Most often, housewives prepare meatballs from minced beef in tomato sauce. However, it is not necessary to simply fill the workpiece with diluted paste. You can do it much more elegantly and end up with a delicious dish. To do this, a piece of stale white bread is soaked in milk, squeezed and put through a meat grinder with half a kilogram of beef, an onion, mint leaves, herbs (taken according to your taste and in a fairly large quantity), a clove of garlic and hot pepper without seeds.
Half a glass of rice is boiled until half cooked and mixed with meat. Meatballs are formed from ground beef, fried until crusty and placed in a saucepan. For the gravy, chopped onions and garlic cloves are fried in a spoon of oil. Two crushed tomatoes without skins and selected spices are poured into it. Once it boils, the gravy is salted and sweetened with sugar, after which it is kept on fire for a couple of minutes. The prepared sauce is poured over the meatballs. They simmer for ten minutes under the lid.
How to cook “Beef and Pork Meatballs”
Wash the meat, cut into pieces.
Peel the onion and chop coarsely.
Grind the meat and onions in a meat grinder.
Grate Parmesan on a fine grater.
In a bowl, mix minced meat, egg, grated cheese. Add salt and pepper. Mix well and refrigerate while you make the sauce.
Pour boiling water over the tomatoes for 2 minutes. Remove the skin and chop finely.
Place crushed tomatoes in a mold, add salt, sugar, pepper. Simmer for 15 minutes.
Remove the minced meat from the refrigerator, form meatballs and place them in the stewed tomatoes. Place in the oven. Bake for 30 minutes at 180 degrees.

For it, melt 2-3 tablespoons of butter, fry a couple of tablespoons of flour in it - you need to stir constantly so that there are no lumps left. In a separate frying pan, a 400-gram package of low-fat sour cream is heated until boiling. Once it foams, add flour. Stir vigorously again, and the last ingredient is a couple of tablespoons of tomato paste. Then salt and pepper are added, water if necessary (in case the sauce is too thick), and the gravy is poured into the meat balls.
The ground beef meatballs with cream sauce are good. For this, an onion is chopped and a medium-sized carrot is grated. Vegetables are simmered in melted butter until softened. Then half a glass of tomato juice is added to them. As a last resort, you can take pasta: five spoons. After boiling, three tablespoons of flour are stirred into the sauce. After a minute, a liter of warm broth is poured in a little at a time. Let the gravy simmer for a quarter of an hour on the stove and you can remove it. Finally, the sauce is flavored with salt, spices and half a glass of the heaviest cream. The gravy works best when the meatballs are baked in the oven.

Such an ordinary dish as meatballs can be turned into a real culinary masterpiece. Just add cheese to them and prepare a spicy gravy. Let's look at the original recipe for meat balls.
Ingredients:
- minced meat (mixed - beef and pork) - 500 g;
- onion;
- eggs - two pieces;
- garlic cloves – five pieces;
- salt;
- seasonings;
- any hard cheese – 0.1 kg;
- flour (pre-sifted) - six tablespoons. spoon;
- refined vegetable oil;
- ketchup (any) – three tables. spoons;
- mayonnaise - four tables. spoons;
- milk – 500 ml;
- processed cheese - two pieces;
- rice cereal – 0.1 kg;
- soft butter - one table. spoon;
- purified water – 100 ml.
Preparation:
- Wash the rice cereal thoroughly and boil it until half cooked. It is better to use round rice.
- We defrost the minced meat under natural conditions. Place it in a bowl.
- Let's clean the onion. Chop it finely and add to the minced meat.
- Now let's add the eggs.
- Cool the rice grains and add them to the rest of the ingredients.
- Peel the garlic cloves and put them through a press.
- Spread the garlic mass into the preparation.
- Let's prepare the seasonings. The ideal choice would be Provençal herbs, paprika, a blend of peppers, coriander, and salt.
- Add them to the minced meat mixture.
- Knead the minced meat into a homogeneous structure.
- Cut the hard cheese into slices.
- Forming meatballs. Pinch off a piece of minced meat so that it fits in your palm. Let's press it down and level it out. We'll make a flatbread.
- Place a piece of cheese on it.
- Then pinch off another piece of minced meat. Cover the cheese plate with it and form a round cake.
- Place three tablespoons in a deep plate. spoons of sifted flour.
- We roll our preparations in it.
- In a frying pan, heat the refined vegetable oil. Fry the meatballs on one side until golden.
- And then fry the pieces on the other side.
- Place the meatballs in a bowl and leave them for now.
- Place ketchup in a separate container.
- Add mayonnaise to it.
- Stir the ingredients until the structure is homogeneous. This is important, otherwise the mayonnaise will “grow” into flakes during the heat treatment process.
- Grate processed cheese (lightly frozen).
- Melt a spoonful of soft butter in a frying pan.
- Let's lay out three tables. spoons of sifted flour. Lightly fry it, stirring all the time.
- Without ceasing to stir, add purified water into the frying pan.
- Then add milk.
- Then add a mixture of mayonnaise and ketchup.
- While stirring, simmer the mixture on a low burner level.
- Salt the sauce and season with spices.
- Now let's put processed cheese in it.
- Stir. When the cheese melts, turn off the burner.
- Place our meatballs in a deep pan.
- Fill them with sauce.
- After boiling, simmer the meatballs on the lowest burner level for fifteen to twenty minutes. Ready!

If you are not too fond of sour milk, you can replace it with curdled milk. But kefir is not suitable for this recipe.
Recipe for Meatballs with Rice and Gravy:
1. Rinse the rice thoroughly, add water at a ratio of 1:1, and cook over low heat until half cooked, about 7-10 minutes; 2. Add cooled rice, spices and salt to the minced meat. Mix the mixture thoroughly with a spoon and then with your hands until smooth; 3. Form the meatballs into balls of the desired size; 4. Cut the onion into small cubes, carrots into thin strips or grate, fry until soft in a small amount of vegetable oil, then add flour and fry a little more; 5. For the sauce, mix sour cream with tomato paste, salt and water; 6.
