  1. Place the flour in a deep plate. Add salt, sugar and baking powder to it immediately. Sifting is not necessary.

  3. Using a spoon, place the smooth and sticky dough onto a hot frying pan. Fry over moderate heat.

  4. After the crust has formed, turn the product over using a slotted spoon or spatula.

Classic pancakes with kefir

Ingredients:

  • 150 grams of wheat flour
  • teaspoon (level) baking powder
  • one third teaspoon baking soda
  • one chicken egg
  • 40 grams butter
  • 0.2 liters of kefir
  • 20 grams of granulated sugar
  • salt on the tip of a spoon

Recipe:

  1. Kefir is mixed with egg.
  2. Then granulated sugar, butter melted in a water bath and salt are added.
  3. Flour is mixed with soda and baking powder and poured into the kefir mixture.
  4. The dough is mixed well.
  5. Kefir pancakes are fried for two to three minutes on both sides in a frying pan without oil, under a closed lid.

I really like to bake pancakes and classic Russian pancakes, familiar from childhood, for breakfast, and I’m not even talking about Maslenitsa.
But it was somehow far from the traditions of American cuisine, although everyone around me had already become real pancake makers, including my friend Anyuta Bublichkina. You will laugh, but I couldn’t cook pancakes right away, even with a step-by-step recipe on hand. Then I began to study the basic rules and common mistakes when preparing this dish, including on bourgeois forums. Now, I hasten to share my findings with you. I am sure that thanks to them you will be able to avoid many mistakes.

Product quality

This is a very important factor, for example, baking powder older than six months can ruin the whole picture. This is because the soda included in the mixture must, after reacting in an acidic environment, raise the dough. The process ensures that the pancakes are fluffy. Particularly advanced cooks do not recommend taking baking powder from a previously opened package.

We will not talk about the freshness of eggs, milk and butter at all - this is already clear. So, when choosing products, pay attention to their shelf life.

Secrets of pancake dough

What can we say, the pancake culture characteristic of Slavic culinary traditions is familiar to us and has been tested more than once. But we started mastering New World recipes quite recently, which is why we are having some difficulties preparing dough for delicious pancakes.

  • Be sure to sift the flour! All dough ingredients are at room temperature only. First, the dry ingredients are mixed, and only then they are combined with the liquid ones.
  • Mixing should be stopped as soon as the liquid and dry ingredients are transformed into a single mixture. This is the point where you don't need to be too careful, because prolonged mixing helps the gluten develop. As a result, we get rubber pancakes, but not fluffy pancakes. Conclusion: just mix the contents, but do not knead them! Let there be lumps in the dough, it is better than a completely smooth mixture.
  • You should not prepare the dough in advance; even an hour of downtime will not do it any good. The baking powder will lose its potency and will not be able to keep the mixture fluffy. The faster we use the dough, the more tender the pancakes will be.
  • If soda is used as a baking powder, you should never extinguish it with vinegar! Just mix it with citric acid and flour.
  • Classic American pancakes are baked without additives, with the possible exception of cinnamon. But for many, “hunting is worse than bondage.” If you can’t imagine a pancake recipe without berries, then take note: first pour a layer of dough into a frying pan, then add berries or other goodies, and add another portion of dough. Definitely don’t add bananas - they will caramelize the dough.

Subtleties of baking

In stores there are frying pans that are specially tailored for our pancake purposes. It doesn’t matter if you don’t have such an accessory - any frying pan with a thick bottom, for example, a pancake pan, will do. It needs to be warmed up properly before cooking.

You should not use any oil when baking, otherwise the pancakes may burn, and we need a uniform beige crust. If you can’t imagine the process without oil, then as a last resort you can grease the frying pan with a small amount of vegetable oil and remove the excess with a napkin.


One of the most common mistakes is turning the pancake over as soon as bubbles appear on its surface. On the contrary, you should not touch the pancakes until most of those same bubbles burst, leaving behind a semblance of a “crater”.

The shape of the finished pancakes should be smooth and neat. The probable cause of the jambs is an unsuccessful turning over. You should pry the pancake off with a thin spatula, lifting it 8-10 cm, then sharply turn it over. Trust me, it will go down exactly where you want it, but make a few test runs first. Don’t be greedy, the first pancake will, among other things, help determine the optimal temperature of the pan and the shortcomings of the dough.

  • Fry the pancakes in a non-stick frying pan. The bottom should be thick so that the pancakes bake evenly and do not burn.

You just need to prepare the dough in different versions, try it and then it will be easier to decide what you like.

We will need (for 10-11 pieces):

  • milk – 150 ml
  • flour – 140 gr
  • egg – 2 pcs (if large, then 1)
  • sugar – 1-2 tbsp. spoons
  • butter – 20-30 g
  • vanilla extract – 1 g
  • soda – 0.5 teaspoon
  • baking powder – 0.5 tsp
  • salt - a pinch

Preparation:

In the first recipe, I described all the processes in great detail, and also explained what was needed for what. Therefore, here, in order not to repeat myself, I will focus only on the action itself, describing only the basic steps of preparation.

Prepare the ingredients so that everything is on hand.

1. Mix flour in a bowl with soda and baking powder. You can use just one. But for me personally, both of these components are a priority. In my opinion, the dough with their combined addition turns out to be more porous, airy and tender.

But I don’t recommend using only soda. At the same time, the finished products develop a characteristic aftertaste, which undoubtedly interferes with perception.

2. In a separate bowl, whisk the eggs. I have them of medium size, 2 categories, so there are two of them. If the eggs are selected, large, then it will be enough to take only one. Let me remind you that they should be at room temperature.

It is better to shake with a whisk until foam and bubbles appear on the surface.

3. Add sugar and salt. You can only add a spoonful of sugar, especially if you took one egg. This will be enough, especially if you serve it with sweet additives in the form of maple syrup, honey or condensed milk.

Whisk thoroughly to break up any crystal grains as much as possible.

4. Warm the milk until warm. I heat it in the microwave to make it faster. But it’s better to warm it in a water bath. Pour it gradually into the egg mixture and stir until bubbles form.

5. Pour in a few drops of vanilla extract. If you don’t have it, then a little vanilla will do.

6. Gradually add flour into the resulting liquid mixture in small batches, stirring it with a whisk each time until the lumps disappear. Of course, the flour needs to be sifted first.

And so slowly add all the flour, mixing the resulting dough into a single mass.

7. Melt the butter in a water bath or in the microwave and pour warm into the resulting mass. Mix with a whisk until the oil circles disappear.

It is not necessary to insist on this dough. After all, we spent a lot of time on him at every stage.

8. Heat the frying pan thoroughly over the fire. This time I will bake the pancakes in a non-stick pan. There is no need to lubricate it with oil.

Once well heated, reduce the heat to just below medium. If the fire is very strong, the bottom will start to burn, but the middle will not cook through. Also, holes will not have time to form, and the product will look like rubber, and even slightly bitter.

9. Pour half a ladle of dough into the center of the pan.

It will spread on its own and take the desired shape of an even circle. Wait until bubbles appear on the surface, burst and turn into holes.

Then you can turn the workpiece over to the other side.

10. After baking on the other side, place the finished product on a plate.

Lay each subsequent one side by side. Leave them there until they cool down. Do not lay them on top of each other so that they do not cake and lose their porosity.

11. After cooling completely, fold them into mounds. It is advisable to heat them up so that you can eat them warm. You can do this in the same microwave. However, do not overheat, just keep them warm.

Then pour maple syrup or honey and garnish with berries of your choice. Or come up with your own way of serving.
