • 200-250 g cottage cheese
  • 5 tbsp. l. sour cream
  • 3 tbsp. l. flour (I used whole wheat)
  • 2-3 tbsp. l. Sahara
  • 2 tbsp. l. butter
  • 2 eggs
  • 1 tsp. vanilla sugar
  • 3/4 tsp. baking powder
  • a pinch of salt

Unlike traditional cheesecakes, the dough for these cheesecakes does not hold its shape, so they need to be baked in molds. I use silicone muffin tins. I put the dough into 12 molds and bake them at once. Instead of flour, you can add semolina to the dough, but then the cheesecakes taste more like cottage cheese casserole. Cheesecakes made from homogeneous cottage cheese will be more fluffy.

Mix cottage cheese, eggs, sugar and vanilla sugar in a bowl.

Then add soft butter, sour cream, flour, baking powder and salt.

Mix well. The dough is of medium thickness.

Divide the dough into lightly greased molds.

Bake for 20-30 minutes in an oven preheated to 180 C.

Carefully remove the completely cooled cheesecakes from the molds (they are very tender)! The finished cheesecakes have a slightly dense crust and a soft, moist center.

A tasty and healthy dish of well-known cheesecakes, but in a new version is ready!
