Cooking sequence

  1. Place a pot of water on the stove and bring to a boil. After the water boils, add salt to taste, one bay leaf and a few peppercorns. If you prefer a more spicy taste, then use allspice; if not, then regular black pepper will do. Let the water with the spices boil for two to three minutes and add the dumplings.

  2. They only need to be lightly boiled, without being fully cooked. A couple of minutes will be enough, after which you should remove them from the water into another container. Dumplings can be either frozen or freshly made. By following the link, you will learn how to make dough for homemade dumplings, as well as choux pastry for dumplings and dumplings.

  3. Cut the onion into half rings.

  4. Let the frying pan heat up. Pour in vegetable oil and add a piece of butter.

  5. After the butter has melted, add the onion and lightly fry until translucent golden. I like to add a level teaspoon of sugar when frying onions. This caramelizes the onions and gives them a pleasant taste.

  6. Wash and chop the mushrooms.

  7. Add them to the onion and lightly fry. Mushrooms can be absolutely anything: from banal oyster mushrooms to wild mushrooms. After the mushrooms are fried, transfer them to another bowl, and lightly brown the dumplings in the same frying pan. Or you can fry them before boiling them.

  8. Grate the cheese with the fine side of a grater or using a special cheese grater. Mix sour cream, cheese and add spices to taste. I like suneli hops and oregano. If desired, you can add a chopped clove of garlic.

  9. Now we take ceramic pots and fill them with mushrooms and dumplings, alternating layers with sour cream. It’s better to start with frying, then you won’t have to grease the bottom of the pots, and the last layer should be sour cream.

  10. Pour approximately 100 ml of water into each pot in which the dumplings were cooked.

  11. Cover with lids and cook dumplings in pots with cheese and mushrooms in the oven for 10-15 minutes at 180-190°. After this, remove the lids and bake for about 10 minutes.

  12. Let it cool a little and serve.

Dumplings in pots with sour cream and cheese

Ingredients:

  • 0.5 kg frozen dumplings;
  • Approximately 1 liter of water;
  • 1 small onion;
  • 1–2 small carrots;
  • Sunflower or butter;
  • 0.5 tablespoon of salt (or a little more to taste);
  • 2 bay leaves;
  • A few black peppercorns;
  • Parsley, dill, basil;
  • 50 ml sour cream;
  • 50 g hard cheese;
  • 1–2 garlic cloves.

Preparation:

If you immediately pour dumplings into a pot, they will stick together into one large dumpling. And for everything to turn out well, you must first either boil them slightly (until half-cooked) or lightly fry them. After heating the oil (butter or sunflower), pour in the frozen dumplings and, stirring, fry for a couple of minutes until slightly golden.

Then pour it into a bowl and let it cool a little. And add a little oil to the frying pan and fry the onions and carrots, as for soup. First, sauté the chopped onion for 1–2 minutes, then add the carrots grated on a coarse grater and fry for another minute. Ready! Mix the frying with the dumplings.

While the frying is being prepared, at the same time we will make a fragrant filling for the dumplings. Pour 4 glasses of water into the pan, put it on the fire, and when it boils, throw in the spices: salt, peppercorns, bay leaf and finely chopped herbs. Let it boil for a couple of minutes and turn it off.

Now we put the dumplings in the pots - about half full, so that they don’t run away when they start to expand.

And fill it with aromatic broth - so that the water does not reach the shoulders of the pot. Don't pour it to the top - it will run away. Therefore, just in case, it is better to place the pots not on a wire rack, but on a baking sheet. Even if the broth starts to pour out during boiling, the baking sheet will “catch” it.

If you pour in a little broth so that the dumplings are only lightly covered with it, you will have a second dish. And if you pour more so that the dumplings float in the water, you will get something similar to dumpling soup in pots!

It is better to add sour cream later, when the dish is ready - otherwise, when baking, it may turn into cottage cheese. Cover the pots with lids and place in a not very hot oven. Gradually raise the temperature to 200C and bake the dumplings in the oven for about 30–35 minutes.

Taking out the pots with thick oven mitts, remove the lids and sprinkle the dumplings with grated cheese. Put it in the oven again, or maybe turn it off - the cheese will melt in the warmth, and after 5 minutes you can serve a hot dinner!

With this recipe you will try everyone's favorite dumplings in a new way. After cooking in the oven with the liver, the usual dumplings will sparkle with new colors, and the lid of the pot can be eaten instead of bread.

Ingredients:

  • Ready dumplings;
  • Liver - 250 grams;
  • Flour - 1 tbsp. l.;
  • Onion - 1 head;
  • Garlic - 1 tooth;
  • Tomato paste - 2 tbsp. l.;
  • Sour cream - 2 tbsp. l.;
  • Dumpling dough - follow the link and you can read in detail how to prepare dough for dumplings;
  • Vegetable oil - for frying;
  • Egg - for greasing the lid.

For the recipe, you need to boil the dumplings in salted water with the addition of a bay leaf. Do NOT cook until they are ready, but as soon as they float to the surface, take them out immediately.

Cut the liver into strips and the onion into small cubes. Turn on the oven in advance so that it is already ready when baking.

Lightly salt the liver and roll in flour.

Fry the onion in vegetable oil until golden, then add the chopped liver to it.

Remember! The liver cooks very quickly! After 2 minutes, add a couple of tablespoons of sour cream and the same amount of tomato paste.

Stir and let simmer for 1 minute. You can add pepper to taste.

Place the fried liver and one tablespoon of sour cream on the bottom of each pot.

Then lay out a layer of dumplings and pour in the broth in which they were cooked. Stir until the sour cream dissolves.

Add finely chopped herbs to taste.

Roll out the dumpling dough to a thickness of 5-6 mm. You don't need to be too thin, otherwise it will tear.

Using a plate, we will give it a neat round shape. Let's close the pots tightly. Now brush them with a chicken egg. This will make the crust on them a bright golden color.

Place in an oven preheated to 180 degrees until the dough lids are cooked.

Look how beautiful it is! All that remains is to grease the dough crusts with grated garlic, but this step is optional, so to speak.

The dough lids in this recipe will serve instead of bread, so at the very beginning you don’t need to roll them out very thinly, they can tear during swelling.

Dumplings cooked in pots will turn out much tastier than just boiled ones if you add broth to them.

To cook them faster, you should first boil the products in the classic way, adding carrots and a bouquet of spices to boiling water. This dish should be prepared tightly covered with a lid or foil.

Ingredients:

  • dumplings – 500 g;
  • garlic – 4-5 cloves;

  • vegetable oil – 3 tbsp. l;

Meat or fish dumplings with broth can easily replace the first and second courses, because they are filling. You don’t have to boil the main ingredient in advance, filling the pots only a third. In this case, the container should be filled almost to the top with broth, since it can evaporate.

If you pour less broth, you will get a satisfying second course. If you add more liquid, you can use it as a rich soup.

Cooking method:

  1. Place frozen dumplings in pots
  2. Add whole garlic cloves
  3. Pepper and salt to taste
  4. Drizzle with vegetable oil
  5. Pour boiling water over
  6. Pour in low-fat cream
  7. Place in an oven preheated to 220 degrees
  8. Bake for approximately 45 minutes
  9. Add finely chopped green onions
