Being the mother of two charming daughters, one of whom is kindergarten age, and the other of school age, you can understand my incredibly sensitive attitude towards creating our family menu, because food in a house where small children are raised should not only be tasty.

The requirements for a child's diet are much higher and more serious - everything that first falls into the child's hands and then into the mouth must, first of all, be as healthy as possible... And this approach, as for me, most categorically excludes consumption today what is sold in the store.

The point is that the search for really good and high-quality food products can now drag on for a long time - it’s much faster and cheaper to cook something simple and tasty at home - well, if, of course, there is such an opportunity.

Personally, I have such an opportunity, which makes me incredibly happy - my mother-in-law and I grow all possible vegetables and most fruits on her plot (she lives in the suburbs)... Next door to her we have, as they say, a “familiar cow”, thanks to which I always have the entire list of dairy and fermented milk products in stock.

So I take advantage of this opportunity all the time - I cook for both my husband and children even what some families prefer to buy in the store. By the way, this applies not only to full meals, but also to various kinds of snacks. For example, at school. A quick snack for a schoolchild is an important component of his daily menu. For many, choosing such a snack turns into a problem.

To solve this particular problem, all kinds of cupcakes and muffins were, are and will be very convenient for me personally. Today for you is a recipe for cupcakes with sour cream in silicone molds. I decided to share it with you, since it is the most successful and easy-to-prepare baked goods, and is an excellent snack for a schoolchild.

Mini cupcakes with kefir and raisins

When preparing mini-muffins with kefir, the dough should turn out liquid, but in the end the baking will be in no way inferior to the previous one. The recipe is for 24 cupcakes, but the number will depend on the size of the molds, so you may end up with less. When preparing cupcakes according to the recipe in the photo using silicone molds, kefir can be replaced with sour cream, then they will turn out more fluffy.

Ingredients:

  • butter – 1 pack (or 200 gr.);
  • eggs – 4 pcs.;
  • sugar – 200 gr.,
  • soda – 0.5 tsp;
  • kefir - ½ tbsp.,
  • vanillin - a pinch;
  • flour - 2 ½ tbsp.

Raisins are used for the filling.

Preparation:

  • Melt margarine or butter in a water bath. To do this, pour more water into a saucepan and bring to a boil. Place butter or margarine in a smaller saucepan. Place it in a large size, turn off the heat. Thus, due to the hot water, the butter will quickly melt and become hot.
  • Add sugar to hot oil and stir. Add the eggs and beat the resulting mass with a mixer or whisk.
  • Add vanillin, soda or baking powder and kefir, continue beating the mass, adding flour in small portions. It is necessary to work with a whisk or mixer until the lumps of flour disperse.
  • The cupcakes need to be baked in a preheated oven at 180 degrees. Therefore, it is worth turning it on in advance.
  • Place silicone molds, lightly greased, on a baking sheet. Fill them halfway with dough, place a few raisins on top and lightly fill with the remaining dough.
  • Muffins are baked for only 15-20 minutes at 180 degrees.

Advice!

The cupcakes are placed in the oven, heated to 180 degrees; this temperature must be maintained throughout the entire baking process.

How to make cupcakes. Recipe with sour cream

  1. First, we need to break the chicken eggs into a deep bowl.

  2. And then add regular and vanilla sugar to them.

  3. Armed with a mixer, beat everything until the sugar crystals dissolve as much as possible.

  4. At the next stage, add a glass of good homemade sour cream to the resulting egg mass.

  5. And beat everything again.

  6. Now is the time to sift the flour and baking powder again - it’s convenient to do this directly into the container where the egg-sour cream mixture is located.

  7. Again, beat everything well (until the lumps disappear).

  8. The very last thing we do is grate the peeled apple.

  9. And add it to the dough.

  10. Now just mix gently with a spatula.

  11. All that remains is to fill the silicone cupcake molds with the prepared dough - usually the output is 12-14 pieces.

  12. Bake for about 20 minutes at a temperature of 180-190 degrees. As you can see, the recipe for cupcakes in molds with sour cream turned out to be very simple and quick.

  13. Cool the finished cupcakes (we check this with a toothpick) completely, remove them from the molds (usually there are no problems with this) and generously sprinkle with powdered sugar - well, to make them prettier.

Zebra cupcakes with sour cream 2 – recipe

Zebra cupcakes prepared with sour cream in silicone molds turn out fluffy and very soft. For decoration you can use creamy white cream, see recipe with photo. This dessert will look great on the holiday table.

Ingredients:

  • eggs – 2 pcs.;
  • sugar – 1 tbsp;
  • sour cream 20% fat – 200 g;
  • soda – 1 tsp;
  • flour – 120 gr.;
  • cocoa powder – 1.5 tbsp. l.

Preparation:

  • Since the cupcakes will be made from two types of dough, divide all the ingredients in half, except for the flour. For white dough you will need 70 grams, and for chocolate dough - 50 grams and cocoa.
  • Pour 0.5 tsp into each portion of sour cream. baking soda, leave to simmer for 5 minutes.
  • We make white dough. Mix 1 egg and 0.5 cups of sugar with a whisk, add 100 grams of sour cream with baking soda in it. Pour 70 grams of sifted flour into the mixture and mix thoroughly with a whisk.
  • The dough should be liquid.
  • Chocolate dough. Using the remaining ingredients, make the second dough in the same way. At the end, add cocoa powder along with the flour.
  • Filling out the forms. Alternately pour the dough into the silicone molds, 1 tbsp. spoon white, 1 tbsp. spoon of chocolate. The principle of filling molds is similar to making a Zebra cake.
  • Place the cupcakes in a preheated oven at 180 degrees. Bake for 20-30 minutes.
  • To decorate the cupcakes we use a French star tip with a diameter of 8 mm and creamy white cream.

Advice!

If you want the muffins to be airy, beat the whites separately from the yolks. Use ingredients at the same temperature.

  3. Sift flour together with baking powder. Combine the ingredients together and sift through a sieve.

  4. Add the sifted flour to the bowl with sour cream and other ingredients in portions. Make sure there is enough flour. If you see that there is a lot of flour, do not add any more. The consistency of the mixture should be similar to thick sour cream.

  5. Mix the dough well with a spatula, adding more flour if necessary.

  6. Beat the dough with a mixer. Add two tablespoons of vegetable oil and mix again using a spatula.

  7. Divide the dough into 2 parts. Pour one part into a separate bowl and add cocoa powder there. Beat the mixture well with a mixer. As a result, we get two tests - white and dark.

  8. Take cupcake molds. Grease them with oil and sprinkle with flour.

  9. Lay out the two doughs in layers and carefully form the top using a spoon.

  10. Place the dough in the oven and bake the cupcakes at 180 degrees for 20-25 minutes.

  11. Take out the cupcakes and leave to cool for 5-10 minutes.
