Step-by-step preparation:

  1. The day before, boil the rice until half cooked. Drain off excess broth.

  4. Cut off the top of a clean pumpkin to make a lid. Remove the seed part, being careful not to touch the walls of the vegetable. If the pumpkin is thick-walled, scrape out some of the pulp, leaving the walls at least 1-1.5 centimeters thick. Do not throw away the cut pulp; we will need about a third of it for the filling.
  5. Lubricate the inside of the pot with sunflower oil and coat the top. Salt the inside and a little outside.
  6. Cut the tomato and onion into small cubes. Chop carrots and peppers into strips. Peel the garlic, no need to cut it, it is used entirely in this dish. Chop the greens.
  7. Add the onion to the heated oil, followed by the carrots after a couple of minutes. Fry together for 3-4 minutes. Add peppers, tomatoes, plus a third of the pumpkin pulp that we got when we scraped out the pot. Immediately add salt, sprinkle with pepper, and stir. Simmer for a few minutes.
