To prepare the meatballs, take ready-made frozen minced chicken, a handful of rice and an onion. But we won’t bread the meatballs in flour/breadcrumbs and fry them. We will immediately place the formed meatballs in the mold and send them to bake in the oven. And to make the meatballs especially soft, tender and juicy, before baking we season them with a simple but incredibly tasty gravy made from sour cream and tomato paste, with the addition of basic vegetables - onions and carrots. It turns out very tasty and simple. Try it!

  • rice – 100 g (cereal weight),
  • minced chicken (I have it ready-made, frozen) – 500 g,
  • onion – 2 small heads,
  • carrots – 1 pc.,
  • tomato paste – 4 tbsp. l.,
  • sour cream (10-20%) – 4 tbsp. l.,
  • water – 200 ml,
  • vegetable oil – 30 ml,
  • salt and seasonings - to taste,
  • bay leaf – 1-2 pcs.,
  • greens (dill, parsley) - a couple of sprigs.

How to Make Chicken Meatballs with Rice and Gravy

First of all, boil the rice. We need it half-cooked, so we wash the rice thoroughly and fill it with water in a ratio of 1:1.5; those. by 0.5 tbsp. I took 0.75 tbsp of rice. water. Boil the rice over medium heat until the liquid has completely evaporated. There is no need to salt the rice.

Next, the cooked rice should cool. Let cool. In the meantime, let’s prepare the rest of the minced meat for the meatballs. Frozen minced chicken - defrost, I put it in a micro for 10 minutes. to “defrost” mode. We chop one onion in any way convenient for you, I crush it with a blender-mill into a small cube.

When the rice has cooled completely, mix it with minced chicken and onions, add an egg to them.

Add some salt to the minced meat and season with seasonings/spices to taste and desire. I added a little paprika and seasoning for Korean carrots, a very successful mixture, in my opinion, suitable for almost any dish.

The minced meat for the meatballs is ready.

Wet our hands with water and roll the minced meat into balls the size of a small tangerine. We put them in a mold, preferably a deep one.

Next we make the gravy. I make it with vegetables - onions and carrots. If you don’t like vegetables in gravy (my children sometimes protest against such vegetable additions), you can skip this step. Chop the second onion into cubes, three carrots on a coarse grater. Heat the oil in a frying pan and fry the vegetables under the lid until soft.

At the same time, make the sauce: mix tomato paste with sour cream, dilute it all with water, add chopped herbs. If necessary, add some salt and season the sauce.

Pour the tomato-sour cream sauce into the pan with the vegetables.

Throw a couple of bay leaves into it and let the sauce simmer for about 5 minutes. Done.

Remove the bay leaves from the prepared sauce. Pour it over the meatballs and load the mold into an oven preheated to 180-200 degrees.

Bake the meatballs for 30 minutes, after which you can remove and serve.

Sour cream sauce for meatballs

When the form is filled, add sour cream filling. To do this, mix sour cream and water in a separate bowl (it’s better to use boiled water).

If you want, you can add herbs, pieces of dried pepper or even sun-dried tomatoes to it. Pour the resulting sour cream sauce over the meatballs.

It should completely cover them. If you see that they remain open, add water directly to the mold. Let it bake for about an hour at 180 degrees. I don't preheat the oven.   2. Now to prepare the meatballs in tomato sauce, beat the egg, add it to the minced meat, add the cooled rice here, and mix the mixture thoroughly.

For 12-15 pieces, depending on size:

  • 0.5-2/3 cups rice;

Buy fillet minced meat: it is made from fillet breasts, there is no fat or skins, so the meatballs will turn out to be dietary. I took long rice - basmati, it is the most delicious, but any other rice will do: simple long, round. Salt to taste, maybe a little pepper.

Fill the rice with water at the rate of 2.5 parts of water to 1 part of rice (that is, for 0.5 cups of rice - 1.5 cups of water, volume 200 ml). Combine the minced meat with rice in a bowl so that the amount of minced meat and rice is approximately equal in volume. We wait until the rice has cooled to such an extent that you can knead with your hands, add salt and knead thoroughly.

Wet your hands in water, form round meatballs and place in a baking dish greased with vegetable oil. A shallow mold made of glass, ceramics or foil is suitable.

Place on a medium rack in an oven preheated to 200C and bake for half an hour.

To make the dish light and low in calories, we advise you to use a Teflon frying pan. Otherwise, we will need a little more sunflower oil for frying.

