“Obzhorka” salad with chicken and mushrooms: recipes

Obzhorka salad with chicken and champignons, as an appetizing version of the famous appetizer, will appeal to all housewives.

Homemade Obzhora salad with chicken and mushrooms turns out very beautiful and satisfying.

In order to make it, you don’t need to buy expensive products; everyone has everything they need in their refrigerator.

Instead of the usual carrots for this salad, you can even use Korean-style carrots, as in Obzhorka with tongue. The dish will come out even more juicy and flavorful.

Ingredients

  • Chicken – 220 g;
  • Champignon mushrooms – 130 g;
  • Onions – 1 pc.;
  • Canned beans – 130 g;
  • Pickled cucumbers – 2 pcs.;
  • Mayonnaise, salt, ground black pepper to taste.

How to cook “Obzhorka” salad with mushrooms and chicken

First, prepare the chicken to add to the salad. Boil the meat in salted water until cooked. You can add aromatic roots, such as celery or carrots, and a variety of aromatic spices, such as bay leaves and peppercorns, to the water. You can choose any part of the chicken, but the salad will be especially juicy if you use chicken thighs. Cool the boiled meat, remove the bones and cut into small pieces.

If you use fresh mushrooms, they must be washed, dried and cut into thin slices. With canned ones, everything is much simpler - to prepare them, you just need to drain the liquid from the can. Fry the champignons in heated vegetable oil along with finely chopped onions until an appetizing golden crust forms. Add a little salt and season with ground black pepper.

In a deep bowl, mix the chicken with the mushrooms and onions, then add the canned beans, from which the liquid has previously been drained. It is best to use white beans; they will not stand out too brightly against the background of the other ingredients, such as red ones.

Cut the pickled cucumbers into thin strips, squeeze out the excess liquid with your hands and add to the bowl with the rest of the ingredients.

All that remains is to season the “Obzhorka” salad with mushrooms, chicken and beans with mayonnaise. You can prepare homemade mayonnaise, for which you need to beat the egg, vegetable oil and mustard in a blender, then add salt to taste and, if desired, add lemon juice to the resulting sauce. Mix the salad thoroughly and let it soak for an hour in the refrigerator.

Serve this delicious and very filling dish in portions, placing it on a plate using a special form. Pack the salad tightly in the mold so that it does not fall apart on the plate at the most inopportune moment.

Remove the pan and serve. If desired, the salad can be decorated with fresh herbs and pickled cucumbers.

Believe me, this salad can easily replace the main dish in terms of its nutritional value and calorie content.

Obzhorka salad with mushrooms

In the recipe for Obzhorka with mushrooms we take:

  • 300 g fresh champignon mushrooms
  • chicken meat - 300-400 g
  • 1 large carrot
  • 2 onions
  • 2-3 pickled cucumbers
  • vegetable oil
  • mayonnaise
  • salt

Instead of fresh mushrooms, you can make your own quick marinated champignons from a jar - a great homemade dish.

How to make Obzhorka salad with mushrooms

The recipe is easy, the most difficult part is frying the carrots and mushrooms. They are fried separately in vegetable oil until golden brown. Both ingredients are well washed, cleaned and not coarsely chopped.

It is better to grate the carrots on a coarse grater. During frying, you can put some spices for Korean carrots and a little salt in it.

You also need to boil chicken meat without skin; the breast is probably the healthiest, but the leg is still tastier, especially if it’s smoked. The smoky aroma will add a special charm to this salad.

We propose to deviate from the traditional mixing of salad in one heap and make Obzhorka with mushrooms salad in layers. On a large platter or in portions.

The bottom layer is chicken with mayonnaise; you can add a little salt to it.

Then the carrots are also greased with this sauce.

Mushrooms, you don’t have to put mayonnaise in them.

Finely chopped onion and scalded with boiling water with mayonnaise. It needs to be squeezed out of the water well so that your glutton with champignons does not leak.

The salad is finished with a layer of coarsely grated cucumbers. There is no need to coat them with mayonnaise. You can garnish with parsley or dill; cilantro would also come in handy.

1. Boil the chicken in slightly salted water. Cool and chop. Three pickled cucumbers so that they are approximately the same size as a carrot. Put everything in a salad bowl.

2. We do not cut the mushrooms coarsely, but cut the onions into thin half rings. Fry in vegetable oil and cool.

3. Now mix all the ingredients together. My carrots already had a rich taste, so I didn’t add any more salt to the salad. And you just rely on your taste.

4. Add mayonnaise and mix. Salad ready!