This is because chicken fillet meatballs with rice turn out surprisingly light and tender, and tomato sauce with sour cream only adds piquancy to them.

  • chicken fillet 900 g;
  • rice 100 g;
  • onions 170 g;
  • rye flour 2-3 tbsp. l.;
  • tomato paste 100 g;
  • sour cream 20% fat 150 g;
  • pinch of salt;
  • water 1.5 tbsp;
  • Italian herbs to taste.

Let's prepare all the necessary ingredients to prepare chicken meatballs with rice.

We thoroughly wash the chicken fillet pieces in cold water, then dry them and pass them through a meat grinder. You can also grind the fillet using a blender. Place the prepared meat in a deep bowl. We thoroughly wash the entire specified amount of rice several times in a bowl of cold water, then cook in slightly salted water until half cooked.

To prepare meatballs in tomato sauce in the oven according to this recipe, we will use ready-made rice. Therefore, the first thing we will do is rinse the rice cereal thoroughly, pour it with enough water and let it cook. When ready, drain the rice in a colander, rinse with water and set aside.

While the rice is cooking, grind the washed chicken pulp and half the onions in a blender or pass through a meat grinder, season the mixture with salt, ground black pepper and mix. Then add rice and mix again. Now we beat the resulting minced meat several times, picking it up and throwing it back into the bowl. This procedure will allow the finished meatballs to keep their shape well and not fall apart. Now, with moistened hands, roll into round balls and place them in the oil heated in a frying pan. At the same time prepare the sauce for pouring. Saute the pre-peeled and finely chopped onion until translucent in a frying pan with vegetable oil. Then add the peeled and finely grated carrots, after seven minutes add the finely chopped bell pepper and fry everything together for a few more minutes.   • carrots – 75 g;

  • tomato paste – 90 g;
  • ketchup – 40 g;
  • water – 500 ml;
  • granulated sugar - to taste;
  • flour – 45-50 g;
  • bay leaves – 2 pcs.;
  • allspice peas – 3-4 pcs.;
  • ground black pepper;
  • salt;
  • fresh greens.

Preparation

First of all, boil the pre-washed rice cereal until tender. Don't forget to salt the water. Meanwhile, peel and finely chop the onions, add half to the minced meat, and sauté the rest in a heated frying pan with dissolved butter. Peel the carrots, grind them through a fine grater and add them to the onion, fry the vegetables together for a few minutes, and then pour in a mixture of tomato paste, ketchup, sour cream and flour, diluted with water and seasoned to taste with salt and ground black pepper.   • loaf – 3-4 pieces;
  • milk – 1 glass;
  • onion – 1 head;
  • flour – 2 level tablespoons;
  • garlic – 1 clove;
  • carrots – 4 root vegetables;

  • salt - to taste.

Preparing this dish will not cause you any difficulties. All those who know what a knife is and have held a ladle in their hands will be able to handle it in no time.

So, cut off the crusts from the loaf pieces, put them in a deep bowl and fill them with milk. Let it sit and get wet.

We pre-defrost the minced meat or buy it chilled. We put the amount we need into a bowl, and throw in finely chopped onion and garlic passed through a press. Squeeze out the white bread pulp and add to the minced meat.

One of the peculiarities of preparing meatballs is that they are rolled in flour, not breadcrumbs. In this case, we poured it directly into the minced meat. Grate the peeled and washed carrots on a coarse grater and place them in a frying pan with high sides. Pour in oil and 0.5 cups of water.

If you don't add water, the carrots will absorb the oil very quickly, won't have time to release the juice and will start to burn. Therefore, let’s help it a little to stay juicy. Add a little salt and place on medium heat. When the contents of the frying pan have boiled, roll the minced meat into small balls and place them on the carrots.

Unusual meatballs for little ones

Minced chicken meatballs for children are an ideal dish. It turns out to be satisfying and healthy, while being low in calories. In the classic recipe, minced meat is combined with rice cereal, but not everyone liked this treat. We suggest you prepare meatballs from minced chicken without rice.

Ingredients:

  • chilled minced chicken – 0.3 kg;
  • carrots - 1 root vegetable;
  • millet cereal – 0.1 kg;
  • garlic cloves – 1-2 pieces;
  • onion head - 1 piece;
  • celery stalk – 1 piece;
  • chicken egg - 1 piece;
  • salt, mixture of ground peppers;
  • filtered water – 250 ml;
  • premium wheat flour – 5 table. spoon;
  • refined vegetable oil;
  • laurel leaf – 1-2 pieces.

Preparation:

  1. Wash the millet cereal thoroughly. Boil it in salted water. For convenience, you can use millet in cooking bags.
  2. Place the boiled millet in a deep bowl.

  3. Add chilled minced chicken. You can cook it yourself from brisket or use a semi-finished product.

  4. Add a raw chicken egg to these ingredients.

  5. Add salt, seasonings and mix vigorously until the mass has a homogeneous consistency.
  6. From the resulting mixture we make balls of approximately the same size and bread them in sifted premium wheat flour.

  7. Heat refined vegetable oil in a frying pan or saucepan.
  8. Place the prepared meatballs and fry until golden brown.

  9. To get rid of excess oil, you can first place the fried meatballs on a paper napkin.
  10. We wash the peeled carrot root, dry it and chop it on a grater with a medium perforation.
  11. Cut the onion head into small cubes.
  12. Finely chop the garlic cloves with a knife.
  13. Wash the celery stalks thoroughly and chop them into cubes.

  14. First fry the chopped onion in refined vegetable oil for several minutes.
  15. Then add grated carrots and garlic.
  16. Mix everything, simmer for several minutes over moderate heat and add celery.

  17. Take a deep refractory dish and place the fried meatballs into it.
  18. Place fried vegetables on top and add 100 ml of boiled or filtered water.

  19. Pour 2 tablespoons into a bowl or mug. spoons of sifted premium wheat flour.
  20. Add approximately 150 ml of boiled water and stir vigorously until the mixture has a homogeneous consistency. It is important that there are no lumps.

  21. Add the prepared white sauce to the form with the meatballs.

  22. Place the meatballs in the oven for half an hour. We will simmer at a temperature of 180°.
  23. This dish can be served with pasta or fresh vegetables.

Recipe 6: Minced chicken meatballs with rice and carrots

Thanks to rice, the products are more tasty, nutritious and retain their shape during cooking. This dish can be called budget and, according to many housewives, one of the best and favorite. They are even suitable for children's menus, which allows you to prepare meatballs for the whole family.

  • chicken breast – 1 pc. (600-800 grams);
  • rice – 1 glass;
  • onions – 2-3 pcs.;
  • carrots – 1 pc.;
  • salt, pepper - to taste;
  • vegetable oil.

Pour a glass of water over the rice and cook over low heat until the liquid has completely evaporated. It is better to cook under a closed lid, without stirring during the process.

Grind chicken meat in a blender or meat grinder. We also chop the onions and add them to the minced chicken. You will also need onions for the gravy. That’s why we use half, not all of it.

Combine minced meat with rice. Mix. Season with pepper and salt. Mix the prepared minced meat thoroughly.

We form balls and place them in a heated frying pan with vegetable oil. It's easier to form balls with wet hands. This way they turn out neat and even. Lightly fry the chicken meatballs on all sides in sunflower oil and place in a pan.

Fill the meatballs until they are well covered with water. Grate the carrots on a coarse grater, cut the onion into small pieces. Place all this in a saucepan and bring to a boil along with the meatballs. Add 2-3 allspice peas to make the dish aromatic.

Simmer the meatballs over moderate heat with the lid closed for 20-30 minutes. Salt and season with pepper to taste.

Chicken meatballs in mustard sauce

If you like dishes with a hint of spiciness, then this recipe will certainly suit your taste.

For a successful dish you need the following components:

  • chicken fillet - 200 g;
  • onions - 1 medium onion;
  • rye crackers without additives - a small handful;
  • milk 0.5% - 200 ml;
  • chicken egg - 1 piece;
  • low-fat cream - 150 ml;
  • mustard - 2 tablespoons;
  • spices to taste.
  1. Pass the chicken breast through a meat grinder.
  2. Cut the onion into small cubes or grind in a blender.
  3. Pour milk over the crackers and leave for 20 minutes. After they swell, the milk must be drained.
  4. Add a chicken egg, onion, and crackers to the minced chicken. Knead the minced meat thoroughly.
  5. Form small balls from the prepared minced meat.
  6. Fry the resulting meatballs in a small amount of oil in a hot frying pan. Transfer to a deep saucepan.
  7. Mix mustard with cream and spices. Beat thoroughly with a blender until smooth.
  8. Pour the resulting sauce over the meatballs and simmer over low heat. Cook for at least 2 hours.
